That looks like it could be the replacement for chebe mix . . . . does it come out a lot like chebe? I've been buying chebe mix and making double batches for my son, who liked to take rolls for lunch, and eats a lot of hot dogs, so i've been making chebe in hamburger and hot dog rolls . . but this could be cheaper, esp if the asian store carries tapioca...

I cant eat tapioca, either, but my son can. So far I've had my best luck making rolls, rather than loaves. My loaves also come out wet, they fall, and dont taste good. The chebe mix has been the easiest thing so far. You have to use the eggs and add the baking powder, but they are easy to handle. The rolls come out flat for me, but he likes the taste... -

I actually picked up a three-pack of mini cake pans at target a month or so ago, they worked well and i may buy more - but i've also been using chebe a lot for my son, and those dont need a pan, they can be formed on a cookie sheet. -

not sure if its helpful, but i made the white cake recipe on the back of the box of ener-G tapioca flour, baked like a jelly roll, cut in half and filled with a very simple frosting recipe (something like 3 tb shortening, 2 c sugar, 1 tsp vanilla and 2 tb hot water, i think) - cut in to squares and froze them and i'm using them for lunch deserts. that certainly hasnt been my experience. At one pt in college I was moving back and forth between houston and central pennsylvania. modified corn starch is fine, modified food starch is suspect. The problem with rice cripsies is the malt syrup or malt flavoring - malt is made from barley, which also has gluten. Most soy sauces actually list wheat as an ingredient. I've heard that one very cheap brand is safe, but i use the gluten-free organic tamari becuase it tastes better. I think...

You could do a gluten-free trial, but most recomend not doing it if you are considering a biopsy. However, many doctors wont do a biopsy if the blood test is negative. You coudl also try other testing (mostly you have to pay cash for it tho) such as enterolabs or A.L.C.A.T. After the dr's apt and any biopsy he might schedule, you still shoudl try a trial... -

Just want to give you some sympathy! When i first went off gluten, I quickly learned I cant handle tapioca. I tried Lorka's bread with some subs and it never really rose but then fell again anyways, and tasted awful to me to boot. Several people have responded to similar posts saying that it sometimes takes them 3 days to see symptoms from a glutening, and that some symptoms can last for weeks.
