    I look at the clock and see less what time it is, than how long until 11am, when services begin. Our hearts are w/ Susie. But I thought chocolate was already out? Sair-uh less bumpy today? Is Gian-knit MIA? Exceptions always made when potentially humoUrous avatars can be incorporated.

    I think the mold is more of an issue w/ aged cheeses. (Well . ..definitely an issue) But I've seen so-called "fresh" cheese, like mozzarella and feta, in the OK column for ppl w/ mold sensitivities.

    That it is!!!!! Chihuly is one amazing glassblower. The av is of dozens of pieces set on a false clear glass (of the functional non-artistic variety) ceiling. Exhibits do a whole room this way w/ 100s of pieces. Very cool.

    D'oh!! I was gonna talk about 100% agave tequila, but then went ahead & googled "tequila rose". 30 proof strawberry cream liqueur??!!!!! Seems to me that that's about the toughest type of thing to determine whether it's gluten-free, unless the company will say so, since there's no requirement to disclose ingredients in alcoholic beverages. ...

    I've read that 33% have one or more of the genes involved, but of course most don't actually have celiac disease. There are even identical twins where one has celiac disease and the other doesn't. And the genetics research has quite a ways to go, as there are biopsy-confirmed celiacs w/ none of the usual markers.

    I'm not certain that I'm right about this, but it sounds as if the General Mills rep might not be entirely clear on the Top 8 Allergen law & how it relates to gluten. Of course, if it had wheat, then the box must "clearly state" Contains: wheat. But that dang law doesn't help a celiac as much as we'd like, considering that barley & rye aren't...

But seriously, there ARE many of us who had such a drastic array of pre-gluten-free debilitating symptoms & unexaggeratedly hellish existences, that the ONLY reasonable behavior IS to treat gluten as if it were ricin, anthrax or strychnine.

    I stir a lot and definitely the rinsing is crucial. Rice pasta gets a starchy coating much more than regular pasta. Wondering whether everyone rinses w/ cold water, as I'd heard it's also important to stop its own heat from continuing to cook itself.

    My joints aren't great but still are SO much better than before gluten-free. So I do think a strict 100% gluten-free diet will help tremendously. And I'm wondering if you've considered a hypnotherapist, like a smoker would, to help w/ quitting ingesting food that you know is harmful.
