Everyone who has tried my sauerkraut says it tastes salty. I think it tastes like the stuff from the store. When I make kimchi, I use only a bit of red pepper so it's not too hot for me. There are lots of recipes on the internet for kimchi, sauerkraut and other fermented vegetables. I've been experimenting for a few months. Now that I have my own homegrown chinese cabbage, the kimchi is pretty good. I use honey in place of sugar and do not use any prepared kimchi sauce. I find it interesting that so many of us have set-backs related to stress. This happens to me, too. Do we get stressed easily becuase of longterm digestive issues? Does stress go right to our guts? Are our stress-fighting capabilities severely limited due to gut disease? In my case, I think all of the above. -

Sherry I thought the same thing! More indication that even though gluten got us where we are, gluten-free doesn't necessarily solve the problems. More on salt, low blood pressure, etc. I did look up salt in the BTVC knowledge base. Elaine said that the dextrose in salt is not a problem, it is legal. I picked up a bottle of Solaray sublingual B12 lozenges the other day and decided to call them to double check before opening it. I was told that the sorbitol in it may come from a wheat source, therefore it is not gluten-free. So tomorrow the bottle goes back to the store, unopened. -

My blood pressure is low, too. I get it checked and they say"OOh, wonderful!!" and I ask them if I am still alive. I am wondering if I am not producing enough aldosterone, one of the adrenal hormones. I'm going in next week to find out more. Mia, did you ever get checked for aldosterone? -

Whoa--treatment? The only treatment for celiac is a gluten-free diet. You do not need a doctor's permission or prescription for that. I am going to get very opinionated before you go to the doc. Darkhorse I think your appetite changes are to be expected. You are no longer gumming up your insides with grains and sugars and that is a huge change. If you are hungry, remember, there are no restrictions on quantites eaten. -

Hi Darkhorse Don't worry about the yogurt, you can do the diet without dairy. Have you ever tried making kimchi? It is a fermented food. I hear you on the sweets.
