Five days of eating gluten is sure enough to make you sick, but nowhere near enough to develop enough antibodies for the celiac blood test or do enough damage for positive biopsy. Celiac tests test for gluten, not just wheat. There are a few people who are intolerant of wheat but can eat gluten from other sources (oats, rye, barley). I know one such person. Congratulations on making the gluten free decision. Yours is a very reasoned approached because as you have noted, so many of us discover other intolerances when we eliminate gluten. I think when it comes to labs, x-rays, all tests ordered by a doctor, the results are released to the ordering doctor who then has the duty to release to the patient. I may be wrong, but that is what I have run into. -

The only other thing I can think of to try is to really simplify your diet, no grains or processed foods, but back-to-basics, easy-to-digest things like fish, rice, cooked vegetables (not the crucifers like broccoli or cabbage), cooked fruits, chicken, and see if that makes any difference. Soups with rice in them, stuff like that. Avoid the nightshade family... -
