    well, i tried the cookies again today and they came out great. 350 degrees for 8 minutes and they were perfect. a little flatter than before but they taste awesome so that's all that really matters! (oh and i only had less than a cup of regular chocolate chips so i subbed a cup of white chocolate chips...a nice variation!)

    i don't have kids yet but i fully intend on having them tested when the time comes. it is, after all, recommended that all first-degree relatives get tested. kids/parents, siblings, etc. i'm still trying to convince my dad and sister but it's a losing battle!

    did you get a confirmed diagnosis of celiac from your doctor? if you truly have celiac, you're still harming yourself by ingesting gluten, regardless of how you feel.

    i just read somewhere (a gluten-free cookbook, perhaps?) that bread batter is supposed to be more of a liquid than a dough. resist the urge to add flour to thicken it up. it'll bake correctly the way it is.

    ooh maybe oven temp was also my problem...i baked them at 375, not 350.

    i put half the cookies in a ziplock bag and the other half on a plate covered with plastic wrap. both were equally hard. i used regular butter and Pamela's and cooked them for 10 minutes. must have been the cooking time that did me in. oh darn, i guess i'll have to make another batch! thanks Rachelle!

    if you're not necessarily looking for money, i agree with Sandi about writing letters to the AMA and the medical board in your state. you probably won't get anywhere with a lawsuit, if you can even get a lawyer to take your case. you might get further in your plight for education by writing letters. i think too many people sue for the wrong reasons and...

    my insurance company denied me too. it was $200 out of pocket for an hour consult - no thanks. my GI actually said it wouldn't really be worth it to go anyhow. i can't help with a letter but maybe the doctor that diagnosed your daughter can? you can also find tons of great info on this board...

    the woman at the registrars office must have been in the Christmas spirit because she agreed to fax my transcript! (she said they don't normally do that but she would if an unofficial copy would be ok.) now i'm just waiting for the employer to call me back...the guy i interviewed with on Friday said he'd call later this morning.
