  1. Thanks everyone!!!! All suggestions sound great. I found my mini-loaf pan and it actually makes 8 mini-loaves!!!! So, sorta like an XL muffin, I suppose Missy's mom: I love the sorgham flour blend, also. Will try that in Purple's recipe b/c I, too, bake with as little sugar/fat as possible while still retaining the flavor. Purple: I'm going to...
  2. Hi everyone. I LOVE pumpkin muffins this time of year and even bought a mini-8 loaf pan about 4 yrs. ago that I have never used. Would love to bake some this year to give away as Christmas presents. Does anyone have a favorite gluten-free recipe that I could use for this purpose? I am not particularly fond of Betty Crocker's cake mix even though the pumpkin...
  3. Since, according to my family, I'm a yankee now ... having lived in the north for a number of years... I LOVED Bob's Red Mill cornbread with spicy blackbean soup, white chili, and regular chili. It was so delicious! But, had I been expecting the cornbread I grew up with in the South (notice that's with a capital letter I would have thought it tasted too...
  4. Thank you all!
  5. Hi everyone. Is tapioca starch the same thing as tapioca flour or is it a different animal? I see it both ways in recipes.
  6. Years ago, I ate the following for breakfast almost every morning and I am now somewhat back to it: I cook a pound of salmon on the weekends and season well the way I like it. Also, bake some biscuit muffins without sugar. Occasionally, I would cook beets, also, and slice them up and keep in containers in refrigerator. Also, cook about 6 boiled eggs and...
  7. All good ideas. In addition, you can substitute applesauce for oil in baked goods. Marie on the bread thread said to add the same amount of applesauce that the recipe calls for in oil. Then, add only half as much oil as the recipe calls for.
  8. Marie, hi. So, are you saying instead of 1/2 c. oil, I could substitute 1/4 c. applesauce instead? I think those pumpkin muffins would taste good with nuts in them, also. May try that next time. Sounds like you've been doing a LOT of cooking Also, on the pumpkin muffins, you can use whatever gluten-free flour combination you would like.
  9. Dawn, hi. I agree. Having grown up in NC, we didn't make sweet biscuits. I don't plan to put any agave in the biscuits when I make them. What is Earth Balance? Haven't heard of that. I started to ask if that was a tennnis shoe, but that would be New Balance, wouldn't it? To answer your question about the pumpkin muffins, here's what I did: Bake 350...
  10. Thank you for the Delightful gluten-free Biscuit recipe. I saved it to try later. Also, from a link off of that I found this recipe that is dairy free and sugar free. It looks really good. I will definitely try both and will bake in muffin tins. That's what I always do. Here's that recipe: FROM DEBBIE ROSS
  11. DMarie, Hi. I tried the Pumpkin Berry muffins this weekend and they were fabulous! Ate two this morning. But, I modified mine and didn't add the berries and changed several things. Anyway, here's the website: I think she is gluten and casein intolerant also. Source: glutenfreegoddess.blogspot.com Let me know if you would like my modified...
  12. Our Wal-Mart now carries all kinds of Bob's Red Mill products in its new gluten-free section in the grocery department. AND, the prices are much lower than Whole Foods and other health food stores locally. I hope more people will buy at Wal-Mart so they will be encouraged to continue to carry these gluten free foods. It will save us, the consumers, big...
  13. When baking, I use one of the three S oils: Safflower, Sunflower, or Sesameseed oil. They all seem to work well for me. I usually get the one that is the least expensive.
  14. Does anyone know if you still have to eat gluten b4 taking the celiac test? If so, for how many days? Also, what is the name of the test? Can my family doctor give it to me? Will insurance pay, usually? Thanks!
  15. Are peanut M&Ms gluten free? That may be your problem if they're not.
