  3. I made 4 batches of the dry ingred. and parked it in the fridge. Yesterday, all I had to was measure 5 Tbs of the mix with an egg and it worked! So I didn't have to drag out and measure all the ingred. Took no time.   6. I can't believe it's not bread! It really worked. I'm going to make a batch of the dry ingrediants to keep in the fridge so I don't have to measure that all the time. It's not the best bread, but it will work in a pinch. Thanks much! You're a genius!

  11. I can ditto most of the above things, but I have had an astounding thing happen to me. My diabetes seems to be dissapearing. Before the gluten-free diet, my blood suagars were way to high - 200 to 300 morning levels! My AIC was 13.5, which is incedibly high. Now, on half the meds, my am blood sugars run around 70 - consistently. I forgot to take my pill...
  12. When I bake bread, I put the ingredients together in my kitchenaid and let 'er rip for 4 min. on high. I burned up my hand mixer doing this. I don't let it rise as long as reg bread - I'v found gluten-free bread can fall if you let it rise to long. And don't forget to use xanthan gum.
  13. I have used leftover mashed potatoes and it worked pretty good for meatballs/meatloaf. I've even used dried potato flakes mixed with enough water to get the right texture, and it worked. Can't help with the hives - never get them.
  14. My symptoms usually start within an hour of even tiny amounts. It starts with the stomach rumbling, moves to the big D. I also become tired, depressed and get brain fog. It usually lasts about 3 days.

  17. Hey, on top of that, their bathroom door won't close and their toilet wouldn't flush. A celiacs nightmare! And, I walked out of there with light colored cat hair all over my black pants!   19. Don't fry much, either, but try half cornmeal and half dried mashed-potato flakes, seasoned. For chicken, I like to marinate it in buttermilk that has hot sauce and mustard in it, shake off the excess buttermilk, roll in the mix, and fry. Or, dust with seasoned gluten-free flour, dip in egg, roll in mixture, and fry.
  20. Yes, that's the one I burned my mixer up on! But it is good. I don't put the egg substitute in ( never have any) but it doesn't seem to matter. If you want a crisper crust. you might skip the brushing with butter, but I've always used it. I'm a bread baker from way back and I really miss kneading the bread. Great stress buster!   24. I find the French bread on Glutenfreeda.com works well, but it requires yeast Do you have a reason that you can't use yeast? I couldn't bake bread without it. It also needs a stand mixer - I burned up my hand mixer trying to use it.
