  2. i react differently depending on what and how much i ingest. sometimes i'm running for the bathroom within 10 minutes but other times it can take 12-24 hours. one thing i noticed is that i'll always break out with a big gross pimple(s) on my face within 24-36 hours. that's how i know for sure i've been glutened. i'm still trying to wean dairy back into...

  4. i noticed a difference in the first few weeks of starting the diet. most of my symptoms were GI but i was having my fair share of mood swings too. now, i can definitely tell if i've been glutened. there's really no question - i'm running for the bathroom, my face will break out and i'll cry if someone looks at me funny. as far as bread...i haven't tried...
  5. french fries are potatoes, which are ok in their natural form. but once they are thrown in the fryer, you can count on them containing gluten. it cross contamination from breaded foods like mozzarella sticks or chicken fingers. you're fine to bake french fries at home (that list Momma Goose provided is great!), but they're usually never safe at a restaurant...
  6. has anyone else noticed extreme hair growth and/or overall healthy hair since going gluten-free? i thought it was just my imagination but so many people have commented on how long my hair has gotten in recent months. i've also noticed how straight and shiny it's been lately too. i wonder how long the growth spurt will last? since it's growing like a weed...

  8. grrr, no i haven't heard anything yet and i'm starting to lose confidence. I was told after the interview last Tuesday that they would call me on Friday but if i hadn't heard from them to definitely call on Monday. Of course, they didn't call on Friday so I called the HR lady on Monday afternoon and had to leave a message. I still haven't heard back...
  9. i had the biopsy a few months ago and i was very nervous. i'd never been sedated or even gone to the hospital before. but it was a piece of cake! they give you an IV with meds that put you to sleep. right before i was knocked out, they inserted a bite plate in my mouth so they could slide the scope down. that is the last thing i remembered. the next...
  10. i tried Cocoa Pebbles a few times and always ended up running for the bathroom. no problems with Rice Chex though. haven't tried Fruity Pebbles...i'm not a fan of them anyways.

  12. did they run a celiac panel before you were referred to the GI (and before you started gluten-free)? that would have shown elevated antibodies if you do have Celiac.

  14. well my interview went great! the company sounds awesome and seems like a great place to work. i met with 6 different people, had a wonderful gluten-free lunch, and am keeping my fingers crossed for an offer! i should hear something by Monday.

  17. paternal side: grandma was diagnosed 20 or so years ago. not sure if it's related but grandpa has had diabetes for as long as i can remember. maternal side: no known history of Celiac but my uncle died recently of colon cancer. i suspect my sister has it but she won't get tested. she's overweight, has problems with her thyroid and was always the kid...

  19. i bought a package of Mi-Del cookies because i thought they would be the same as Oreo's. oh my, was i mistaken. they were so hard, i nearly chipped a tooth biting into one. BUT...that might be just what you need to not get soggy in the pudding!
  20. make sure you continue to consume gluten until after the biopsy. if you stop now, your body will start to heal and the biopsy may come back (false) negative. also if you can get a copy of the blood work and post the results on here, someone can probably interpret it and tell you if they did all the right tests. i'm guessing by your name that you live...
  21. i think if you have the gene, you can pass it on to your kids but that doesn't mean they will develop Celiac. you can always raise them gluten-free. it certainly won't hurt anything.
  22. my doctor has not given me a definitive diagnosis. he believes that i need a positive biopsy, despite the positive antibodies in my blood and the presence of the DQ2 gene. i say that i have Celiac and don't think twice about it. i don't have kids yet but when i do, i intend to test them for the gene.
  23. i've made something similar before but i made the mistake of using the canned chicken. it had a funny taste and resembled tuna way too much. i'd go for freshly cooked chicken or those Perdue short cuts if i was running tight on time.
  24. i eat eggs every day and i feel fine. i agree that it sounds like a myth.
  25. it's my understanding that Kraft will clearly label wheat, rye, barley, oats...someone please correct me if i'm mistaken! oh how i miss Wegmans! i spent my first few gluten free weeks living 5 minutes from a Wegmans and it was heaven. i never once had to question a store-branded item as long as it had that handy "G" on the packaging.
