ARCHIVED Seeing A Child With Symptoms
FreyaUSA replied to FreyaUSA's topic in Parents, Friends and Loved Ones of Celiacs
An interesting update on my mother's cousin. She mentioned that celiac disease is in the family and would like to be tested just to be certain she didn't have that to worry about. Her doctor at the hospital had never heard of it. How can people even hope of getting a correct diagnosis if the doctors have NEVER HEARD OF celiac disease? -
ARCHIVED Green Barley
FreyaUSA replied to flower's topic in Gluten-Free Foods, Products, Shopping & Medications
To aid in regularity, instead of the green barley try taking 2 tablespoons of ground flaxseed a day (one in the a.m., one in the p.m.) Not only does this really help reduce constipation problems, but it will also give you 2400 mgs of omega-3 (among other good things.) Oh, and it tastes really good, too. -
Julie (Imsohungry), I made your chocolate chip cookies yesterday. What flour mix do you use? (I'm one of those people that pick and choose flour now like I once would choose between types of tea! Hmm, what do I feel like using today... ) I used 2/3+1/4 c chickpea flour, 2/3 c soy flour and 2/3 c quinoa flour. I should have thought about the quinoa...

For pie crust, you can find some awesome gluten-free crust recipes. Or, you can just get the Gluten Free Pantry's Piecrust mix, it's great. For Christmas I'm fixing two desserts (besides all the cookies). One is a Hungarian Flourless Hazalnut Cake. Open Original Shared Link The only thing I've had problems with is that it has you mix the nuts into the...

ARCHIVED Seeing A Child With Symptoms
FreyaUSA replied to FreyaUSA's topic in Parents, Friends and Loved Ones of Celiacs
Azedaz...that is so funny! I, actually, feel like that, too, much of the time. The only reason I feel like I need to do something about the little girl is she just looks so pitiful. But, here's an example of "trying" with family...My mother's cousin is in the hospital right now. She went in a couple days ago (she's 76.) They thought she was having mini... -

ARCHIVED Soy Milk
FreyaUSA replied to BamBam's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
WHAT?! The Silk soy milk at Starbucks is NOT gluten-free? I regularly use the NSA Silk soymilk at home, but only get the occasional one at Starbucks as a special treat. I've not had problems with it. I have noticed I can't tolerate any of the flavorings added at Starbucks, though. (But their silk soymilk is so sweet, I don't add any.) I'd hate to have... -
ARCHIVED Gingerbread House
FreyaUSA replied to azedazobollis's topic in Parents, Friends and Loved Ones of Celiacs
I kept my daughter home last Friday for the same reason. We had a great day, though I wish I'd thought of doing it ahead of time like you did. I hope you had a fun time! -
ARCHIVED Just Found Out Through Bloodwork
FreyaUSA replied to jstilwell's topic in Parents, Friends and Loved Ones of Celiacs
To add to what Richard said, if she's intolerant, she needs to be on a gluten free diet to prevent more damage if there already is some or any damage or other complications associated with gluten intolerance. If you get the biopsy done and the doctor does happen to find a damaged spot in her intestines, the end result will still be that she'll need to be... -
ARCHIVED Oats In Gf Diet
FreyaUSA replied to lbsteenwyk's topic in Parents, Friends and Loved Ones of Celiacs
I'm chiming in too! My eldest (he's 15) gets the same rash you described. It's dermatitis hepitiformous (excuse misspellings) commonly called DH. If you want to be certain, if the rash is present, take her to a dermatologist and get it tested (you can also check out this website, there's a DH section plus information in the general site.) Pediatricians seem... -
ARCHIVED Try Gluten Again?
FreyaUSA replied to txceliacmom's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I've read that people with celiac disease and gluten intolerance go through a cycle. For a while we become ever more sensitive to any trace of gluten then it starts to ease up. I'm not positive about the time frame for all, but for me and my kids it seems to be up to 6 months we were ultra sensitive. I'd get a migraine with half an hour after eating a crumb... -
ARCHIVED Delimex Chicken Taquitos
FreyaUSA posted a topic in Gluten-Free Foods, Products, Shopping & Medications
I bought a box of Delimex Chicken Taquitos on a whim at the store today and both my younger kids really like them! I'm so happy! (They're disguised as normal food in the frozen Mexican foods section. ) -
ARCHIVED Gluten-like Symptoms With Rice?
FreyaUSA replied to FreyaUSA's topic in Related Issues & Disorders
This is kind of an update on my "no grains at all" test of this last week. I've not had any grains all week (since last sunday) and, by Wednesday, I was feeling pretty good. Yesterday I tried something with corn and had no problem (YEA!) Today, making a cake for my daughter (containing rice flour) I tasted the batter(wasn't thinking about it, just did it... -
ARCHIVED Seeing A Child With Symptoms
FreyaUSA replied to FreyaUSA's topic in Parents, Friends and Loved Ones of Celiacs
Thank you, Bklyn, for your insights! I'd thought of the defensive reaction, but I didn't think of the other, that she might have something else and they're aware of it, idea. I wonder how I'd react if someone mentioned to me my children looked diabetic... I guess in my case I would find it to be an opportunity to discuss celiac disease. But what if it the... -
ARCHIVED Seeing A Child With Symptoms
FreyaUSA posted a topic in Parents, Friends and Loved Ones of Celiacs
I have a kind of dilemma and would love suggestions/advice. I spend a couple hours a week with my daughter's 1st grade class. There is a little girl in the class who looks so much like how my 10 year old son looked at that age but worse, I feel she could very well have celiacs. Her skin is translucent, her eyes slightly sunken with dark rings, she's very... -
ARCHIVED Feels Like Ice Going Up Body
FreyaUSA replied to dmchr4's topic in Parents, Friends and Loved Ones of Celiacs
It could be from the celiac disease. There are quite a few people here that have had some degree of nerve damage caused by gluten (it runs in my family.) It usually effects the extremities: hands up arms, feet up legs. Numbness, tingling, pain are the usual descriptions, though. Did she ever have this happen before going gluten-free? If so, it could be just... -
ARCHIVED Spent The Morning In The Er!
FreyaUSA replied to mela14's topic in Coping with Celiac Disease
Hi Mela, I'm only adding this because you said you have a doctor that is very responsive to you AND because what you're describing seems to be similar to what my father experienced many times at hospitals. It was so frustrating and heartbreaking! Anyway, here's a quote from an article written by M Hadjivassiliou, R A Gr -
ARCHIVED Maltose?
FreyaUSA replied to FreyaUSA's topic in Gluten-Free Foods, Products, Shopping & Medications
Drat. I gave a couple pieces to others when I bought it, but none of us with gluten problems (they said it was delicious .) I guess the rest goes in the trash. *sniff* -
ARCHIVED Help! Here We Go Again
FreyaUSA replied to emsmom's topic in Parents, Friends and Loved Ones of Celiacs
My daughter (who just turned 7 today) and two older sons are all on a gluten-free diet. Here are a few things my daughter likes: -- caramel corn cakes (you can put peanut butter on these, they're great!) -- apple cinnamon rice cakes -- sliced apples with peanut butter dip -- babybel cheeses -- celery stuffed with laughing cow soft swiss cheese... -
I regularly go to Logan's. The staff at the ones near me (I've been to two different ones) were incredibly helpful AND knowledgeable. We had one waiter who's girlfriend was celiac and he basically gave me the rundown on what's okay and what's not and had no problem checking on the what he didn't know immediately. The other times I've been, even without this...

Someone on another board I frequent posted this saying she makes it regularly (making 2 gallons at a time!) and adds 1 cup of sugar for the 2 gallons and her kids eat it just like that, nothing else added. Anyway, I'm hoping to try it this weekend. I go through a lot of yogurt! Open Original Shared Link

Is maltose gluten-free? This is what I was able to find: I bought some sesame peanut candy at an Asian market. It's ingredients are: sesame, peanuts, maltose, citric acid and water. Dare I eat any?

ARCHIVED Just Got Diagnosed Now What
FreyaUSA replied to ChristyM's topic in Coping with Celiac Disease
There's a bakery (that does all the baking for it's 3 restaurants and other area retailers) near my kids' gymnastics studio that has a great latte... Well, every time I go in there I get sores in my nose. They're totally annoying, but I haven't had any of my other glutened reactions, not even the headaches. It may be you'll be fine. Wear a face mask when... -

ARCHIVED Unexplained Episode
FreyaUSA replied to CycleFitness's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Okay, I'm in a mood again. With the onslaught of people having stomach surgeries (sudden brain freeze, what is it when they get half their stomach closed off? Gastric bypass or something?) Would these people be willing to have negative feedback therapy to change their eating habits so they could lose weight? Everytime they ate a cookie crumb, they would...
