  1. Hi Tamito, I can only chime in with everyone else. I was a silent celiac and was floored with my diagnosis. Although I didn't have outward symptoms, I still had major damage to my villi and small intestine. The good news is: being on a strict gluten free diet begins the healing process for a healthy life. Because I didn't have issues of sickness...
  2. Hello Jim and welcome to the gluten free world. I have found the best defense is a good offense. Take time to read as much as you can. There is good information on this site as well as good food ideas. My issues in the beginning were making sure all my medication and vitamins were gluten free. Jennifer
  3. I would be honored to share the Taco Soup Recipe. This is a recipe I used pre gluten free and I just had to change brands on some of the ingredients. For those of you who use fresh or frozen I'm sure those items will work as well. This is my throw in the crock pot and it is ready when I get home recipe. 2 cans whole corn 4 cans of beans (any type...
  4. The fact remains, people who are not gluten free do not truly understand the precautions. A neighbor had fixed a meatloaf for a neighborhood cookout and fixed it "gluten free." I'm usually not assertive enough to ask questions, but I did. I couldn't have it!!! But I was pleased this lady put forth an effort to try. The best part of the cookout...
  5. You did it - you got thru a major challenge!!! Wee Whoo If there is something special with food going on around me, I take a treat of my own. To feel like I'm a part of things I usually choose a chocolate treat!! Jennifer
  6. Let me ask this question a different way, and make sure I understand. I have been diagnoses via biospy. I was a silent celiac before gluten free diet and now have reaction when accidentially glutened after implementing a gluten free. The question: If I don't have a reaction to a bread crumb, does that mean I am not doing any damage? Like if I accidentially...
  7. I had surgery 2 months ago and survived without getting sick. The key - I took my own food!!! My GI doctor advised me to prepare my own foods ahead of time and have my husband bring my meals to me. We did this and it really worked. The nurses were very accomadating and even allowed me to use their refrig. for the leftovers and the microwave for warming...
  8. Weight Watchers Sante Fe Rice and Beans (I think that is the actual name on the box) is gluten free and will say so on the box. Jennifer
  9. I've noticed the Atkins Endulge bars. There are different kinds and I'm wondering if some of them are actually gluten free. The Peanut Caramel Cluster Bar appears to be gluten free but it does list artifical flavors. It would be nice to have more of a selection in the bar type snack/quick treat area. Jennifer

  11. I use Bob Mills brand corn mill mix. We love it. My 11 year old son swears it is better than any other kind of cornbread. I even use it to fix small pancake like bread to use like sandwich bread. It is the only type of bread I really like now that I'm gluten free.
  12. As a celiac I react differently to the amount of gluten I ingest. If it is trace amount it may take me 3 days before I have symptoms and then it is only upset stomach. If I get a larger amount - I'm in the bathroom within 30 minutes. I can usually tell within 10 minutes if I ate something wrong. Jennifer
  13. Believe it or not - my doctor was on top of things. He reminded me I had had a hysterectomy 6 weeks ago and my body was still healing and would take a while to be "normal." The dude also reminded me I wasn't 21 years old, the nerve of him (I told him so too).... Anyway, all my blood work was okay six weeks ago prior to surgery and he felt like dealing...
  14. Is there a specific blood test to see if I am deficient in vitamins? I've been reading a lot on the website to see what types of vitamins I should consider, but wouldn't it be better to know in advance and then choose supplements? Can this be done by a blood test or some other method? Or is this completely trial and error. I have a doctors appointment...
  15. Hey Mike, I must add my own story!!! I was diagnosed out of left field!!! I had no clue... I had a history of anemia but was controlled with iron supplements. I guess I can consider myself one of the lucky ones because I wasn't sick with horrible symptoms. I believe a gluten free diet will be what helps you!!! Jennifer
  16. I would be interested in a "simple" gluten free cookbook. If I see a recipe with more than a few items I don't even bother!!! I try to eat low calorie and I want to be able to count my calories from a recipe. So along with the EASY cookbook - add simple. Jennifer
  17. Hello mbj, I'm no doctor, but I can go on experience. Sounds like shingles to me. How long have you had this "feeling?" There are cases where shingles begin on the inside (for lack of a better term) and the bumps/blisters don't come until later. From what you have explained sounds like how I felt when I had shingles. I had the bumps/blisters first...
  18. Hi Sarah, Just thought I would chime in!!! I'm kinda at a disadvantage in giving information on how to heal. I wasn't sick before diagnosis, and feel good after diagnosis. Although it has certain advantages, sometimes I don't know when I've done something wrong. It takes a good amount of gluten for me to even have a reaction. Having said that....
  19. If you are gluten intolerant and not celiac will you eventually develop celiac if not on a gluten free diet? Does one with intolerance also follow the strict diet like a celiac? What about a child with autisum? When they go on a gluten free casein free diet, do they have to follow the strict diet to see success? Jennifer
  20. Hello UndercoverAlien, It is very tough when you first begin eating gluten free. With time it does get easier. My advice is to keep reading!!!! There is a lot of good information on this website. Also, keep asking questions. Nothing is to big or to small for this group. When I started only a few months ago I went to some very basic foods. Foods...
  21. Hello Braleycakes, You may have just found your answer. I avoid all foods that could possibly be cross contaminated. If the label says made in facility with wheat - that is an automatic no-no. I suggest eliminating that completely from the gluten free diet and see if that works. Jennifer
  22. Hello jlbroyles, I can't speak for everyone else, but when I get glutened it seems to be the amount for me. I'm still trying to figure it but there are times I will have mild gas for a couple of hours to upset stomach for three days. I have very little side effects and have been able to eat anything (except gluten - like dairy) while my intestine is...
  23. I say the new hair growth is due to adequate nutrition not received prior to gluten free diet!!! Jennifer
  24. Hello Mae, I am one of those people diagnosed with "no symptoms." A biospy was done because I was anemic. I had not felt bad, lost weight, nothing else. Until after I went gluten free I realized some of the things in "normal life" were attributed to gluten - extremely mild cases of gas, bloating, etc. Although I had no major signs of problems the...
  25. Hey JustJust, I believe the time you begin a gluten free diet to the time you heal the intestine is completely related to the damage done before diagnosis. My doctor did not want to tell me how long it would take me to heal, but after I kept pushing she did say mine would be about 18 to 24 months. I don't believe doctors can give a length of time...
