Yeah, i have to argue with my mother in law all the time. For Easter we were bringing the ham--because i know she would not know what to look for in the glaze or seasonings for hidden gluten. She tried to talk me out of it. She thinks it's like her daughter's wheat allergy; I just need to avoid bread and pasta. Then she gets all fretful about me...

ARCHIVED Mary's Gone Crackers
samcarter posted a topic in Gluten-Free Foods, Products, Shopping & Medications
Why hadn't i heard of these before? I was missing crackers, and I tried the Blue Diamond Nut Thins, but it made me nervous to see "processed in a facility that manufactures wheat" on the box...and they have traces of dairy as well. I tried the Mary's Gone Crackers original and they are SO GOOD. Better than the Nut Thins, and I like that they were created... -
ARCHIVED Couple Of Questions, Lol More Like A Few Maybe
samcarter replied to LandonL's topic in Coping with Celiac Disease
I have no problems with corn on the cob (a seasonal treat), or corn tortillas. I try not to buy processed corn chips, but buy corn tortillas and bake them to make my own "chips". I think they give me fewer issues than, say, Fritos. But popcorn....ugh. I used to love popcorn, and be able to hunker down with a nice big bowl of it, but lately it hasn't... -
ARCHIVED Increased Sensitivity To Gluten
samcarter replied to mikehall117's topic in Coping with Celiac Disease
I think what happens is that while we're still eating gluten, the problems are our "normal". I know I thought everybody else had pain when they used the bathroom, or felt incredibly lethargic by 5 pm, and had no motivation to be active. once I went off gluten, I felt so different! Then when I get glutened, what used to be my "normal" is now obviously... -
I agree with ang, red 40 dye was a HUGE thing for my kids. When they do get food coloring (thanks Dad for buying the Froot Loops) I see a big change in their behavior. People like to blame sugar, but i think the dyes in candy are a bigger culprit. Perhaps just eating gluten free at home, if the gluten is affecting her behavior, will help, if gluten...

ARCHIVED +biopsy/-labwork
samcarter replied to rma94's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
It is entirely possible to have damaged villi and still have a blood test come back negative for celiac; that is why the biopsy is still considered the "gold standard" for a diagnosis. Up to 20 percent of celiacs can have negative EMA, for instance; they're called "seronegative" celiacs. My doctor would only do the EMA test, saying it was the most sensitive... -
ARCHIVED Tired/fuzzy/ Swollen/bloated But No Stomach Distress?
samcarter replied to yumyummum's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Yep, i have those symptoms. My EMA test came back negative, but I am not fussed about needing an "Official" diagnosis. I tell people now that I have celiac disease, because honestly, they take it more seriously than "gluten intolerance" or "wheat allergy". For some reason. If i get glutened, I get exhausted. It's not the typical "I'm tired because... -
My honest opinion is that you shouldn't ask your five year old daughter to be gluten free away from home. Certainly she can be made to understand that for safety's sake, your own kitchen needs to be gluten free. You can explain that her brother has a serious illness that means regular bread, pasta, and other gluteny foods can make him very sick. And because...

ARCHIVED Gluten Oops...how Soon Will Symptoms Onset?
samcarter replied to Tim86's topic in Coping with Celiac Disease
I get neurological symptoms about an hour or two afterwards, sometimes sooner. I get "hot flashes", dizzy, and very, very sleepy. Headachey, too. The digestive stuff doesn't kick in until the next morning, usually. And it takes a day or two. This is with amounts like you would find in Pringles (wheat starch) or things like that. I can't remember exactly... -
ARCHIVED Anyone Here Allergic To Cats?
samcarter replied to Armae's topic in Introduce Yourself / Share Stuff
I'm severely allergic to cats. Didn't know it until I ended up in the hospital with an anaphylactic reaction--the doctor said living with two cats (one who was longhaired) for so long had just made my body "overflow" with allergens. Anyway, we have two cats--kind of by accident, one was the kitten of a cat we owned a while back, and the other one... -
ARCHIVED Celiac And Horrible Food Cravings
samcarter replied to prayin4achange's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Oh, yep. I suspect I've had issues with gluten all my life, because I developed a compulsive eating disorder as a child, which developed into bulimia later on. I would eat a meal, and then an hour later want more food. Now I can eat a meal--say scrambled eggs and fruit--and be fine. No cravings. Or at least, not when I'm not PMSing. You'll... -
ARCHIVED Aaah Just Want To Complain
samcarter replied to raisin's topic in Coping with Celiac Disease
I second this. I was drinking coffee, but i couldn't drink it without cream, and it turns out I'm sensitive to dairy. I found a wonderful black tea--Morning Thunder, by Celestial Seasonings--that has mate. Yerba mate can give you the same energy lift as coffee, but without the crash later. It's got a smoky, earthy flavor to it as well, so it is a little... -
ARCHIVED New Reactions To Dairy
samcarter replied to samcarter's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
ang, which teas were causing you muscle problems? I drink Morning Thunder (Celestial Seasonings), Sleepytime, sometimes Peppermint and Green Tea. I have been having back and shoulder pain, but that is most likely from picking up my huge 2 year old! -
ARCHIVED New Reactions To Dairy
samcarter replied to samcarter's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Probably not the smartest thing I've done, but I tested myself twice this week with a dairy challenge. The first was with some regular cheese (melted) on homemade corn tortilla chips. I definitely felt nauseated almost immediately after eating; the next morning woke up with a sinus headache, nasal discharge plus post-nasal drip, and I've noticed more muscle... -
ARCHIVED Betty Crocker New gluten-free Line
samcarter replied to Tica's topic in Gluten-Free Recipes & Cooking Tips
Oh WOW! Just in time for my birthday! We have a rule in our house that nobody bakes their own birthday cake (My husband made this rule after he found out that as a kid, i was told to bake my own cake once I was old enough. He thought that incredibly sad.) This last year, he got me an ice cream cake but it still had little "crunchies" in it. He would love... -
ARCHIVED Newly Diagnosed And A Little Overwhelmed

One thing I have found very helpful: we shop at Kroger a lot, and often buy the store brands. If I have the UPC of the product, I can call Kroger, give them my zip codea and the UPC and they will tell me if that product has gluten in it or not. While they can't tell me what the "spices" or "seasonings" are, because those are often proprietary, they can tell... -
ARCHIVED Gone Gluten-free, Seeking Testing
samcarter replied to Ilovetokillspammers's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I'm in a similar situation, but have decided to forego further testing. I suspected gluten was a problem for me after reading up on celiac disease and putting the pieces of the puzzle--my digestive issues, histories of RA and colon cancer in the family, psorasis, lethargy--together. My GP did the EMA test, which came back negative. However, I had felt so... -
ARCHIVED Corn Chex Is Now gluten-free!
samcarter replied to cruelshoes's topic in Gluten-Free Foods, Products, Shopping & Medications
YAY! I have been using Rice Chex for a while now--I don't eat cereal for breakfast, but I do make "chex mix" with the Rice Chex alone for a snack. Now i can mix it with Corn Chex for variety, and get the Honey Nut for a snack as well. Yay for General Mills! They were smart to do this. As DH pointed out, they have probably gained customers, celiacs who... -
ARCHIVED Cooked (baked) Ham
samcarter replied to jkmunchkin's topic in Gluten-Free Foods, Products, Shopping & Medications
Isn't that exciting when you see "gluten free" on a product that isn't from a special gluten free company? I was thrilled when I was informed Argo corn starch says "gluten free" on the package. And my baking powder as well. We are going to my MIL's for Easter, and DH told her we would bring the ham. He likes to bring the ham, or turkey or whatever main... -

ARCHIVED Substituting Cornstarch For Flour
samcarter replied to samcarter's topic in Gluten-Free Recipes & Cooking Tips
Here's what I made today, and it was delicious. You need nutritional yeast flakes, found in the health food store. NOT brewer's yeast. 1/4 cup nutritional yeast flakes 2 T cornstarch 1/2 tsp salt (can add more if you want) 1/4 tsp garlic powder 1 cup water 2 T margarine (I used butter, butter doesn't bother me the way cheese and milk do... -
ARCHIVED Substituting Cornstarch For Flour

Oh, thank you! D'oh, i could have just looked on the carton. I even have Argo. Thanks so much. Now I can have chips and queso for lunch. -
ARCHIVED Substituting Cornstarch For Flour
samcarter posted a topic in Gluten-Free Recipes & Cooking Tips
I want to make a vegan "cheese" sauce that I've made for years...but it calls for flour. Can cornstarch be substituted 1:1 for flour in a sauce, if it's just for thickening? I am missing queso sauce so much! -
ARCHIVED Go Gluten Free Without Formal Testing?
samcarter replied to Feyliza's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I am gluten free even though my EMA came back negative. (Doctor wouldn't do the full celiac panel.) I had such a positive response to the dietary change, that my husband refers to me as having celiac disease. In his mind, there's no need for me to have a "formal" diagnosis, when he's seen the result first hand. When I do get glutened, I get dizzy, lethargic... -
ARCHIVED New Reactions To Dairy
samcarter replied to samcarter's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Uh oh. That makes me leery that my mild allergies to bananas, apples and green beans will flare up. I did notice last summer, when I was gardening, that I'd get hives just brushing against the green bean plants. Eating the cooked beans was no problem. But I started sending my 8 year old out to harvest the green beans.
