I am glad you liked the results from the Better Batter flour. I have used Tom Sawyer and Better Batter now. I have made cakes,brownies, and pancakes out of both. Better Batter made a better cake which was much ligher and not heavy. The brownies were good made from both, and the pancakes suck made from the Better Batter (I have used various recipes). ... -

My friend says since the weekend cutting out the foods she knew to has made a big difference in just a few days. I told her not to get to discouraged with him that he is going to make mistakes at first. I at least helped her with the wheat/gluten free stuff and she can read lables and look for his other allegens from there. Thanks a lot for all the advice... -

Thanks everyone for the help. I gave this information to my friend. She told me she looked over his paper yesterday and she was mistaken that he is not allergic to corn. This makes things a lot easier for him. If anything this is good info for others and who knows, I may experiment myself. I was able to give them some of my Tom Sawyer flour to try, but... -
Tom Sawyer flour does have xanthan gum already in the mix. So when you use it in recipes you can omit the xanthan gum when it calls for it. As for Bob's Red Mill All-Purpose mix, I have no idea what the ingredients are. I have never used it.

I need a good all purpose gluten free blend recipe that is corn free also. I have a friend who's husband is allergic to corn. I have read that xanthan gum is a bacteria that is fed corn. What do you use in place of the xanthan gum? Thanks! -

I just went to that site. I will be sure to share. I am really glad I don't have to deal with the corn problem. It seems a lot more daunting than gluten free. Anyway, I read that xanthan gum is derived from corn. So much for me sharing my gluten free flours. Does anyone have a good all purpose recipe for gluten free flour without xanthan gum? What... -

My friend told me yesterday her husband was told by the allergist that he is allergic to wheat, rye, barley, corn, citrus, egg yolk, melons and anything in the gourd family. I was just wondering if anyone has had intermittent episodes of behavorial issues out of their children before going gluten free? The reason I am asking their allergist/immunologist for the screening tests is because their pediatrician wouldn't. As of right now they are not having any bowel issues that raise a red flag. If any of the tests come back positive we will refer to the necessary specialists. -

I am keeping him eating gluten because I think the allergist may want some other blood tests. I am even going to ask for the dna test. I did not have it before because the insurance will not pay for it. I'm not going to have the dna test for me since it won't change anything. I am the celiac of the family. My oldest son is almost 8 and in second grade. He had the IgA tTG done in Nov. and was 2. I am assuming it was negative. He has not had anything else done. I am a little suspucious of gluten intolerance in him. From birth he had problems with constipation. I didn't think there was such thing as a constipated breastfed...

I think your doctor is right about most things here but I disagree with him about the need for follow-up bloodwork. My gastro has told me that the bloodwork would be helpful. Yes I purchased it on line on their main site. The 25 lb bag was $60.00 plus an additional $5.00 for the shipping and handling. I order the Tom Sawyer flour from their site and got 15 lb for $51.75 ( three 5 lb bags) shipping cost was included in the price. These cookies are a drop cookie and it is more like a batter. I put mine in the fridge overnight and it was much thicker than right after I mixed it up. Since my diagnosis the end of Oct. 2008 I have only used Tom Sawyer. I have been pleased so far for cakes, banana bread and cookies. I have attemped some bread but have not had any luck.
