Yes, I would say my irritability definitely went down after I got off gluten. When I am glutened--or, for that matter, eat too much dairy---I get irritated and angry much too easily for my liking. -

Yes, this has happened. I still get hungry, and the hunger feels more real, but I am definitely snacking less because i'm having fewer cravings. Remember, those with celiac disease have poor absorption of nutrients, and the body's natural reaction to that is to try to get you to eat more, to get those nutrients! It's a vicious cycle. It's supposed to be chewy, that's characteristic of manioc (tapioca) flour. I made rolls on Saturday and made sure they were completely cooled before putting them in a bag. I have noticed my periods are worse when I've been eating dairy. If I am strict and eat no dairy for at least two weeks prior to my period (and I mean NO dairy, no casein or lactose), my periods are practically cramp-free and I have much less lethargy and PMS. However, dairy turns me into the Wicked Witch of the North. Yikes. -

It gets easier. What made it easier for me was at first just focusing on foods that are naturally gluten free. I didn't worry too much about bread. We avoided eating out at restaurants where they offer a breadbasket, because for a while I was really craving bread!
