				ARCHIVED Milk Help
Mother of Jibril replied to jmeds77's topic in Parents, Friends and Loved Ones of Celiacs
I have read that ghee is considered casein free, but... IMO, there's a strong possibility of cross-contamination. Whether you can use it or not depends on how sensitive you are. -

				ARCHIVED Understanding Genetic Associations
Mother of Jibril replied to gfb1's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
If you stick around on this forum and do some reading, you'll find that a lot of people here are actually VERY concerned about the reliability of genetic testing, which genes are considered (or not considered) the "celiac genes," how these genes are triggered, the relationships between celiac and other autoimmune disorders, etc... What is your interest... -

				ARCHIVED Casein Symptoms
Mother of Jibril replied to luciddream928's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Hi Rachel, Dark chocolate often does have trace amounts of casein because it's processed in the same facilities as milk chocolate. My son (turning a year old this month) is very sensitive to casein... it gives him eczema on his face, diarrhea and/or constipation, and if he keeps getting contaminated... more dramatic symptoms like vomiting. Before we... -

ARCHIVED ? Opiniions From Other Parents ? Celiac In 4 Year Old
Mother of Jibril replied to kimntaylor's topic in Parents, Friends and Loved Ones of Celiacs
Welcome to the group! You don't need to have a positive result on all the tests to have celiac disease... in fact, false negatives are pretty common in small children. Which test was she positive on? Some are more specific for celiac disease than others. IMO, the bottom line is that your daughter has some kind of sensitivity to gluten. Maybe it's... -

				ARCHIVED Milk Help
Mother of Jibril replied to jmeds77's topic in Parents, Friends and Loved Ones of Celiacs
Sugarsue gave you a great definition, but I just wanted to add a couple of things... Lactose is the sugar in milk. Lactose intolerance is very common. People with celiac disease can have temporary lactose intolerance because the tips of the villi are where lactase (the enzyme to digest lactose) is made. Sometimes you can get around this by drinking... -

ARCHIVED Does Xantham Gum Suggest Gluten-free?
Mother of Jibril replied to misseditbythatmuch's topic in Gluten-Free Foods, Products, Shopping & Medications
Xantham gum is a food additive (a polysaccharide) "produced by a bacterium that is fed corn to grow." Here's what Wikipedia has to say about it: Open Original Shared Link It's often used to hold baked goods together in the absence of gluten, but there's no gluten in the xantham gum itself. It can be used in any kind of product, gluten-free or not. -

ARCHIVED Friend's Husband Has Wheat Allergy.
Mother of Jibril replied to Roda's topic in Parents, Friends and Loved Ones of Celiacs
I have problems with corn. I thought it was just an intolerance, but I'm becoming suspicious that's it a true allergy... I have an appointment with an allergist on Thursday. The problem with corn is that it's in EVERYTHING. IMO, it's a lot more difficult to cut out of your diet than gluten. It's not considered one of the "major allergens" so you have... -

ARCHIVED Lymph Nodes & Gluten Intolerance
Mother of Jibril replied to Christina98's topic in Coping with Celiac Disease
Welcome to the group! I had LOTS of swollen lymph nodes (especially in my neck) as a child. (I also had my tonsils taken out when I was three years old because they were severely inflamed.) It still happens sometimes when I get a cold. This kind of swelling is not uncommon. As long as the lymph nodes are "reactive," meaning that the swelling goes... -

				ARCHIVED Question About Gene Results
Mother of Jibril replied to MLB's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
My understanding is that for people who don't have DQ2 or DQ8, DQ7.5 puts you at the highest risk for celiac disease... and you have two copies of DQ7. Take a look at the Wikipedia DQ7 page: Open Original Shared Link You might be able to guess (based on the related disorders) what kind of DQ7(s) run in your family. 7.3 and 7.5 are the most common... -

				ARCHIVED Magnesium Recommendation
Mother of Jibril replied to CMCM's topic in Gluten-Free Foods, Products, Shopping & Medications
I've been taking Nature's Way calcium/magnesium gel caps. You could probably open the caps and stir the powder into your food. -

				ARCHIVED No More Nightshades
Mother of Jibril replied to mushroom's topic in Gluten-Free Recipes & Cooking Tips
Oh right... I forgot that you're in New Zealand! Mustard greens are easy to find where I live because they're a traditional part of African-American food. They're just a really sharp-tasting green. Too sharp to eat raw. A good way to kick the sesame flavor up a notch is to add some toasted sesame seeds just before serving -

				ARCHIVED No More Nightshades
Mother of Jibril replied to mushroom's topic in Gluten-Free Recipes & Cooking Tips
It's really easy to get stuck in a rut with vegetables... potatoes, carrots, tomatoes, broccoli... Why not try some of the more unusual and/or flavorful ones? - Parsnips - Rutabaga - Sweet potatoes (root vegetables are very nice roasted or in a stew) - Brussel sprouts (try roasting them with balsamic vinegar or maple syrup) - Kale - Spinach... -

				ARCHIVED Acute Allergic Reaction
Mother of Jibril replied to Mother of Jibril's topic in Coping with Celiac Disease
That is really strange... maybe you can have a little bit of corn, but too much will set you off? In my son's case, just getting one piece of popcorn in his mouth (which I fished out before he could swallow it... he only eleven months old) was enough to set off his eczema again. One stinkin' piece! -

				ARCHIVED Acute Allergic Reaction
Mother of Jibril replied to Mother of Jibril's topic in Coping with Celiac Disease
I just started a food diary on Tuesday... what timing! So here's what I had... 2/3: Silk soy yogurt (plain flavor) with sliced almonds, unsweetened coconut, banana, and pure maple syrup; omelet with bell pepper and fresh parsley; avocado; Endangered Species chocolate; walnuts; soup with carrots, parsnips, Westbrae canned organic chili beans (no... -

				ARCHIVED Another Symptoms Question?
Mother of Jibril replied to EmilyRD's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
The gluten-free diet can be expensive if you buy a lot of the special substitutes (rice pasta, gluten-free cookies, gluten-free bread, etc...). I do a lot of cooking from scratch. I also figured out that I'm sensitive to corn, which is in EVERYTHING. Simple foods like meat, vegetables, fruit, nuts, seeds, etc... are a lot easier to control when it comes... -

				ARCHIVED Acute Allergic Reaction
Mother of Jibril replied to Mother of Jibril's topic in Coping with Celiac Disease
Definitely! I have learned my lesson I just called The Republic of Tea. They said all their teas are gluten-free and the "natural blueberry flavoring" is just blueberries... although I'm still suspicious. For one thing, I love blueberries and I don't seem to be allergic (although I guess you never know). Also... why list "natural blueberry... -

				ARCHIVED Another Symptoms Question?
Mother of Jibril replied to EmilyRD's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Hi Emily, Welcome to the group! I was diagnosed with Hashimoto's at the end of July. I was having ALL the symptoms you mentioned, plus I had lower abdominal pain that was so intense I had to stop whatever I was doing several times a day and comfort myself (it felt a lot like being in labor ). I kept reading about connections between thyroid... -

ARCHIVED I Found My Diagnosis Not My Doctor, And It Bothers Him.
Mother of Jibril replied to I hate gluten's topic in Doctors
My casein-intolerant son has a reaction to both cow's milk and goat's milk Major bummer. -
I've become really paranoid about what I eat Today around 4:00 I had a meeting at a coffee shop, so I ordered hot tea... Republic of Tea, only three ingredients: black tea, natural blueberry flavor, and blueberries. It seemed like a reasonable risk. While I was drinking the tea I started to have a strange feeling. I was lightheaded, my eye started...

ARCHIVED I Found My Diagnosis Not My Doctor, And It Bothers Him.
Mother of Jibril replied to I hate gluten's topic in Doctors
I agree that the doctor is an idiot for trying to give you antidepressants and sleeping pills... classic. Don't listen to the "emotional" female, just give her drugs. However... be careful about ignoring other ideas like lupus. I'm sure that you DO have a gluten problem (an elimination diet is the gold standard of proof), but there are lots of other... -

				ARCHIVED Systoms
Mother of Jibril replied to Missing Bread's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Sorry this won't be much help I make up a lot of my own recipes. My husband is from the Ivory Coast (West Africa) and he taught me how to make a basic "sauce" a long time ago. I also make stir-fried vegetables, soup, omelets, roasted meat and potatoes (delicious with sweet potatoes), coconut milk smoothies... I've picked up a lot of basic techniques... -

ARCHIVED Frustrated With Constant Accidential Dosing With Allergen
Mother of Jibril replied to Stefani's topic in Food Intolerance & Leaky Gut
Personally... I can't eat corn. I can't even eat processed foods with corn derivatives (corn starch, corn syrup, xantham gum, etc...). It makes me gassy and bloated. Eggs are a problem for a fair number of people on this board. Nuts are a "major allergen." The rest of the foods on your list are probably OK, but you never know... my daughter is... -

				ARCHIVED Getting Frustrated With Daughter!
Mother of Jibril replied to Juliebove's topic in Parents, Friends and Loved Ones of Celiacs
My daughter is only three, but she has a VERY strong mind of her own. She's going to make quite the spectacular teenager She eats a lot of different foods, but within the last few months she has started to insist that each one be completely separate... no mixing foods (like soup or pizza with the toppings). I understand... I used to be like that too... -

ARCHIVED Testing For Other Autoimmune Disorders
Mother of Jibril replied to Mother of Jibril's topic in Related Issues & Disorders
That's how I feel about my mom too. She has many wonderful qualities, but health-wise I do NOT want to be like her. There are days when I feel like I could handle trying for another child. I've learned a LOT about pregnancy loss, autoimmune disorders, how to take care of myself... Maybe all the changes I've made... diet, supplements... -

				ARCHIVED Hypothyroidism; High Cholesterol
Mother of Jibril replied to PinkLady's topic in Related Issues & Disorders
To answer your questions... 6.9 is definitely out of range for TSH. Normal is 0.3 to 3.0. If you have anti-thyroid antibodies then you DO have an autoimmune thyroid disorder. Sometimes your TSH can jump around (even swing between hyper and hypo) while your thyroid is being destroyed. IMO, the best thing you could do is to get an appointment with...
