  1. Fatigue and headaches were what I thought to be my main symptoms. I have more GI symptoms when I get glutened now than I did before I went gluten-free. I think this is partially because the rest of me usually feels good, so I am much more aware of what's 'off' now in my body. I was exhausted all the time. Woke up exhausted after sleeping 12 hours... it...
  2. A super easy and really good chicken recipe someone gave me... Olive oil Balsamic vinegar Rosemary (Sorry I don't have measurements, I just eyeball it all) Mix them in a shallow bowl, and then swirl the chicken breasts (or whatever chicken part you're using) in the mixtures. Sautee them and you're all set. Salt and pepper to taste. I had forgotten...
  3. You sound an awful lot like me before I went gluten-free. I could nap for two hours in the afternoon, and still be exhausted. Go to bed, sleep for 12 hours, and then wake up exhausted. They tested my thyroid a couple of times. Always came back fine. I went gluten-free, and gradually it went away, as did my other problems. After about 6 months, I stopped...
  4. We have a little bit of everything here in Raleigh, so it really depends a lot on what you are looking for, and where you are staying. I would definitely recommend Bella Monica, their food is great and they have taken a lot of steps to avoid CC. AND you can order pizza at a restaurant... how often does that happen!? There are a lot of great places in...
  5. I've never had an issue with fresh frozen shrimp, but it's always a good idea to check the ingredients to be sure no flavoring was added. Have never had the scallops from Schwann's, sorry, can't help you there.
  6. I have a really fantastic biscuit recipe, but I've never frozen them. Anyone tried to freeze biscuits??? Thanks to everyone for the great ideas!!! I can't believe I didn't think about pizza... LOL
  7. I never thought I'd be happy either, but figuring out what's wrong, and that you are in fact, NOT dying is a wonderful thing!! I hope you continue feeling better!!
  8. Well, now you've piqued my interest, too. I'll have to find a reason to go to Wal-Mart now... hmmm
  9. I have really great HDL, too. Somewhere in the 80s. And my LDL is low, somewhere around the 30s. My mom's cholesterol is about the same.... I have celiac, and she doesn't. I have heard that cholesterol can be low in undiagnosed celiacs, because of malabsorption. I had mine done right when I went gluten-free, then a year later at my physical. There was...
  10. Thanks to you both! I do find that the less carbs I can do, or the more balanced I can make it, the easier breakfast is on my system. Peanut butter and apple is my go to food, and keeps me full longer than I expect. I eat cereal occasionally, but it usually sits not so well. It's either because the ratio is still too carb heavy, or because I eat it...
  11. Thanks everyone for the replies! Feel free to keep them coming
  12. Ditto on the fatigue, it takes a bit to go away. It gradually got better for me, starting with not waking up exhausted. As for the morning nausea, I get that, too. I'm pregnant right now , but this has been going on with me for a long time. I find that I just can't eat a lot, or quickly, in the morning. And the heavier it is, the yuckier it seems to...
  13. I love to cook, but most of what I make is a one shot deal. Meaning that I rarely make enough for leftovers, or if I do, it's just enough for lunch the next day. Anyway, we're expecting our 2nd baby in about 7 weeks (probably sooner), and I'm starting to think about foods that I can make ahead and freeze for the hospital stay and for the first week...
  14. The only other thing that I question is the milk. I noticed you didn't use any other dairy products, so maybe casein bothers you rather than or in addition to lactose? Otherwise, I get a migraine a couple times a year. They make me sick on my stomach also, and aren't usually food related. I got one this spring that seemed to be triggered by my allergies...
  15. You only have two more days until you can happily toss gluten from your life. You can do it!!! I have to say though.... if eating gluten gave me diarrhea, there's no way I would take a laxative on top of it. That just sounds like multiple changes of clothes waiting to happen...
  16. don't be scared!!!! as someone else told me- ENJOY THE RIDE! It's an absolutely amazing experience.
  17. Open Original Shared Link
  18. Congrats!!! From the tums website: Open Original Shared Link I take them occasionally, and they've not glutened me. But I don't really find them to be super helpful with the heartburn, either. A piece of hard candy, though, seems to work wonders. If it's really bad, talk to your doctor about a medication for it. As for the other issue...
  19. I got the flu shot when I was pregnant with my first 4 years ago. I also have a very mild egg allergy (the whites). I felt like I had a very mild case of the flu for about 3 hours then it wore off. That's the only time I've ever gotten one. So for me, the reaction wasn't bad. I don't get one otherwise. I think the decision depends a lot on where you spend...
  20. I couldn't agree more. Being the celiac in my house, I do know what gluten can do. I lived it. My husband knows what gluten can do. We don't wish it on our children, but I can't imagine trying to force a restricitve diet on my child with no medical/dietary basis. But, you can believe that at the first sign of anything, I would have my kid(s) go gluten-free...
  21. I'm 32 weeks and have been pondering that same question since I found out I was pregnant. The difference is that I'm already gluten free, as it seems my son, who is 4, triggered my celiac in the first place. From what I've researched, babies should be introduced to gluten around 6 months.(American Pediatric Association) However, this is currently being...
  22. When on the road, we stop at either Chick Fil A or Wendy's. Those are about it for me. I tried the Wendy's burger no bun twice... I think. Both times it didn't end well for me. You always ask about the fries. At any Wendy's. Always. I stick to the chili or salad and maybe a frosty. Fries if I like their answer.
  23. I just finished taking that very drug for that very reason. Flagyl (the brand name) is gluten free, but it is hard to find and is super expensive... even with our insurance 7 days was going to cost me $75. Metronidazole is a serious antibiotic, and it's likely it will make you feel sick, but not from gluten. Make sure you take it after you eat a full meal...
  24. What Momma Goose is saying, and what your further research will confirm, is that once you have celiac, it doesn't go away. So, your son is creating tTG, which is a specific test for celiac. It may not be above the range, but it is there, and your doctor is concerned it will go higher and he will then develop celiac. In all likelihood, your son already...
  25. It looks very similar to another recipe I converted. You can probably just swap out the flour, but I would recommend a blend rather than just straight rice flour, for example. You will need to add xanthan gum, something like 1 to 1 1/2 t. It is pricey, but if you do a lot of baking, it's worth it. You use small amounts so it lasts a long time. I just recently...
