  1. 1 cup gluten-free peanut butter 1 cup sugar 1 egg 1 tsp gluten-free vanilla Mix ingredients, roll into a ball. Roll in sugar. If desired, place Hershey's kiss or other gluten-free chocolate in the middle. Bake at 350 for 9-11 minutes. Taste just great, and absolutely no flour!
  2. I am continually apalled at how long some people were sick before they were diagnosed with celiac disease. I consider myself very lucky; I started having daily diarrhea in May of 2004 and was diagnosed wtih celiac disease in August of 2004. No one ever tried to tell me that I COULDN'T have celiac disease because it was so rare. (I was diagnosed with...
  3. I heard it described this way, when someone insists that a little bit of gluten won't harm you: Ask them if just a little bit of rat poison would harm them?
  4. Yes, I'm careful--separate pots for cooking, separate utensils, separate peanut butter jars, etc. However, I'm not going to switch the whole family to gluten-free just to make things more convenient for me. With gluten-free foods costing so much more, I can't afford it. And I'm not getting "accidentally glutened" all the time, if that's your fear....
  5. No, my whole house is not gluten-free, since I am the only with celiac (so far as we know). I am careful when preparing their foods, though. It gets frustrating to have to wash my hands every time I dole out teddy grahams, or make a PB&J for the older child, but I do it because it's more frustrating to be sick.
  6. Yes, I have noticed that symptoms are more severe when I accidentally ingest gluten, now that I have gone gluten free.
  7. Not to beat a dead horse, but I read over the ingredients list again, and every "food starch" is a safe one (tapioca, corn). It does list CORN gluten as an ingredient, so it's possible that the person answering the phone didn't realize that corn gluten was not on the watch list. Also, each of these dinners lists the common allergens in bold at the end of...
  8. Just rifled through the workplace freezer (people tend to keep tons of frozen dinners in there) and found out that they're distributed by Heinz, they list a phone number of 800-762-0228 if you have questions.
  9. There's a kind of rosemary & garlic frozen potato that I've purchased at Target; it says "gluten free" right on the label.
  10. Oh, don't worry about picking on me, I understand the concern. And I can't find a link to them on a website, either. (I've got some at home in my freezer, but at present I'm at work.) I can tell you that I have eaten the creamy parmesan chicken several times and have had no problems.
  11. They are in the frozen food section, in a red box, and they clearly state allergens. The creamy parmesan lists milk and--something else, but not a gluten.
  12. I've found a couple of Weight Watchers entrees that are gluten-free, creamy parmesan chicken and another--I think it's homestyle chicken with green beans. Always nice to find mainstream gluten-free products.
  13. I could eat baked potato soup?! Oh, that would be lovely! Thanks for posting this.
  14. I work pretty close to quite a few restaurants, but I had some yummy gluten-free spaghetti and meatballs back home that I was going to pack. I don't feel like another "burger--no bun." Any suggestions? (Nearby are Burger King, McDonalds, and Taco Bell--as well as Subway and Blimpie, but I doubt there's anything at the sub shops I could eat.)
  15. I think I may be doing a gluten challenge soon myself. Although I didn't have the horrible stomach aches for years that some of you describe, I did get diarrhea and just felt very tired. I do want to make sure the diagnosis is accurate, though, like the OP said. A question--do they do a colonoscopy/endoscopy, then have you do the gluten challenge,...
  16. I thought I was the same, just a few trips to the bathroom after a gluten experience, no big deal. Then I realized that I was also feeling incredibly TIRED, and it was due to the gluten! It's so nice to have energy again, and to not have to run to the bathroom 3/4 times a day, that I don't ever lapse. I have called few manufacturers, but I have...
  17. She was at 20th percentile at her last appointment (9 months, I think?), and she wasn't in any category of concern before that. She was even big at birth--8 lbs, 11 oz. Now she weighs 17 pounds. We've been keeping her away from gluten because of my diagnosis, although we did recently start her with some Cheerios, and she had cake on her birthday. ...
  18. I wish, I was just thinking how good chicken salad in a pita pocket would be.
  19. I am not sure if this is the right forum, as it is not my kid who has celiac (as far as I know), but me. However, I have some concerns. My daughter is one year old. I was diagnosed as having celiac when she was about 9 months. I have been nursing her since she was born, still am. Today she had her one year phsyical, and her weight is off the charts...
  20. 2004 was a crazy year for my family. First I was diagnosed with celiac, then my mom with hypothyroidism, then my sister wtih hyPERthyroidism. My sister's doctor says that immune diseases can show up in different forms in families. This is fascinating to me. Does anyone else have experience with different autoimmune diseases in your families? I...
  21. Why can't you have peanut butter due to hypothyroid? My mom was just diagnosed wtih this, so I don't know much about it.
  22. The lady on the phone at Hershey's assured me that since wheat is one of the 8 major protein allergens, it would be listed on the label if it were in Hershey's Hugs--which it is not. Something in the labelling was suspect, though. Do any of you know for sure if Hugs are gluten-free? They were one of my favorites, pre-diagnosis. (On a different topic...
  23. I got some pie crust mixes from the Gluten Free panty; they call for using a silpat baking sheet. What on earth is that?
  24. I wasn't impressed with the Trader Joe's I went to recently. I was hoping they would have all their gluten-free stuff grouped together, instead of scattered throughout the store. I wish we had a Whole Foods where I live, but I'll make do with my local grocery store's health market (which is actually pretty good).
  25. Thanks for the heads up! I'm always on the lookout for something quick I can make when I don't want to do a full meal (besides a bowl of cereal).
