    Whats the diff? If you just have an intolerance and have gluten by mistake do all the 'bad' things still happen to you? By bad I mean the long term stuff.     LOL...not at your problem but at my interpretation of it. I too always thought floaters meant you had adequate fiber in your diet.     We had considered this also. We thought what would work best is a multi-ethnic restaurant. We eat a lot of Arabic, Indian, Mexican, Japanese, etc because a lot of their food is gluten free and with the way its prepared you lower the risk for CC. Mexican is a perfect example.     Do you have an email for this Kathy from Uno? One of the biggest things about eating gluten free is having a tough time stopping for quick bite to eat. We love Mexican food and that does the trick but it would be great to have some variety.

    How did the Pakora turn out? Any reason you didn't use Besan flour, same stuff for the most part, maybe even exactly the same as what is used for normal Pakora. So they should not have been dry, as the traditional recipe doesn't call for any flours with gluten in them. We picked up a deep fryer, Pakora is on the menu this weekend

    White Castle.... Best 6am meal in the world was 3-4 White Castle Cheeseburgers fresh off the steamer. That is the only thing I miss, I gave up the rest without a second though. You might want to check into an Australian study that showed sour dough bread prepared a certain way did not cause a immune response in Celiacs even though it had gluten....

    I'm going to start to sound like a broken record. The pressure/brain fog feeling I had for nearly 6 months when I was first having problems. If I have gluten in a certain form I get that pressure and a brain fog feeling for 1-3 weeks...now I had it for months and months after giving up gluten so length of time did not seem to directly relate to anything...
