  1. I worked as a chef for many years and thank God I retired before I got so sick. I don't know how people work with celiac. But now, I am considering part-time work but know that I could never work in a restaurant again, much less a bakery. If I were younger, I would consider opening a gluten free bakery (hint-hint).
  2. My language turns from that of an angel to that of a truck driver. I was recently cc'd 3 times in 3 weeks ( lots of family picnics) and the last time I was literally throwing things around the kitchen. Glad there were no people around- they would have gone, too! Normally, I'm very quiet and easy-going. Don't feel bad, just get better.
  3. I like really bland foods - mashed potatoes, bananas,ect. But, I am desparate to gain weight, so even sick as a dog, you will see me shoveling it in!
  4. The other day I made a quinoa salad. Cooked the quinoa in 1/2 C white wine, bal liquid chx stock.   5. I've just come off 21/2 weeks of not being able to walk because of my left knee. Not swollen, but intermitant pain and the feeling it was buckleing. I thaught at first it was intensive gardening and getting old, but now not so sure. Right before it started, I had been accidentally glutened 3 weeks in a row! Btw, my garden went to hell!
  6. I worked as a chef for years. Thank God I'm retired now, because there's no way I could work in a restaurant kitchen where any flour was involved - and most of the good ones do in-house baking. I don't know what I'd do if I was younger and had to work, but I suspect a carreer change would be in order! Hope you figure this one out.

  8. Eating out anywhere is a real crap-shoot! Having said that, You need to be eating gluten to take both the blood test and the endo. You don't have to to do the gene tests. You sound like the kind of person that would benefit from a diagnosis, but, remember, you can test negative on both and still be gluten intolerant. I didn't care what the results were...

  10. So sorry to hear hear about your bad night out. The bathroom is a bad place to celibrate! I have found that even a minute amount of gluten will make me sick, and that seems to be getting worse. I live in Canton Oh. Are you anywhere near hear? Let me know if I can be of any help.
  11. I heard that celiacs were not eligable for ss disability. Any one on it for celiacs? Can anyone clarify that for me? I hope you get your problems solved and resume your schooling.
  12. Finally found them at Giant Eagle in Canton, Oh, for $4.29 a box. Seems pricey, but it made 18 cupcakes which is only .24 per. I threw most of them in the freezer so they'll last me forever.   13. That's interesting. My sister claims that on Snopes.com no one has a bad reaction to soy. I pointed out that soy is on the list of the top 8 food allergens in the US. What are your dd's reactions to soy? Btw, I never heard of that web sight before, so looked into it. If they told me that the earth was round, I wouldn't bielieve it!
  14. I agree with raven. It may take some time. You are new to this and I kept getting gluttened after going gluten-free because I wasn't aware of all the hidden gluten and how little it takes for me to get cc'd. And I still do on occasion. I still learn new things all the time.Hang in there!

  16. I quit eating gluten(didn't know any better at the time) a month before bloodwork, so didn't test positive for celiac, but I knew that gluten was the problem. I quit eating gluten and have steadily improved since. I don't need a doc ar anyone else to tell me what my body is telling me. My family is supportive now, because they see the improvement.   17. Welcome! This forum has helped me a zillion times. At first, I just read and read. It not only taught me the ins and outs of going gluten-free, but also kept me from feeling so alone in the world. People don't know much about celiac's- I know I didn't before I got it.   18. Thank God! I thaught I was just getting old. I used to winter sports and the hotter the summer day, the better. Now, if I'm out in the sun on a hot day, I feel like I'm going to spontaneously combust, and I dread going from the house to the car in the winter! Guess I'm not alone!

  20. i'm very small, but I would be starving if I ate as little as you! I do eat meat more frequently than I used to, but in smaller portions. It does seem confusing at first, but get's easier.   21. I, too, have gone from 1/2 pot to one cup of coffee a day. Guess it's not all in my head. I'm thinking about just giving it up. My coffeepot went kapute and I'm seriously thinking of not replacing it!
  22. Did a little research on the role of zonulin on leaky gut and celiac. Sounds reasonable to me - not only the premise, but also some " glutens" that I couldn't explain. But to give up chocolate and coffee? Yikes! But, if it works, I'd do it. It's called the low oxalate diet. Any one doing it or know more about it?
  23. Just a curiosity but my hometown (Canton, Ohio) has the highest per capita number of restaurants in America. I don't think quality comes into play, though. It must be large numbers of fast food joints!
  24. I've eaten butter (hate margarine) eggs, and meat all my life. I'm 63 and myHDL is 95 and my LDL is low. I eat small portions of meat, use olive oil a lot and a good amount of veges and fruit at least once a day. I really wouldn't want to take statins. Maybe wean yourself off slowly and keep track of your numbers.
  25. I marinate the chicken in buttermilk with some hot sauce and mustard mixed in (to taste) but I'm sure you could use rice milk. Then I roll them in 1/2 corn meal and 1/2 potatoe flakes -seasoned. I usually fry them briefly in a small amout of oil, and then bake them. You could probably skip the frying and go straight into the oven.
