Another VA mom with the same problem - except my son isnt celiac (as far as we know - actually waiting for results). Some mornings he has the runs several times before the bus comes here. I was allergic to wheat and milk as an infant and had read to put off introducing allergen foods to kids with a high chance of food allergies until they were 1 year old. In fact, thats why they no longer make infant cereals with wheat in them - farina used to be a common first food for babies. I introduced all common allergy foods to my kids very carefully...

Meat and potatoes are gluten free. Meat and rice are gluten free. Veggies are gluten free. Depending, of course, on what you use to season it. But i make roasted chicken or turkey breast w mashed potatoes and veggies all the time. Stir-fry over rice . . any plain rice is going to be gluten-free, just dont get any rice mixes. Me too - I dropped gluten and dairy, and very soon noticed I couldnt tolerate tapioca. I cant have most mixes, pre-made gluten free items . . . or even frozen rice dream. And all the best bread recipes call for tapioca starch, too. Very annoying. It also showed up on my A.L.C.A.T test as a sensitivity. -
I'd stopped eating salmon because i started noticing it bothered me. WHen I took my A.L.C.A.T. test it showed up as a sensitivity. But hey, if it bothers you . . . dont eat it.
