ARCHIVED Not Getting Better
ranger replied to wajo427's topic in Parents, Friends and Loved Ones of Celiacs
You mentioned that your wife works in a scool cafe. Is it possible that she is getting glutened at work? Do they deal with a lot of flour? For years, I worked as a chef. I know I could not do that job today because of cc issues. I have been on the gluten-free diet for almost 4 months and still have some problems, but very much better. It just takes... -

ARCHIVED Really Struggling With The Loss/change
ranger replied to fnord's topic in Coping with Celiac Disease
At first, I pined over donuts. Then, I learned to make gluten-free donuts. Gluten is poison to my system. I refuse to eat it. My husband is on the gluten-free diet, because I do all the cooking. He has no choice! But he does have his bread and little debbies for his lunch.. It gets easier, but you almost have to do a lot of cooking. Either that or... -

ARCHIVED Easy, Yummy Bread In Minutes
ranger replied to lonewolf's topic in Gluten-Free Recipes & Cooking Tips
I made 4 batches of the dry ingred. and parked it in the fridge. Yesterday, all I had to was measure 5 Tbs of the mix with an egg and it worked! So I didn't have to drag out and measure all the ingred. Took no time. The choco cake didn't work so well, but I used 3 Tbs. of gluten-free flour, 1 1/2 Tbs. cocao powder, 1/2 tsp. bk pw, 2 Tbs. sugar, then added... -

ranger replied to purple's topic in Introduce Yourself / Share Stuff
Oh, the joy of gardening! Last Sat. we had a really nice day so I could do some weeding finally. The next day, I couldn't walk - My legs were so sore. God, I'm out of shape! Tomorro, I'm going to plant some peas and potatoes. Might end up in traction. I guess running to the bathroom does not count as exercise! Got some work to do. Susan -

ARCHIVED Easy, Yummy Bread In Minutes

I can't believe it's not bread! It really worked. I'm going to make a batch of the dry ingrediants to keep in the fridge so I don't have to measure that all the time. It's not the best bread, but it will work in a pinch. Thanks much! You're a genius! -

ARCHIVED Any Gardening Tips For A Beginner?

I plant potatoes the old way. This straw thing sounds easier. Don't the potatoes turn green, or is that much straw thick enough? -

I don't buy much in a health foo store but I cook a lot. I make my own crackers, bread, donuts, even Danish. We have an almost gluten free household ( DH not celiac) but the few gluten things in the house are kept separate and used with care. Most meals shared are gluten-free, with the exeption of a few things like pizza and some pasta meals ( a matter...

ranger replied to mikehall117's topic in Coping with Celiac Disease
I can ditto most of the above things, but I have had an astounding thing happen to me. My diabetes seems to be dissapearing. Before the gluten-free diet, my blood suagars were way to high - 200 to 300 morning levels! My AIC was 13.5, which is incedibly high. Now, on half the meds, my am blood sugars run around 70 - consistently. I forgot to take my pill... -

ARCHIVED Tip I Found Regarding Bread Rising
ranger replied to kaiess's topic in Gluten-Free Recipes & Cooking Tips
When I bake bread, I put the ingredients together in my kitchenaid and let 'er rip for 4 min. on high. I burned up my hand mixer doing this. I don't let it rise as long as reg bread - I'v found gluten-free bread can fall if you let it rise to long. And don't forget to use xanthan gum. -

I have used leftover mashed potatoes and it worked pretty good for meatballs/meatloaf. I've even used dried potato flakes mixed with enough water to get the right texture, and it worked. Can't help with the hives - never get them. -

ARCHIVED What Are Your "glutened" Symptoms?
ranger replied to LauraZ's topic in Coping with Celiac Disease
My symptoms usually start within an hour of even tiny amounts. It starts with the stomach rumbling, moves to the big D. I also become tired, depressed and get brain fog. It usually lasts about 3 days. -

neesee, I'm so sorry to hear about your Aunt. I probably should have explained that the condition of the house is not her fault. She is 77 years old and cannot do the cleaning anymore, but her 2 40-plus daughters live with her, and they're supposed to do it. But they don't, and she's still sharp as a tack, so she should tell them to do it. But, they're...

Hey, on top of that, their bathroom door won't close and their toilet wouldn't flush. A celiacs nightmare! And, I walked out of there with light colored cat hair all over my black pants! Thank God I don't have to eat there again till Thanksgiving. That might geve me time to move out of state. Sorry, DH, it's not your fault. And thank you all!

ARCHIVED Flour
ranger replied to valeriek's topic in Gluten-Free Foods, Products, Shopping & Medications
Don't fry much, either, but try half cornmeal and half dried mashed-potato flakes, seasoned. For chicken, I like to marinate it in buttermilk that has hot sauce and mustard in it, shake off the excess buttermilk, roll in the mix, and fry. Or, dust with seasoned gluten-free flour, dip in egg, roll in mixture, and fry. -
Yes, that's the one I burned my mixer up on! But it is good. I don't put the egg substitute in ( never have any) but it doesn't seem to matter. If you want a crisper crust. you might skip the brushing with butter, but I've always used it. I'm a bread baker from way back and I really miss kneading the bread. Great stress buster! Let me know if you try...

Sorry you feel so bad. It is frustrating to put so much effort into the diet and still feel bad. But, it does work and you'll feel better. Happy B-day to your little one!

I made my Easter dinner; scalloped poatatoes and ham, asparagus, corn muffin, and rhubarb cake. Off to MIL for dinner, feeling safe. Before dinner, she chided me - saying I wouldn't eat in her kitchen because it was too dirty. I assured her that it was just because it had so much gluten in it. I had to micro my dinner and notice that the micro was...

I'm so sorry. I think it was riceguy who wanted a good bread recipe, and I mentioned french bread via glutenfreeda. Wrong recipe! The good one is on recipezaar byGlutenFreeGirl (French bread). It has a wonderful soft texture on the inside, and a crispy crust. The flavor is great! For an Easter appetizer, I topped slices with homeade pesto and smoked...

ARCHIVED Bread That Bites Back
ranger replied to RiceGuy's topic in Gluten-Free Recipes & Cooking Tips
I find the French bread on Glutenfreeda.com works well, but it requires yeast Do you have a reason that you can't use yeast? I couldn't bake bread without it. It also needs a stand mixer - I burned up my hand mixer trying to use it. -

ARCHIVED What Do You Do For A Living?
ranger replied to Bosque's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Thank God I retired way early. I don't know how people work with celiac. All I've done for almost 2 years is stay close to the bathroom! Before that, I had a small restaurant. When I closed it, I decided to retire and work in my garden. That worked for a couple of years - untill the Big "D" hit me. Last year, I got only half of the garden even planted...
