ARCHIVED Care Packages Received*lee-lee* replied to munkee41182's topic in Coping with Celiac Disease that's so awesome! how lucky! my mom called me out of the blue about a week before Christmas and asked what kind of pasta i eat and do i like coconut. turns out she was standing in the gluten free section of the grocery store and didn't know what to buy for me! it was a great surprise when i was opening my gifts. one of my good friends was just diagnosed...

ARCHIVED Calling Celiac-mommy!*lee-lee* replied to *lee-lee*'s topic in Gluten-Free Recipes & Cooking Tips well, i tried the cookies again today and they came out great. 350 degrees for 8 minutes and they were perfect. a little flatter than before but they taste awesome so that's all that really matters! (oh and i only had less than a cup of regular chocolate chips so i subbed a cup of white chocolate chips...a nice variation!)

ARCHIVED I'm Feeling Discouraged*lee-lee* replied to *lee-lee*'s topic in Introduce Yourself / Share Stuff thanks everyone for the encouraging words. baking seemed to help a bit...i had to pay attention to what i was measuring instead of wallowing in my own self-pity i just can't get over how rude potential employers can be. i would be happy with a crappy form letter saying "thanks but no thanks" but apparently even that is too hard. i keep trying to...

i interviewed for an awesome job back in September...some may remember, i posted about them bringing in a gluten-free lunch for me. i thought the interview went great and was anticipating an offer. i kept calling them and was given the run-around for almost 2 months. i finally gave up hope when they took the job posting off their website. i had another...

ARCHIVED My Acne Just Won't Go Away*lee-lee* replied to *lee-lee*'s topic in Post Diagnosis, Recovery & Treatment of Celiac Disease ooh good call Janet...i haven't had my levels checked since the initial test back in May. it's on the top of my list for when i get health insurance again. (fingers crossed i get the job i interviewed for before Christmas!)

ARCHIVED My Acne Just Won't Go Away*lee-lee* posted a topic in Post Diagnosis, Recovery & Treatment of Celiac Disease i never had acne as a teenager but about 9 months before i was diagnosed, i started noticing pimples popping up all over my face. i tried a few different types of face washes but nothing really worked. since going gluten free, it's gotten better but every so often i get a HUGE disgusting zit that takes well over a week to go away. it's usually accompanied...

Might This Be Celiac- Not Tendinitis?*lee-lee* replied to SMR814's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms i dealt with this kind of pain in my hips for a year before being diagnosed with Celiac. i was tested for everything you can imagine (mono, rheumatoid arthritis, lyme's, thyroid) but all the tests came back negative and was initially diagnosed with bursitis. i was put through PT and had a few cortisone injections but nothing ever helped. finally, i think...

ARCHIVED Shopping For 26" Or 32" New Tv*lee-lee* replied to debmidge's topic in Introduce Yourself / Share Stuff nope, you don't need HDMI cables if you're not going to use the High Def. you'll just hook the cable wire to the back of the tv. oh, well i don't blame you then!

i don't have kids yet but i fully intend on having them tested when the time comes. it is, after all, recommended that all first-degree relatives get tested. kids/parents, siblings, etc. i'm still trying to convince my dad and sister but it's a losing battle!

ARCHIVED Ma Uno's Now Have gluten-free Pizza!*lee-lee* replied to mrg8610's topic in Gluten-Free Restaurants ok, i just got back from Uno's in Burlington VT. we had to take a ferry from NY (which cost my boyfriend and i $25) to get to VT so once it was all said and done, including the meal, the entire trip cost us about $50. i think i set my expectations too high for this pizza. don't get me wrong...it was definitely good but there are a few things i'd like...

ARCHIVED Shopping For 26" Or 32" New Tv*lee-lee* replied to debmidge's topic in Introduce Yourself / Share Stuff once you get HD, you'll never want to go back! my cable company is terrible and every so often our HD channels get messed up and we're forced to watch on non-HD and it's like torture. seriously, the picture is so fantastic - clearer, crisper, brighter colors. my boyfriend and i bought a new tv in March. it's a 42" LG 1080i LCD and we love it. ...

i think i'm O something...can't remember positive or negative but i always remember my mom telling me it's the one where i don't have to get a special shot when i get pregnant. does that make any sense?? LOL

ARCHIVED Bad Mood Swings*lee-lee* replied to Wall3424's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease i noticed a major improvement in my overall mood once i went gluten free. like many others, i was not strict enough at first and was getting glutened left and right. it took a couple of months to really start to understand what i had to do to be healthy. only then did i notice i wasn't as grumpy and overall down in the dumps as before. i still have my...

ARCHIVED Ma Uno's Now Have gluten-free Pizza!*lee-lee* replied to mrg8610's topic in Gluten-Free Restaurants i read it's coming to upstate NY (Albany/Saratoga area) in "early 2009" so maybe there's hope it'll extend south to LI too! i'm going to Uno's in Burlington VT on Friday to try it...i'm so excited!

there's a support group that meets at St. Peters Hospital. this website has the details: Open Original Shared Link there may be other groups that meet more frequently...i used to live in Glens Falls and i think their group meets once a month. maybe not anymore though. i moved right after i was diagnosed so i never got to go! check with the hospitals...

ARCHIVED I Have Been Eating Gluten For Over A Month*lee-lee* replied to kimis's topic in Coping with Celiac Disease did you get a confirmed diagnosis of celiac from your doctor? if you truly have celiac, you're still harming yourself by ingesting gluten, regardless of how you feel.

ARCHIVED Baking White Bread #2 (gluten-free)*lee-lee* replied to cycler's topic in Gluten-Free Recipes & Cooking Tips i just read somewhere (a gluten-free cookbook, perhaps?) that bread batter is supposed to be more of a liquid than a dough. resist the urge to add flour to thicken it up. it'll bake correctly the way it is.

ARCHIVED Calling Celiac-mommy!*lee-lee* replied to *lee-lee*'s topic in Gluten-Free Recipes & Cooking Tips ooh maybe oven temp was also my problem...i baked them at 375, not 350.

ARCHIVED Calling Celiac-mommy!*lee-lee* replied to *lee-lee*'s topic in Gluten-Free Recipes & Cooking Tips i put half the cookies in a ziplock bag and the other half on a plate covered with plastic wrap. both were equally hard. i used regular butter and Pamela's and cooked them for 10 minutes. must have been the cooking time that did me in. oh darn, i guess i'll have to make another batch! thanks Rachelle!

HELP! i made chocolate chip cookies on Tuesday using your recipe and they were awesome right out of the oven. but within a few hours, they got pretty hard and by the next day i nearly cracked a tooth! does this happen when you make them? any suggestions on how to keep them a little softer? my mom used to make homemade cookies when i was a kid (pre-celiac...

ARCHIVED I Got A Magic Bullet For Christmas*lee-lee* posted a topic in Gluten-Free Recipes & Cooking Tips i got a (JC Penney brand) Magic Bullet for Christmas...what can i make with it? anyone have any good tried-and-true recipes? i'm thinking i'll use it most for smoothies. and for some reason the only thing i can remember those goofy people making on the infomercial is alfredo sauce!

ARCHIVED Misdiagnosed-legal Recourse?*lee-lee* replied to hadabaday2day's topic in Coping with Celiac Disease if you're not necessarily looking for money, i agree with Sandi about writing letters to the AMA and the medical board in your state. you probably won't get anywhere with a lawsuit, if you can even get a lawyer to take your case. you might get further in your plight for education by writing letters. i think too many people sue for the wrong reasons and...

ARCHIVED Denied Insurance Coverage For Dietician*lee-lee* replied to CeliacChild's topic in Doctors my insurance company denied me too. it was $200 out of pocket for an hour consult - no thanks. my GI actually said it wouldn't really be worth it to go anyhow. i can't help with a letter but maybe the doctor that diagnosed your daughter can? you can also find tons of great info on this board...

ARCHIVED Requesting A College Transcript*lee-lee* replied to *lee-lee*'s topic in Introduce Yourself / Share Stuff the woman at the registrars office must have been in the Christmas spirit because she agreed to fax my transcript! (she said they don't normally do that but she would if an unofficial copy would be ok.) now i'm just waiting for the employer to call me back...the guy i interviewed with on Friday said he'd call later this morning.
