I did lose weight in the beginning, not a whole lot, but I didn't really need to lose any. In the beginning it was because I was eating so much healthier. I put back on about 4 or 5 lbs, but it was fine. I've found my weight to be much more stable since going gluten-free. I think the previous advice is great! Focus on what you can eat. Another thing that helped me was as I started missing certain foods, asking here or looking for ways to swap out ingredients. This led me to try things I probably wouldn't have tried otherwise, and be creative. But if there's something that you really want and it has things in it that are... -
Two weeks is just the beginning of the healing process... give it some more time. Your body is fixing itself after being wrecked by gluten, let it do what it needs to do. Your energy level will get back to normal over time. Supplementing with B12 isn't going to hurt, but don't be disappointed if it's not the miracle fix you want.

Yep, 1 T per cup, same as you normally would do. This also worked with rice milk, but it is much thinner. I've also made buttermilk with goat's milk, and I think because you're souring the milk anyway, you don't notice the tart taste associated with goat's milk in baking. Another option for you... -

I tend to be on the side that it doesn't get absorbed through your skin... But, because of accidental ingestion, there are things that I make sure are gluten-free, specifically my shampoo and conditioner, for the reasons mentioned above. It wouldn't hurt to try. I use it to make buttermilk, in baking, etc and cannot tell a difference in taste. I tried the hemp milk and couldn't get it down... I ended up throwing it away. That's just me though. I'm admittedly picky about some things. I bet the hazelnut milk would be really good, especially in a latte... yum! I have never had an issue... -

Yeah, Tostitos leave me feeling a little yuck. I like Mission Corn Tortilla chips... more like strips. A little more expensive, but IMO much better and they've never bothered me. Lay's Stax are also supposed to be made on dedicated lines, last I checked, if you want a potato chip. -

B vitamins are water-soluble, so, whatever is above what you need, your body will get rid of through urine. You can't OD on B12. I was taking 3 of the 1000 mcg's a day for awhile. I also found vitamin D to be incredibly helpful for my fatigue. You have to be a bit more cautious of vitamin D. There is a great debate about whether you can OD on it, although... -

I discovered the milk at Whole Foods shortly after this thread. I love it, use it for everything. I get the regular kind, instead of the vanilla. Can't taste a difference in baking at all. Fabulous! -

I don't care for maple syrup much, the real stuff or the fake stuff. It's all a bit sweet for me... I like the Agave Nectar, though, for pancakes. I bought a Maple/Agave Syrup blend at Trader Joe's. I'm sure you could try your own mixture to thicken up the pure maple syrup, or just buy it if you have one near you. My son LOVES it!! -

I don't trust them either... It didn't help that one of the guys that works at Whole Foods told me there is NO WAY he'd eat anything out of the bulk, and he has no food problems. Something to do with the general public and their habits.... ick!! But he said if he had celiac, or food allergies, he definitely would stay away. -

Yep, that is unfortunately why I am taking it. I ended up with the generic nifedipine, which did appear on a gluten-free list that I found searching. I seem to have gotten a bacterial infection somewhere along my travels this summer and that set off contractions yesterday. Thanks Atlantic Ocean! Does anyone know if it's gluten-free or not? The pharmacist I talked to said it was not on her yes or no list. We went to another pharmacy and they're trying to find out, but I wanted to know if anyone here has any experience with it. Thanks

Basically, what this statement is to me is definitely CYA. BUT, it also helps me make an informed decision. So, while I may not like it, at least it's there. You can call some of the companies and ask what processes are in place, the time difference between when the allergen in question and the 'safe' food is processed... because this statement can also apply... -

My doc wanted to bypass the whole endoscopy and just do the pill cam, as he says it is much more reliable and a complete picture can actually be seen, whereas with an endoscopy, it can be hit or miss. From what it sounded like, insurance doesn't cover the pill cam until an EGD has first been done to warrant further examination... For you, it just depends... -
My major symptoms resolved within a week or two. It was quickly enough to know that gluten was scary stuff for me. I had some lingering fatigue issues, but overall, I started feeling better almost immediately. Not back to normal, just better.
