ARCHIVED Highly Sensitive People
climbmtwhitney replied to Gentleheart's topic in Gluten-Free Foods, Products, Shopping & Medications
Hi. We are GFCFSF and live on Pamela's Wheat Free (GFCFSF) Bread Mix. We also like Pamela's frosting & cake mixes. No problems. Ever. We are disappointed that their Pancake Mix isn't CF as well. Jill -
ARCHIVED Ian's Chicken Nuggets Are Gross. Any Suggestions?
climbmtwhitney replied to hadabaday2day's topic in Gluten-Free Foods, Products, Shopping & Medications
Alia, We love Bell & Evans. We get them at Whole Foods. They're delicious! And, I too, have a chicken nugget connoisseur at home. They come in tenders and nuggets, just be sure to get the BLACK box. The blue box isn't gluten free. They bake 28 minutes because the chicken isn't pre-cooked. Also, the chicken is raised w/o antibiotics. Plus they're casein... -
ARCHIVED Awesome! Gfcfsf Cream Substitute For Cooking!
climbmtwhitney posted a topic in Coping with Celiac Disease
Hi and Happy New Year! I have to share.......I found a gluten-free, casein-free AND soy-free cream substitute. It's Mimiccreme. It has no saturated fat or trans fat either. It's made from water, almonds, cashews and rice starch. Sounds weird, but I tried it and LOVE it. It looks and tastes like cream. I made beef stroganoff yesterday and sub'd the... -
ARCHIVED For Dq1 And Dq3 (have Both Genes) - What Foods Are You Certain Bother You?
climbmtwhitney replied to ShayFL's topic in Food Intolerance & Leaky Gut
Hi Shay, My daughter and I are DQ1 (sub 5), DQ3 (sub 7). We also have the alpha portion of DQ2 (Celiac gene). Other than gluten here's our intolerances: Me Dairy, soy, cranberries Dx. Plus I know corn & peas too. I'm still trying to figure what the heck else. I'm SO sensitive -- debating the Specific Carb Diet. Of all my intolerances, soy hits... -
Wow! Super idea! I would happily sign the letter. My whole family, my sister's family and my mom all tested thru Enterolab in addition to blood tests & biopsies for some. Thanks to everyone who put the letter together. --Sonya

ARCHIVED Gluten By Meat? Is This Possible?
climbmtwhitney posted a topic in Gluten-Free Foods, Products, Shopping & Medications
Hi. Oh crap. I've been reading several posts today eluding to the fact that meat from animals fed corn or wheat may actually be contaminated with the corn or wheat. Can you get glutened by beef or chicken? I try to buy organic, grass fed meats, but I'm definitely not diligent about it. Does the same go for things like turkey bacon, hot dogs and sausages... -
ARCHIVED 5 Yr Old Gluten Intolerant/celiac & Possible Type 1 Diabetes
climbmtwhitney replied to climbmtwhitney's topic in Related Issues & Disorders
Hi Laura, We will get the results on Tuesday. I'm not sure if the doctor also tested the genes. Which ones are associated? I couldn't find an easy explanation online. We have tested him genetically for Celiac and gluten intolerance, so we do have some gene results. And I read that Celiac and Type 1 diabetes genes are on the same chromosome, but that... -

ARCHIVED Cheetos - Ugh, Anyone Else Have A Problem With These?
climbmtwhitney replied to 3groovygirls's topic in Parents, Friends and Loved Ones of Celiacs
Hi. Can't be sure (we never can, huh?), but Frito-lay Fritos, and potato chips had to go. I believe myself and daughter were getting sick from them. Then again maybe I just ate too many. Ha! Seriously, though, we replaced them with Kettle Brand chips and won't eat any Frito-lay products anymore. It's so frustrating that we never know these things with... -
ARCHIVED Confused About Celiac And Increased Sensitivity To Gluten
climbmtwhitney replied to missuswayne's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I'm pretty sure I read a post a few weeks ago about Starbuck's Pumpkin Spice Lattes CONTAINING gluten. Try a search here and see what you find. Hope you're feeling better today! Sonya -
ARCHIVED 5 Yr Old Gluten Intolerant/celiac & Possible Type 1 Diabetes
climbmtwhitney posted a topic in Related Issues & Disorders
Hi. We've had a really rough week. I took my 5 year old gluten-intolerant son to the ER at 4 am Sunday morning because he woke up, yet again, slightly out of it, crying and nauseous. I took his blood sugar for the first time and got a 299 (way too high). So, I called the ped advice line and they said to take him in. Before we even left he began throwing... -
ARCHIVED Confused About Celiac And Increased Sensitivity To Gluten
climbmtwhitney replied to missuswayne's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Hi. Are you using the same toaster? Same old spatulas, wooden spoons, cutting boards, old scratched plastic measuring cups? Or the same scratched pans? Are you sharing the same margarine tub, same jelly, same PB, etc? Cross-contamination is a big issue. And, it is very difficult to use separate everything in gluten / gluten-free kitchen. I've found that... -
ARCHIVED Five Year Old Celiac
climbmtwhitney replied to Julia's mom's topic in Parents, Friends and Loved Ones of Celiacs
Hello. Another idea.....Have you noticed a pattern with soy or corn? Many of the gluten free/casein free breads contain them. Also, if you're eating pizza, are you using a soy cheese? I, myself a Celiac, am in horrible pain from soy in any amount. (And, I think corn is about to go too.) And, my 10 yr old daughter, also Celiac, gets horrible stomach pain... -
ARCHIVED Multi-purpose Flour?
climbmtwhitney replied to katdw's topic in Gluten-Free Recipes & Cooking Tips
We absolutely LOVE Pamela's "Wheat - Free Bread Mix". (Don't know why they call it "wheat-free" since it says elsewhere on the pkg that it's gluten-free and dairy free too.) It's a mix that you add eggs, oil, yeast (provided) and water to. It's awesome baked fresh or kept in the fridge for a few days. Often I make 2 loaves and freeze 1 for later. What... -
ARCHIVED Gene Test - Which Lab To Use?
climbmtwhitney replied to syren4444's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Hi. I used both Enterolab and Kimball and I have BlueCross PPO. I ordered the "Gluten Sensitivity Stool and Gene Panel Complete" from Enterolab for $369. Of that, BlueCross paid $271 with no issues for all 5 of us. I also ordered the Kimbal test because I was looking for the Celiac gene on the alpha chain when Enterolab's tests only turned up 2 gluten... -
ARCHIVED Halloween Candy
climbmtwhitney replied to Anniegirl's topic in Gluten-Free Foods, Products, Shopping & Medications
Hi. From what I know it goes like this....Starbursts, Skittles, Nerds, Runts, & Laffy Taffy's are gluten-free. Lifesaver Gummies are gluten-free. Not sure about regular kind. I'm also not sure about 3 Musketeers. My memory says it's not though. Milky Way Midnight (not regular kind) are gluten-free. Some Hershey's minis are gluten-free are and some... -

ARCHIVED Genetics Question
climbmtwhitney replied to leadmeastray88's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Hi. Curious. I keep hearing that they recognize 7 or 8 Celiac genes in Europe. But, I searched and can't find the info. Does anyone have a link to those 7 or 8 genes (one that the average Joe can understand)? Or, can someone list them? I'm curious because 2 of my children and my husband are double DQ1 and have been diagnosed gluten intolerant. And... -
ARCHIVED Sanity Check: Validity Of Enterolab
climbmtwhitney replied to climbmtwhitney's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Hi everyone. Thanks for chiming in. You are all right. I just wish the "traditional" doctors didn't raise an eyebrow when seeing the labs. It's definitely annoying, but in the end it doesn't matter. The diet is the ultimate proof. Sonya -
ARCHIVED Sanity Check: Validity Of Enterolab
climbmtwhitney posted a topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Hi. I need a sanity check. I'm starting to wonder about Enterolab's validity. Myself and ALL of my 3 kids were all diagnosed gluten intolerant (turns out 2 of us are actually Celiac). O.K. fine. But, then my husband tested gluten intolerant with NO symptoms. O.K., now that's weird. A coincidence? Then, my niece tested positive. Each one of us... -
ARCHIVED Frustrated - Help Please
climbmtwhitney replied to Jules's topic in Parents, Friends and Loved Ones of Celiacs
Hi Bonnie, This may be a crazy question, but CAN she eat? She was about 18 months when you put in the G tube, right? I am wondering if eating was painful for her. I ask because I suffer from gastroparesis (paralyzed stomach) occasionally. At my worst I was terribly sick for 9 months and eating hurt. After the smallest amount I would be in pain. I couldn... -
ARCHIVED Gene Results - Questions Re: Dqb1
climbmtwhitney replied to luciddream928's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Hello. My daughter and I both have the same genes as you (Enterolab: Serologic equivalent DQ 1,3) We ALSO carry the more rare Celiac gene on the alpha chain. We found that out through Kimball Genetics. We are both very symptomatic and have been diagnosed as Celiac. I agree with Nora, have your ability to produce IgA antibodies checked because some... -
ARCHIVED Wine
climbmtwhitney replied to noucha's topic in Gluten-Free Foods, Products, Shopping & Medications
I think I was glutened by wine last Thursday at Bunco. On Friday I felt like I was flattened by a truck. (And, no, it wasn't from enjoying my "grapes" a little too much. I couldn't think of anything else it could be. So I got online and did a little research. I also read about French oak barrels being sealed with a flour paste. Sure enough, the wine... -
ARCHIVED Please Help!
climbmtwhitney replied to a topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Hi Jen, I'm so very sorry all this is happening to you. I, too, have a long sorted medical history so I can relate. Definitely no fun, huh? I am a recently diagnosed Celiac, so I'm no expert. Having said that, it sure sounds possible that you have Celiac or gluten intolerance from your symptoms. For your biopsy on Monday....Do some reading... -
Hilarious! Thanks for sharing! #1000. How about when your doctor sits you down and says that "Sometimes we think we have these symptoms. They seem perfectly real to us. But, actually they are all just in our head." Gotta love that one!
