  1. So, I've been gluten free for about nine months, barring some slip ups here and there. Now it seems that dairy gives me the following reactions: --instant nausea --brain fog --headache --digestive issues the next day (C or D, depending) I'm not surprised; as a kid I was a huge cheese addict and was constipated all the time and threw up a lot. But...
  2. Once I had a lovely bowl of Corn Pops, without thoroughly reading the label. It didn't say "contains wheat", so I had some, then felt bad, read the label again and saw "barley malt" on the label. The same thing happened with a Clif bar; i didn't see wheat on the label; read it again after feeling gross and it said Barley. So I'm fairly sure it is a...
  3. I'm one of those individuals who realized gluten was a problem on their own. I stumbled across a blog about celiac disease, and realized I'd had some of those symptoms all throughout my childhood. I eliminated gluten for a week, and was amazed at how my energy level went up, my digestive issues calmed down, and in general I just felt better. My psoriasis...
  4. Yep, I was a vegetarian from age 14 until I was 25, when I became a vegan. Had three kids, the third was born with a severe carnitine deficiency, which was mirrored in my body. Carnitine is a substance that is in meat and one or two vegetables (like avocadoes), but the highest levels are in red meats. You can synthesize it from lysine, which is in chicken...
  5. It is perfectly normal to grieve for your "old" life--the one in which you ate without thinking much about what was in your food. Trust me, I grieved for a long time, and I even had a very supportive husband and kids on board with me. Your doc probably wants you to avoid dairy for a while because often, celiac disease can cause secondary lactose intolerance...
  6. In the morning, I drink Celestial Seasoning's Morning Thunder tea. I was drinking coffee, but got tired of making it. Tea is easier to make. Rest of the time I drink water. Evenings, I like Sleepytime Tea, or Peppermint Tea. On special occasions I like to get Virgil's Natural Cola--caffeine free and gluten free. Their root beer is great too. ...
  7. I asked my GP to do a celiac blood test on me--he wouldn't do the full panel, but did the EMA, which came back negative. So obviously he wasn't going to be open to the idea of doing a biopsy on me. He was very dismissive about my suspicions that gluten was causing me problems. I had a very positive response to a gluten free diet, and as far as my husband...
  8. Well, I won't be popular, but as the gluten-intolerant person in our household, I would never make my family eat gluten-free in my presence. Leaving out the fact that eating gluten free can become expensive (if you try to duplicate a gluten-filled diet with substitutes), I think it can create resentment on the part of the non-celiac familiy members. If...
  9. We were at my mother-in-law's house; she made the brownies for the kids. I don't expect her to have gluten-free things on hand for me, so I brought my own food. At home I don't make non-gluten-free things, my husband buys cookies or such if he and the kids want them.
  10. It gets worse. Sorry to break it to you. I have been gluten-free only a month, and right now am feeling horrid--headache, nausea--from getting glutened with, I suspect, a leftover energy bar my kid handed me while we were in the car on Monday. I was distracted by driving and ate it without thinking. D'OH! It wasn't even wheat-based, but oat-based, and...
  11. I've been doing really well with the gluten-free diet so far. Feeling so much better than in the past, and my psoriasis is GONE without using medication every day. Then on Monday, without thinking, I ate a crumb of brownie off my finger after handing one to my toddler. A headache came on very soon after that, but I don't know if it was the heat (we...
  12. I have a blended kitchen, and am still figuring out systems. One tip that has helped me a lot: If i'm making two versions of something, one glutenous and gluten-free, i make the gluten-free version first, and then the non-gluten-free version. That way I'm not cleaning everything, every cooking utensil, et cetera, in the middle of the process. I...
  13. Well, in my experience, a "rolling eyes" smiley added to a song that tells women if they brag about their husbands they're stupid...doesn't equate humor. It equates, "Stop talking about it already." Which is fine with me.
  14. What a nice, rude answer! Are you suggesting that somebody will somehow track down my unnamed husband and steal him from me because I've anonymously posted about his supportive nature? I'm sorry if something similar has happened to you. If you're bothered by posts by people who are not complaining about the lack of support in their family, I suggest...
  15. Shay, my husband does the shopping for several reasons: 1) I hate going to the store with three kids, it's nearly impossible to keep my mind on finding bargains and the kids. 2) It saves gas if he stops on his way home from work, rather than me going out during the day or after he gets home. 3) He's just better at it; spends way less money than me and doesn...
  16. MrsJohnnyG- PLEASE do not beat yourself up over this. You had no idea that celiac could be a possibility, and if you were already eating a standard American diet, then one carrot cake wasn't going to be the trigger or the cause of your miscarriage. I have never had a miscarriage, but I have had friends who have, and you can't go around blaming yourself...
  17. My husband went to the grocery last night with a list from me--all just basic stuff we needed, nothing special. I had stuff like rice, lentils, fruit, and I don't usually ask him to get specialty gluten free products, because I don't want to give him extra things to think about while he's looking for bargains. He brought home an Amy's Rice crust pizza...
  18. Oops, I forgot--the recipe also had 2 T honey (optional). I prefer maple syrup, and I used that. You could also leave it out if you wanted to...but why?
  19. Yes, food is definitely more satisying now that I'm off gluten. I had a compulsive eating disorder all my life--from childhood on (even ate dirt as a kid, not just once, but many times). I would always binge on the carbs, eat a carb heavy dinner and still be looking around for food. I was never super thin, but I never got heavily overweight, either. ...
  20. Susan, if you had celiac as a baby then you definitely have celiac disease. Nobody outgrows it, but that is a commonly held belief that would have been around when you were growing up. Your osteoporosis is a sign of nutritional malabsorption, and yes, other autoimmune diseases can be a result of untreated celiac disease.
  21. I was making cornbread muffins the other day and had leftover batter--so I decided to see if I could cook them like pancakes. I melted a little butter on med-low heat and cooked small dollops. They came out SO GOOD, very light and fluffy with crispy edges. I will probably use the griddle next time and omit frying in butter, though. Here is the cornbread...
  22. Every week my family and I go to a wonderful restaurant that serves piping hot, delicious sourdough bread at the table. I used to dive into that basket like I was starving. (I usually was--we walk to the restaurant and it's about 1/2 mile or more). I manage to not eat any while buttering some for my kids, by remembering how awful I feel when I eat...
  23. This is how it is in our house. I just recently went gluten free, and I knew going into it that I wouldn't expect our budget to expand to include all five members on gluten free foods. I will probably lose weight just because i'm not eating the kids' scraps left over from breakfast, lunch and dinner! I'm no longer tempted by grilled cheese crusts, or their...
  24. I would think work would be the hardest place to be gluten free. People look to food as a way of taking a break, of getting together. Back when I was in the working world, food was always in the break room: "Hey! Jeri brought doughnuts!" and if you didn't eat any, "What, are you on a diet?" (Implication: You're making us feel like gluttonous pigs!) At work...
  25. gfwarrior, I am the only gluten free person in our household, and I do the cooking and baking for my family. As mentioned, the easiest way to avoid cross contamination is to prepre the gluten-free food first, then the glutenous food. That way, you don't have to wipe off everything and clean it before preparing the gluten-free food. Danna Korn's...
