  1. Hi. If you're willing to bake.....we absolutely LOVE Pamela's gluten-free Bread mix. Super easy. It's comparable to a fairly hearty whole grain bread from gluten days. It's super yummy as is - no toaster required. I, too, bake 2 loaves at a time and freeze one. Then in a pinch I just take the frozen loaf out of the freezer and let it defrost on the counter...
  2. Hi. Something to consider....My 6 year old son (gluten-free, casein-free) is also free of all artificial food dye and sodium benzoate preservative. If he eats anything containing these, he's literally jumping from the sofa to the chair over and OVER again within hours. He's gets super hyper. He also gets mouthy, emotional, angry, and won't listen. Sans...
  3. THANK YOU!!! for the heads up! It was actually on my counter to make for dinner tonight. Weird sort of fate. I thought we'd try something new. We are super sensitive so I'm not taking any chances. Jillian
  4. Possibly. I know that doesn't help much. Sorry. Early on in the diet last year someone gave us them for my daughter & I to enjoy. We both had a bad reaction 1/2 a day later, but it could have been something else since we were newbies. However, having said that, I've never felt comfortable buying them again. Jillian
  5. Yes!!!!!!!!!!!!!!!! I swell mainly in the legs--the whole leg--and sometimes in the hands--enough to make my rings a bit tight when they normally spin around. I actually won't get my rings tightened because I don't want them to hurt when I swell. It started about 12 years ago while on vacation in Mexico. My legs were so swollen one day that they were...
  6. Hello. I think there's some confusion as to what gastroparesis is. It is more accurately described as affecting the *stomach*. It is not a cause of constipation like you describe about your husband. The definition/symptoms from the Mayo Clinic are..... ------- Definition By Mayo Clinic staff Gastroparesis is a condition in which the muscles in your...
  7. BritChick, I'm so VERY sorry you're suffering so much! I, too, had (hopefully not "have") gastroparesis. My gastric emptying test showed that it took just under 9 hours to digest a hard boiled egg. At it's worst 4 years ago I lived on mashed potatoes for 9 months. That seemed to be the one food I did the best with. Then the GP mysteriously disappeared...
  8. If you live in the Bay Area, CA..... Draeger's carries Udi's. I just brought home the lemon streusel muffins yesterday. YUMMY! SUPER DUPER YUMMY! My daughter and & ate all 4 already. Darn. One interesting thing I noted is that they contain sunflower lecithin. That's the first time I've seen that. Seems it's always soy lecithin. I'm thrilled...
  9. Meggie, I got tears in my eyes reading your story. It is painfully similar to my own. I really feel for you. There are numerous doctors who would say a borderline positive blood test given your symptoms and given your positive response to the diet IS a diagnosis. For what it's worth, I agree with your nutritionist. Even if you do the biopsy...
  10. Kemper3, Have you ever checked your adrenals? Adrenal fatigue or the more extreme adrenal exhaustion have a link to Celiac. I, myself, suffered from complete adrenal exhaustion a couple of years before diagnosis. During that time of napping 3 hours a day my anxiety was through the roof. It was only after my adrenals were balanced with cortisol and...
  11. Hi. It's processed with a barley enzyme. Rice Dream claims that their end product tests gluten-free, but personally, my daughter and I got extremely sick from it. I had unknowningly made french toast with it. We are sensitive folks though, so it may not affect everyone. Personally, I will never use their products again. Jillian
  12. Crimsontopper, Have you ever considered the dairy in the Cheetos? Lots of folks here also have trouble with either the lactose in dairy (the milk sugar) or the casein in dairy (the milk protein). It can cause the symptoms you described. We only found out about our casein intolerances AFTER we went gluten free. Just a thought. Hope you're feeling better...
  13. Hi Jillian, I, too, think it sounds like withdrawal. Both my daughter & I went through it. Initially, we both felt wonderful--about 5 days for my daughter and about 10 for me. But, then we felt just awful! It felt like the flu with extreme fatigue, body aches, nausea, headaches, etc. I remember posting here too, trying to figure out what was up. I...
  14. I'm so sorry you're feeling so awful! I get that way from soy, so I'm 101% soy free now too. Someone here suggested to me to mix about 1 or 2 teaspoons of baking soda in a glass of water and drink it down. It definitely helps. It's not great tasting, but cold water and drinking it fast in 1 or 2 turns helps. Then wash it down with some fresh water. Sometimes...
  15. Hi. We did GREAT in Disneyland in March--also our 1st trip. We made reservations and ate at the sit down places. They noted GFCFSF on all our reservations thru Disney dining. When we got to the restaurants I reminded our server and asked to speak with the chef. The chef came out at EVERY restaurant and together we figured out what we could eat. It was...
  16. Hi. That's great news! Good for you! :) I've been off Wellbutrin since October (after going gluten-free in August) & feel just super without it. I'm not feeling any need to go back on meds and feel SO much more relaxed too. Little things just roll off my back which is great. Like the other poster I started needing antidepressants after...
  17. THANK YOU!!! Appreciate the feedback! We booked Disney sailing in June. Fingers crossed. We just came back from Disneyland 2 weeks ago & did great. I only got sick 1x (from soy I think). My kids felt great the whole time, so that's a success in my book! Jillian
  18. Hi Cooking Mama, Couple of thoughts.....my son (5 yrs) does this. He is also Gluten-free Casein-free. It was really bad last fall/winter. It usually happened in the early am, like 3 to 5 am. No fever ever. It was so bad at one point that we began testing his blood sugar. Then after a very scary blood sugar reading (very high) he was admitted to the children...
  19. Hi all, I need advise. We want to take a cruise in June. We need to be gluten-free as well as casein & soy free. I saw lots of posts about gluten-free cruising, but couldn't find much about multiple intolerances. I wrote to a few cruise lines (Carnival and NCL I think) and came up empty. Basically, they said they could do gluten-free, but couldn...
  20. Hi Foodiegurl, Yes, I was a vegetarian for 15 years! I had to give it up because I needed protein. I'm GFCFSF as well as legume free. It was (still is) VERY hard. When I first became a vegetarian I went cold turkey (excuse the pun!). My last meaty meal was at a friends wedding. Somewhere during the gazillion courses of the meal, a bird was served. And...
  21. Nancy, If 90 & above is positive and she had 90, then I would say she is Celiac. Many doctors diagnose based on blood alone without a biopsy. However, if you're going to run into resistance with your ex, then I would definitely get the biopsy. Please know though that she has to be eating gluten to have any chance of accurate results. Also, even if...
  22. Hi. We used Chocolate Emporium for Valentine's Day and it was good. So, I ordered again for Easter. Most of their items are Gluten-free Casein-free. And, some are SF & NF. Here's their statement about gluten: "Gluten: Our gluten-containing items are produced on dedicated equipment, virtually eliminating any chance of cross-contamination of...
  23. Hi Lk's Mommy, I'm so sorry you son is struggling so much. It IS possible that gluten is causing your son's constipation and dependence on Miralax. So, here's my disclaimer.....I am NOT saying that it IS causing it, only that is possible. My daughter, 10, sounds similar to your son. As a baby, she frequently had "blowouts". Messy, messy! She also...
  24. Korinne, I'm definitely NOT an expert here, but this is a thought. My niece was tested for Celiac because it runs in our family and she's having difficulty too. Among her symptoms are painful bm's and blood in the toilet also. My sister took her to a pediatric gastro and the doctor's first thought was Chron's or ulcerative colitis, not Celiac. She said...
  25. SilverSlipper, I'm sorry your daughter was having such a hard time. I do hope she's feeling better now. Yes, in my experience, this can be a gluten reaction. My daughter, 10, has also had a disoriented, confused reaction to gluten. It can be very worrisome for mom, huh? In my daughter's case she had been Gluten-free Casein-free for about 2 1/2 months...
