We threw all the flour out. The few gluten foods allowed in the house are treated like toxic cleaning chemicals. Well marked, seperate shelf et. I can't imagine the anger I would display if someone were to use wheat flour in my kitchen.
I know I'm being harsh but YES your baking with wheat flour in the same kitchen where you cook for your celiac family members is making them sick. Please stop.

I just have to share this story with you. My DD15 and DS's girlfriend17 visit often with Grandma (my ex-MIL) 1/2 a mile down the road. Grandma is a very talented and loving person but we have never seen eye-to-eye. Only recently she has started to admit that her criticisms of me were deeply rooted. Like when she said that my going to college was a waste of my husbands money, she deeply regretted not being able to go to college herself. He didn't pay for it but that is beside the point.
Anyhow, after much fussing and testing DD15 and DSGF17 are gluten free. Both families are littered with celiac genes. Grandma was doubtful. DD15 while visiting grandma went off her diet and ate a whole bunch of "normal brownies" and broke out in a horrible rash. Big red blotches everywhere. Grandma is now scared to death of feeding those girls gluten.

The most accurate test result is a positive response to a gluten free diet. After all the testing, frustration, confusion, medical bills et. the only thing that will matter is whether you feel better when you don't eat that junk.

What worked for me this year..... called ahead and went over the menu, offered to bring a gluten free desert (pumpkin cake), arrived early and did a great deal of the work myself. I got good food and koodoos for being a helpful DIL.
I did get teased a little for washing my hands after arranging and placing the buns on the table but when I showed them the red itchy spots on my hands they stopped. I'm allergic to wheat. Later they were all very apologetic while they ate cheese cake. I made a joke of it, by next Thankgiving I will have learned to make an awesome DSG free moc cheeses cake.
I wonder if chill over is gluten free? That with coconut milk.....hmmmm

Are you taking B12 and probiotics?
Try googling B12 - yeast - B12 helped get rid of my yeast problem.

There is even a drink made from maple syrup and lemon juice that cleans you out that I enjoyed and found soothing. It has a weird side effect of making your tongue white for a couple of days though (something about cleaning the liver out).

Yes, I'm gluten free, my son was diagnosed last summer but refuses to follow a gluten free diet. So when he tells me these things I say, "Stop eating gluten" He says nope and I look for some other answer. But it always comes back to gluten. He's 18 and doesn't live at home so........

Get the toaster - trust me, there is no way to clean your old one (I tried) and there's some gluten free bread out there that is pretty darn tasty. I'll never eat textureless, tasteless, wheat bread again!
I did buy a new toaster! I keep it in the box, under the sink. Gluten free bread can be fun to make. We use olive oil and garlic in it sometimes, other time maybe applesauce and cinnimon.

I have always loved that name! Welcome to our group. I think you will find that being gluten free is not so much a disease as a serious shove in the direction of heathly living. A diet you can not cheat on!
I didn't buy new pots and pans. I have three teens in the house. Two of them are gluten free. So most of the groceries here are gluten free. Feeding teens is expensive so we eat a lot of taco salads with gluten free corn chips and things like that.
Here's a recipe that my kids loved.....
Salsa Meatloaf
2 lbs ground beef
1 cup salsa
1 1/2 cups potato flakes
2 eggs
2 t. salt
2 t. thyme
1 t. pepper
Bake at 375 for 30 mins - top with 1/3 cup salsa and bake for another 10 min

Just realized I left out the whole point here. You will save yourself a lot of trouble if you make the meals in your home gluten free and fill the cupboards with naturally gluten free foods. That way everyone can just grab a snack and assume it is safe. Nobody needs gluten. And the things that are naturally gluten free like rice and potatos are cheaper than say... gluten free pasta.

Take magnesium supplements especially if you are also experiencing cramps in your lower legs and feet during the night. If you are taking calcium skip it for a bit. When you start taking it again, take it in the morning and take the mag before bed.

We drink Folgers coffee, it's gluten free. But, just a thought, does their coffee/breakfast area include a toaster and bread crumbs? Are the coffee cups, creamer, sugar et. kept near the toaster?
While buying fresh coffee maybe little packets of anything you put in it would be a good idea.
I drink mine black, in my own special cup, that no one else is allowed to touch.
Oh yeah, if your mother-in-law has used her coffee maker for a flavored coffee the machine may be glutened.

My son says he has been experiencing this since age 8. Most recently at dinner yesterday. He felt that he watched himself get up and leave the table. He does not want to believe that gluten is causing this.
I will share your answers with him and ask him to begin taking B12 if it is available to him.

Something I just started doing....... coconut milk, fruit and your favorite sweetener makes a pretty good "It's not Yogurt". Adding a little flax seed and taking acidopholus gives it some of the benefits of the real thing.
I use olive oil on my mashed potatoes.
Good old fashioned lard for frying eggs.
Another recipe I got from this site........ one cup rice milk, one can veggies (peas, asparagus...), Herb Ox Bullion ...... makes a yummy quick soup.
I still miss butter and ice cream

My 19 year old cat started refusing evo a couple weeks ago. No idea why. She can't afford to miss a meal so we are trying everything. Mostly she is eating tuna, ham, evaporated milk and water. She had become so thin her back bones were really pronounced. I thought we were going to lose her. Now she is gaining again. The litter box looks normal and she is still jumping up into the window sill and onto the furniture.
I drove all the way to the city for the evo...... now I don't know if she was just sick (bad hairball?) or if there was something off about the food. I know she will not eat regular grocery store cat food.
Does anyone have a good home made cat food recipe?

You could send everyone an email explaining that you have learned a lot about allergies and illness's such as diabetes and celiacs this year. And ask that in order to accommodate everyone's needs would they mind sharing their recipes? Maybe have them email them back to you, compile .... decorate with graphics of candy canes and Christmas trees........ print!
Thing is even if they are willing to cook something gluten free, would you trust them to know enough not to CC the heck out of you? I think I would trust 3 of my 7 co-workers.

when I went to my son's house for thanks giving dinner I almost cried as my 3 year old grandson had a red sore the size of a pencil eraser on his face (cheek) with a couple of other small red marks a few inches away, I didn't say anything. some one else asked about it, my daughter inlaw said that he had a pimple come up and that he had scratched it... I'm starting to think that I'm getting paraniod about how big this problem really might be. How big is this Iceberg ? Dan
Why didn't you say anything? Not a judgement just curious. My kids say I'm relentless in my badgering of them to be careful not to eat gluten.

As far as how big the iceberg is, I pose this question -- Who (celiac or not) feels better when eating a gluten filled diet? -- I know that my non-celiac husband and son feel better now that most of the gluten has been eliminated from their diet.

myself age 43 - diagnosed celiac
my son age 18 - diagnosed celiac
son #2 age 17 - lots of symptoms mostly gluten free now because we don't eat it at home
#2's girlfriend age 17 - diagnosed celiac
daughter age 15 - gluten free, soy free by choice - many symptoms have gone away
my fella age 43 -not a celiac but has learned to cook gluten free because he loves us
That's 5 outa 6 from three families.......
I think it's very prevalent. We are not "special" and that will upset some who have gotten a little high on themselves. They won't want to hear that there is nothing wrong with us. Humans should not eat grains!

I don't read Reader's Digest any longer because they are a cover to cover drug ad. It does not surprise me that a digest who relys so heavily on the drug business would downplay a disease that negates the need for script meds for so many.

Hello, I have to throw this in ........ we have very little gluten in our house. It's just to hard. There are two adults and three teens living here. We have company a lot. It's normal to find a friend on the couch in the morning. We all have work/school and long lists of things we want/have to get done. We can not dash in and grab a bite if we have to stop and worry about gluten.
So we have over time replaced everything with gluten free brands. It took awhile for everyone to get use to the new flavors and textures but they have all adjusted just fine.
One other point, nobody needs gluten. I believe that the non-celiacs in my household are better served by not being served that stuff!
My non-celiacs boyfriend is allowed - one loaf of bread, one can of Jiff, one jar of jam, one box of cherrios that he fixes on the one cupboard top that I never use but spray and wash a couple times a day. He has given up on meat sandwiches, bread and butter and toast because he is out numbered.

We just had my boy-friend's brother ( age 52?) up north to hunt for a few days. He only brought things he knows we eat and then gave the kids (teens) cash to go to the store for a few things that would be safe for most of us like ice cream and soda. That family shows no signs of being celiacs but have been wonderfully understanding and willing to change their recipes or brands.
We tried a new gluten free stuffing recipe and a Michigan wine (sparkling peach juice from St. Julians for the kids) with our Thanksgiving left overs the first night. The kids made venison stew the second night and BBQ pork the third night. All went well, the hunt was successful, the kids beat the grown ups on WII golf and bowling!
No stress, no gluten. The issue wasn't even really discussed.

I've had too many glutenings at places who have gluten free menu's, but then they add seasoning to the "plain grilled" chicken breast that I asked for with "nothing" on it...this just happened to me over the weekend. And when I asked what was in the seasoning, the manager said, "it's basically just salt..." I for a fact know it wasn't and thought it extremely rude especially since I did ask for it to be plain and I explained that I have an allergy.
This has happened to me also so now I ask to see the label of everything going in or on my food. I even yelled at a gal working for subway because they took the chicken out of the box and threw away all the labels. She kept saying, "It's just chicken, nothing else" I said, "By law you have to be able to show me the label." I don't know if that is true but I was mad and hungry so eh.. I was being a meany. Mostly now I just take apples and nuts everywhere I go except to relative's houses. The relatives all seem to be curious and willing to make "just plain meat" and veggies for us.

Jason, I can tell you that you are getting better just by the tone of your posts! You are concerned and nervous instead of panicked and angry. I'm really happy for you!
Good luck with the job interview. I think printing out one of those cards to just hand to the waitress would be pretty simple. They usually just say something like.......

plain meat cooked in a fresh pan with only salt and pepper to season

Please do not put anything on my food that we have not discussed as it may make me very ill.
