Dawn, you don't go 'cold turkey' you go 'hot chicken and carrot soup' . I think the long fermentation time recommended by Elaine is as much about allowing the bacteria to proliferate as it is about the break down of lactose. The longer the fermentation, the more bacteria. If it is tart, what bacterial strains are you using? Different bacteria produce different results. If you go back three or four pages I mentioned how I make the coconut milk, but will repeat it. I pierce the 'soft' eye and make a hole. I then prop it over a mug to drain and drink that separately. They probably make the coconut flour from the fibre that is left after they have extracted all the coconut flesh for oil, milk and cream. It may well be very dry and need some of the oil replaced. I would think you could make that recipe from any nut flour or coconut flour - just a matter or experimentation. I have some pears, coconut flour and ground hazelnuts and will try it with those. Just out of interest does anyone know whether you can get rid of the nitrites/nitrates by washing the meat or is is intrinsically within the the meat fibres? I wondered the same with dried fruit. I always soak dried fruit in hot water for a while to soften it which also helps remove some of the mineral oil and hopefully the sulphite. Not sure what difference...

At the end of the day we are dealing with microscopic damage. A biopsy can only pick up major (and I mean MAJOR) and very obvious damage to the gut wall. They can take a biopsy of tissues and put them under the microscope but if they have picked undamaged areas to take them from they will miss it. Paula, can you not just make the SCD yogurt? The long fermentation digest the lactose and changes the casein into a more digestible form. You can buy Probios but in my experience they are obscenely expensive for what you get. -

I don't want to frighten anyone but I think we have to be very careful that we try if possible to stay away from any GM foods. It can be difficult as these 'Frankenfoods' are insidious. A piece of GM broccoli looks identical to 'normal' broccoli so how do you tell? I am going to try and source local growers if I can. My little grandson had something... -

Oh yes Mia, I had that problem too - over here in the UK cider is alcoholic! Of course cider is made from pure pressed apple juice and it seems that it is that that is referred to as cider in the States and Canada. I'm sure we would all be delighted if the alcoholic type was SCD legal but sadly that is not the case - boo hoo! -

I would vouch for that. So many find that just dropping gluten only answers part of their problems. Those of us who have issues with other foods may well be suffering from gut dysbiosis and bacterial overgrowth. I made Naomi Devlin's Vanilla Pumpkin Pie this evening for dessert. Oh boy - so scrummy. I made a thicker base with extra ground hazelnuts and almonds, added an extra egg and some apples to the filling mix and blended them along with the other ingredients and reduced the honey a little, and served with yogurt and coconut cream it was wonderful. You're right about having the salad with hot food - I fried up a little ham and some mushrooms and had those with the salad and it was good. I often have salad when I eat out and that normally comes with hot food so I'm ok with that. I like the idea of the cooked apple with the yogurt - funny I'm ok with that cold. The soup with raw veg sounds interesting... -

I did the phMiracle 'Alkalizing Diet' about 2 years ago. I did lose some weight, the External Candida symptoms cleared up, the IBS went away, but after 4 - 5 weeks I had to stop the diet as my stomach got so sore....I did wonder if I had overdone the alkalizing with the wheat grass 'green drink' and the minerals. If I did that again I would not take those...
