  1. One more question. If I do rice flour with potato starch do I need xanthun gum?
  2. jerseyangel, I have rice flour, so I'll sub that. Thanks so much! I'm trying to get the baking part done today since I only have one oven. Momma Goose - recipe sounds yummy! Jestgar, thanks for letting me know it may be bisquit like. I love bisquits, but don't really want that texture for the cheesecake. Missy's Mom - If I use finely ground nuts...
  3. I'm making cheesecake cookies for Thanksgiving and I need to make a substitution in the crust. Here is the crust: 1/3 cup butter, at room temperature 1/3 cup firmly packed brown sugar 1 cup flour
  4. Sounds yummy!
  5. Jason, please go to your friend's house. Pack up your dinner and bring it with you. Your friends must care a lot about you to invite you over for Thanksgiving. I'm doing the same thing. We're invited over to a friend's house every year for Thanksgiving. This year she is doing it on Friday. (My first gluten free Thanksgiving) So, hubby and I are...
  6. I bought this too, but haven't tried it yet. MICdenver, I'm so glad you tried it and that it was good. I'll probably make it around Christmas.
  7. We had the best experience at PF Changs. When our waiter came over carrying the tray with sauces, he started to put it on the table. He saw that I had a gluten-free menu and said, "Oh, you can't have this." I was so thrilled. I told him he was right, that I couldn't, but my hubby could. He brought me my own tray of sauces with gluten free soy sauce....
  8. I felt really good the first couple of weeks too. Then, it wasn't so great. Extreme fatigue. Couldn't leave the house in the morning because I would be in the bathroom a few times. Stools were very soft. I've been gluten-free 6-7 months and my stools are just now looking normal! Most people give up dairy in the beginning. I did not. I still ate...
  9. OK, I guessing here, that since you are a student you are in your 20's. (Although I've been a student in my 20's and then again in my 30's) Tempe, just outside of Phoenix, is a big college town. Also, lots of night life, if that's your thing in Scottsdale. From what I hear, Gilbert is a big family-oriented city. I'm in my 40's and married (17 years...
  10. Hi there. What city are you moving to in Arizona?
  11. Missy's mom, I didn't realize we could keep our cast iron skillets. I still have mine and would love to use it. So to clean it, when I put it in the oven do I put it in dry or do I need to put anything on it?
  12. I use McCormicks right now. However, I called Safeway 2 days ago on a different item and the customer service rep told me they were going to start labeling their spices gluten free. I don't know when that goes into effect.
  13. I just made these and OMG are they good! I used the original recipe but substituted a combo potato and corn starch since I didn't have any tapioca starch. I cooked them for about 20 minutes. They were cake-like, but not dry at all. I also added extra chocolate chips.
  14. OMG! You are so funny. You actually made me laugh out loud. I don't have any stories to tell, but thanks for the laugh.
  15. If this is DH it must be from cc. I help my in-laws quite a bit and there is gluten everywhere. I wash my hands a lot, but it may have been from kissing them. AZ is nice right now, but I would trade it in the summer! I haven't been to Flag in a long time, but hear that it has really grown.
  16. I used to get this rash before going gluten-free. I've been gluten-free for about 6 months and then I got this rash again, first time since going gluten-free. It's not as bad as it used to be and it is only on one side.
  17. Most cheese is gluten free. In the beginning it's easier to stick with brands that will list any gluten. The website is glutenfreeindy.com. They list these brands. Blue cheese is one you have to watch out for. Also, brie. Someone with more knowledge will probably chime in, but that should get you started.
  18. Thanks Mamaw. I didn't know the flour had to be at room temp. I wonder if that is why my bread fell. It came out of the oven beautifully and then fell later that day.
  19. Lucky you! It's always great when you are getting better and cut out a few meds.
  20. Happy Birthday to you! I'm so sorry you had no one to celebrate with. When I was first dx'd my friends weren't sure what to do either. I didn't say much about it because I didn't want it to always be about me. But, 6 months later, they know it's not totally weird and we do stuff again. They have even told me about some restaurants that I didn't know...
  21. OK, I went to the store and bought a bunch of cooking/baking supplies. Rice flour, potato starch, xanthum gum etc. How do these need to be stored? Do I refrigerate them or just store in airtight containers. I'm still going to buy the better batter flour too. How is that stored? Thanks.
  22. Can DH just be on one side or is it always symmetrical?
  23. When I was first dx'd I could not drink coffee, even decaf. I've been gluten-free for about 6 months and have started drinking decaf again. I use Lactaid milk with it and so far so good. For me, I think things just needed to settle down a bit.
  24. Sounds yummy. Thanks for posting.
  25. Thanks for the recipes and the brand names! I always loved that chex mix - I think I could get addicted to it.
