  1. Great Ideas and thanks. Hauled out Italian sausage and provalone from the freezer - will figure out something from this for dinner. Sometimes I get in a cooking rut, and others ideas really help to get out of it. Will definetly try other recipes as my zucchini piles in on me. Good tip to grate it and freeze it.

  3. My digestive issues went 75% away since going gluten free, but that 25% is bugging me. I recently baught a bottle of Twinlab Pancreatin. Anyone know if this works?   4. I've never been a big zucc eater, but this year i planted some in my garden. First one I cut up and cooked with tomatoes and Italian seasoning, a good side. The second one, I made zucc patties.   5. I was sick for 2 years before going gluten free and so depressed that I almost started seeing a shrink. Within a short time (few weeks?) I was in the kitchen, and I realized that I felt HAPPY! Part of it was probably just being so sick for so long - that in itself can make one depressed. But I notice now that when I'm glutened, the deprresion comes back...

It only cost $144.00 for a once a week booth space for 41/2 months, and you can even get a 1 month (60) or 1 week (18) space.   14. I eat Lay's chips. Not much of a sandwhich eater, but occasionally make them using corn totillas in place of bread. Can also stuff them with eggs, sausage, ect. for breakfast. And they are dirt cheap!

  18. I keep a jar of vanilla sugar all the time. If I don't use it, I occasionally just open the jar and smell it. God, it smells good!
  19. Polenta is cornmeal. I use the tube stuff for frying (ease), but make my own for sides. basically, you boil cornmeal with liquid. If it's a side, use it warm.   20. I am 5'4"" and got down to 86 lbs. A walking skelatin. Been gluten free for 7 months and have slowly gained 10 lbs. I'm going to add some exercise now that I'm feeling stronger. My dumb doc saw nothing wrong with a thin woman losing 25 lbs. in a few months! I don't have any faith in the medical community anymore.
  21. I made these last night and was not to happy. They flattened out and several fell. What size pan do you use? I'm thinking I should have used a smaller one - mine was 9 by 13. They Tasted just alright.
  22. Quinoa- cook in white wine and vege broth. Lightly saute any veges and add. Throw in a good amount of fresh basil and top with parmeson for the meat eaters. Is good hot or cold and is a complete protein with no meat (I put peices of cooked chicken breast in mine).

  25. I may be wrong, so set me straight if I am, but I read somewhere that Wellbutrin is not gluten-free. Check that out.
