Apart from Gluten, I also have some issues with dairy and caffeine giving me diarrhea. I have have small amounts of each (2-3 cans of caffeinated soda a week, or a 'dollop' of sour cream with a meal), but too much has me headed to the bathroom. That is SO interesting. I've had these for years and years.... Even saw my Dr. about them once about 10 years ago and he told me it wasn't a big deal. Tried it for lunch today with 1/3 cup of Pamela's Baking Mix in place of the rice/flax/almond ingredients (because it was what I had!). Turned out just fine.... Has potential for futher experimentation, too! Made a few baggies of just the dry ingredients for future needs. How easy can it be???? Thanks for making life just a little easier! -

As a new celiac, here are a few pieces of advice: 1) Give it a try - you have nothing to lose and everything to gain. BUT, if you do it, you need to do it 100% because even a little gluten will mitigate the positive effects you may otherwise have. 2) I felt substantially better in 2-3 weeks. Give yourself this long. Your experience sounds so similar to mine!!! Symptoms started after childbirth, weight loss, fatigue. Everyone here has given you good advice.... One other thing to consider is microscopic colitis. I believe you, too. Did you mention epilepsy in your original post? Celiac can lead to neurological issues, including seizures. Easter this year is at my MIL's house. She is a great cook, and is planning a gluten-free meal (she loves a challenge, as she says). My initial thought is that you could also have something else going on??? I found the celiac disease in 12/08, and then had an EGD/Colonoscopy in March to confirm that nothing else was happening.
