ARCHIVED The Best, Bar None, Gluten Free Pizza I Have Ever Had
Eric-C posted a topic in Gluten-Free Foods, Products, Shopping & Medications
We were at a business expo on Sunday for both of our businesses. We run a driving and racing school and have been looking for a new caterer. We came across Sweety Pies Bakery & Catering in Northville Michigan who had a booth a few down from us at the same expo. We talked to them about catering our events and they were going to make us some... -
ARCHIVED Still In Shock
Eric-C replied to AlexsMomAubrys2's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
At least you have a good idea what it is! My knee's and joints hurt so bad I couldn't walk, then a week later I was fine...never made much sense but its all related to gluten for me. Your doing the right thing for your daughter...having Celiac's from a young age is not a good thing if she continues to have gluten since the malabsortion will effect her... -
ARCHIVED Cold Hands And Feet
Eric-C replied to Sin3str0's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
My wife has Raynauds. Just over a year and a half ago I was sitting on the couch watching a football game when my lower legs and feet suddenly went icecold. What a PITA that was...tons of tests, spinal scans, you name it...had the same problem in my hands, also a burning sensation. Doc of course could not figure it out, had good pulse, blood flow,... -
ARCHIVED If You Can't Shake It, Read Your Labels
Eric-C posted a topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
For two weeks now I've been sick...stomach sick...we have ate strictly at home and been feeling great. Now it hasn't been bad just odd. Normally with glutening I get very sick for 1-2 days and I'm good. This has lingered on and except for last Saturday night which was the very painful boughts it hasn't followed the previous pattern. I really... -
I don't know why its only 9:11...no reference to anything else in my life, September 11th or otherwise. Even when I was almost completely better, I'd still look up at the clock at 9:11. The only reason I posted this was I was glutened about a month ago, and for two weeks after I went through the whole 9:11 thing...it had been so long I forgot about...

ARCHIVED Similar To Parkinson's
Eric-C replied to harp1's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Susan, Glad to hear that things are improving for you. I went through an abbreviated and much less severe version of what you did. About 7 years ago I had a very bad flu and went to the emergency room. They gave me two shots, one to calm my stomach and one antibiotic. I had this tendon tightness, and I was going cuckoo too...amazing level of anxiety... -
Thought this might be interesting... Who here has the strangest reaction to gluten? I think I rank up there and its an odd one. I didn't really put it together until I had my last gluten incident but...and trust me, this is strange... When I've had gluten, been glutened and the few weeks following recovery... I look at the clock,...

ARCHIVED Celiac's Vs Gluten Intolerance Diff?
Eric-C replied to Eric-C's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I had written out a nice big reply and the system seems to have lost it...thoughts for another day I guess. -
ARCHIVED Celiac's Vs Gluten Intolerance Diff?
Eric-C replied to Eric-C's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I'll have to double check the Enriched flour comment...I know I had read it in the past regarding gluten being added. It is a protein and higher gluten flours would provide more nutrition per lb. Still I believe there are far more people with a gluten problem than the numbers show. I look at the issues I had with memory, foggy brain, and all that while... -
ARCHIVED Celiac's Vs Gluten Intolerance Diff?
Eric-C replied to Eric-C's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I don't care if they are off topic and its my thread There is much more to this story than is being told. For those with a political tone and don't thing the previous Republican administration did enough to fund medical research...well as a true fiscal conservative they shouldn't have in the first place. However I firmly believe that the overall... -
ARCHIVED Celiac's Vs Gluten Intolerance Diff?
Eric-C replied to Eric-C's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Yes it did answer my question. I personally do not think its going to matter one way or another in 2-5 years. I spoke with a doctor last week and there is a feeling this is an unseen epidemic. I took a very unscientific poll on another board I am on on if they knew someone with Celiac's or a wheat allergy. The numbers were staggering, way... -
ARCHIVED Celiac's Vs Gluten Intolerance Diff?
Eric-C posted a topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Whats the diff? If you just have an intolerance and have gluten by mistake do all the 'bad' things still happen to you? By bad I mean the long term stuff. Celiac's who continue to have gluten have an extremely high likely hood to develop other diseases. What about with just intolerance? I've never been officially tested and I'll never go through... -
Not a gluten-free place but I'd say they are gluten "safe". Went there tonight and had been in the past. Bit pricier than our usual place but with the economy the way it is we can no longer frequent our normal sushi restaurant. As the economy has downturned the owner and who was the sushi chef now pulls double duty as the guy who does the rest of the...

ARCHIVED Nestle's Hot Chocolate
Eric-C replied to JoeB's topic in Gluten-Free Foods, Products, Shopping & Medications
Yep I can confirm the old boxes said gluten free. We just had this discussion at the grocery story. We rarely buy it in the first place and when we did the wife always bought Nestle because it was the only one that said gluten free. With the power outage all last week and no heat we picked up a few boxes and immediately noticed not gluten free. ... -
ARCHIVED Gross Question..sort Of
Eric-C replied to givenupgluten's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
LOL...not at your problem but at my interpretation of it. I too always thought floaters meant you had adequate fiber in your diet. I used to wonder....hmmm, sometimes it does, sometimes it doesn't. Forgotten all about it but since I've gone gluten free, no floaters. I found this article: Open Original Shared Link That was always my interpretation... -
At Christmas my brother made my wife and I a separate baked chicken since the rest of the family was having turkey and even though I would not eat the stuffing I did not want to take the risk of having the turkey since stuffing was in it. I asked him not to make stuffing simply because rice bread is so horrible that I doubt the stuffing would be edible...

ARCHIVED Wildflours Bakery - Northville, Michigan
Eric-C replied to StrongerToday's topic in Gluten-Free Restaurants
A warning, a lot of products they sell are gluten free but not made in a gluten free environment. Found out the hard way... -
ARCHIVED I Want To Own A Gluten Free Rest.
Eric-C replied to puggirl's topic in Gluten-Free Restaurants
We had considered this also. We thought what would work best is a multi-ethnic restaurant. We eat a lot of Arabic, Indian, Mexican, Japanese, etc because a lot of their food is gluten free and with the way its prepared you lower the risk for CC. Mexican is a perfect example. The main flour ingredient in a Mexican kitchen is the tortilla which comes... -
I have not tried it but a good friend went there for dinner and said Gluten Free Manicotti was now listed on the menu. I used to work there when I was in high school and have eaten at that restaurant for nearly 30 years. They have a very large kitchen and I can see how they could segregate the food preparation enough to do this right. The owner's grand...

ARCHIVED Ma Uno's Now Have gluten-free Pizza!
Eric-C replied to mrg8610's topic in Gluten-Free Restaurants
Do you have an email for this Kathy from Uno? One of the biggest things about eating gluten free is having a tough time stopping for quick bite to eat. We love Mexican food and that does the trick but it would be great to have some variety. -
How did the Pakora turn out? Any reason you didn't use Besan flour, same stuff for the most part, maybe even exactly the same as what is used for normal Pakora. So they should not have been dry, as the traditional recipe doesn't call for any flours with gluten in them. We picked up a deep fryer, Pakora is on the menu this weekend

ARCHIVED What Is Your Favorite Pre-gluten-free Food?
Eric-C replied to ang1e0251's topic in Gluten-Free Recipes & Cooking Tips
White Castle.... Best 6am meal in the world was 3-4 White Castle Cheeseburgers fresh off the steamer. That is the only thing I miss, I gave up the rest without a second though. You might want to check into an Australian study that showed sour dough bread prepared a certain way did not cause a immune response in Celiacs even though it had gluten.... -
ARCHIVED What A Way To Start The New Year....possible Problem With Mexican Coke
Eric-C replied to Eric-C's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Thanks for the info. Was just a one night deal, feel great the next day. Another great mystery but I take it as a sign that things are working better. When I used to have this incredibly bad stomach problems like I did the other night, after relieving myself finally I felt incredible. I was in the worlds best mood, slept great, etc....only... -
ARCHIVED Pressure In Between Eyes
Eric-C replied to holdthegluten's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I'm going to start to sound like a broken record. The pressure/brain fog feeling I had for nearly 6 months when I was first having problems. If I have gluten in a certain form I get that pressure and a brain fog feeling for 1-3 weeks...now I had it for months and months after giving up gluten so length of time did not seem to directly relate to anything... -
ARCHIVED Bad Mood Swings
Eric-C replied to Wall3424's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Ditto to the above. During the summer I am pretty rock solid with my mood. Winter is up and down but as someone said Vitamin D is a big factor. I never took supplements until about 2 weeks ago. Last winter I was pretty good mood wise the entire summer but we had the sunniest winter on record and due to work I was driving 3 hours a day, mid day...
