  4. Thanks as well. Sour Cream works too. My favorite soda bread recipe calls for a cup of sour cream. 2T mayo sounds better and easier and more economical. Which brand of mayo is gluten-free? Didn't realize mayo had gluten. Wow.
  5. I grew up in the South and no one can bake a biscuit better than my grandma did when I was growing up. The consistency was a lot like Bette Hagman's Caraway Soda Bread in her old '93 cookbook which is why I'm baking it downstairs right now Let me know if you want the recipe. It's the one I keep going back to.

In Roberts's cookbook, she give three flour mixes, but writes all of her recipes to use the brown rice flour mix. In the intro section, she slips in a sentence in an obscure part that says you can use...
  7. My bad for not going to a bookstore to preview before buying from another source. Unfortunately, I will return them both as the primary flour they both use is brown rice flour which I dislike. My bad for not mentioning that, I suppose; however, with all of the variety of flours out now, i was shocked that two cookbooks would lean so heavily on one flour....
  8. I have ordered soft-shelled-crabs cooked in just butter and the waitress wouldn't do it. Finally, she said she would let me get them fried in cornstarch. They were good the first time...not so good the next time. At an Italian restaurant, I ordered veal picatta sauteed in just cornstarch. It was terrible. So, I'm not sure what I'll get next time.   10. I don't use Pamela's mix, but when I make bread from scratch, it lasts a week for me with just plastic wrap over the 8x8 pyrex dish.

  15. I drink a tablespoon of psyllium fiber in a half glass of water 4-5 times per week and take 2 cascara sagrada capsules with it a couple times per week. That works for me. I have had constipation issues my entire adult life, so it is not related to gluten in my case.
  16. I totally agree with what Jillian said about the winter months. They are the worst for some people. For me, I go out to the mall and walk around sometimes at night just to get out of the house and get exercise. It really does help the body and the mind. Hope you feel better soon.

  21. Thanks for all of the comments. I have been eating gluten-free for a long time, but winging it when I cook. What I am looking for are names of cookbooks that are gluten-free that YOU USE and LOVE! I don't want to experiment buying another cookbook I'll never use. A wide variety of things is ok. Yes, probably focusing mostly on baking.
