  9. HI, Celiacs react to wheat, rye, barley and some of us also react to oats. It only takes a miniscule amount of gluten to cause a reaction.   16. Most hard cheeses are lactose free because the cheese making process eliminates the lactose sugar. The soft cheese are not nessecarily lactose free though.. Things like cheese balls or Velveeta often have lactose.

  20. Results can take a couple weeks. It might go faster sometimes. Your doc should be able to tell you when they expect the results from the lab. Hashimoto's thryroiditis is an autoimmune disease also. The antibodies attack the thyroid. Hashimoto's is more common in celiacs, and more frequent in women.

The standard tests are the blood antibodies and then the endoscopy to take biopsy samples from the small intestine. They check the biopsy samples for evidence of damage under a microscope.
