  1. Does your gluten-free flour mix contain xanthan gum?
  2. Boar's Head bacon actually says gluten-free on the package! Tasty, too. I stock up when it's on sale. If you gotta have protein, might as well make it taste good. A Chinese co-worker once told me that when she first came to the US she asked her father (who had come earlier) what she should eat, and he said, "Bacon! It's delicious!" I wholeheartedly...
  3. If you can find frozen hashbrown potato patties (like McD's hash browns) they make very good mini-pizzas with even less work. When I was newly diagnosed and feeding my family english muffin pizzas, this was my version of dinner, and everyone pouted when I wouldn't share.
  4. I had the black soy pasta and really liked it, but it isn't the texture you expect from pasta. It has a nice chewiness to it, almost like meat, and the only flavor I remember is the sauce I put on it, so it must not have a very "soy" taste. I would get it again if I could find it. I think we got it at Wegman's.
  5. If you have an Asian grocery store nearby you can get rice flour, tapioca flour, etc much cheaper and usually ground finer - the rice flour's not so sandy-textured. At 3 1-lb packages of white rice flour for $1, I stock up there instead of paying $4 for a pound and a half in a regular store. And the cost of xanthan gum hurts, but it does last a while. ...
  6. Clan Thompson says that Burt's Bees Beeswax Lip Balm tin and tube and Lifeguard's choice and lip gloss are all gluten-free. Other gluten-free lip balms: Blistex lip ointment Blistex lip balm, regular, mint, berry Chapstick lip moisturizer spf 15 Children's chapstick flava-craze, grape or fruit punch I believe the Neutrogena lip moisturizer stick is...
  7. Sesame and seaweed is good - it tastes like garlic, onion, soy, or teriyaki, but you would never pick "seaweed" to identify the flavor. Love 'em. Agreed, hard not to eat a whole bag at a time.
  8. A suggestion for crackers - I don't miss bread, but when you want something crunchy or want to spread some cheese or peanut butter you need crackers! There are rice crackers around, usually on the shelf with the Asian foods, but I'm not sure all of them are safe so read the labels to make sure they don't include soy sauce or anything iffy. Nut Thins are...
  9. Here's one if you have leftover gluten-free breadcrumbs (sometimes I bake a loaf of bread just to make it into crumbs): Slice raw boneless skinless chicken breasts to about 1/4", then put them between plastic wrap and pound them just a little thinner (skip the pounding if you are good at slicing thinner than 1/4"). Make breading (I just guess at how...
  10. Thanks! Lots of good info here. I have thought about leaving a bottle in the car, but considering how much heat builds up in a parked car in summer and how cold it gets in winter, it's not a good idea to leave any foods or meds in your car. I'll check out some of those web sites. My daughter, although not positive on blood test, has so many gut problems...
  11. Work group is going out to a Thai restaurant for lunch on Friday. Not going is not an option because we work for a psychopath, but I digress. I'll take my Triumph thai dining card and I'm going to try to fax it in ahead of time, but if anybody out there in celiac world has suggestions for dishes that are or can easily be made gluten-free I'd be most appreciative...
  12. It would be nice to be able to carry some safe soy sauce packets with me so that sushi isn't so bland. Yeah, I can take a bottle with me when I know I'm going out for sushi, but I don't always know that I'm going to be out somewhere and have a sushi urge. Has anyone found a place to buy little packets of La Choy or any other wheat-free soy sauce? I see...
  13. I thought I had read on here somewhere that around holidays the Reese's cups and products do have gluten in them, but other times of the year they don't. I'd give somebody else the eggs that are staring at you and go out and get yourself some pb cups with a readable label and indulge without fear!
  14. I finally got around to making this last night and served it today. It was unbelievably good. Everyone who tried it picked up a piece, put it in their mouth, then a look of bliss came over their faces and they all said Oh. My. God. This is sooo good. You can melt the chocolate in the microwave to make it even easier.
  15. I just made this again (the version with the yeast in the water instead of the dry mix) and it rose beautifully and had a great crust. I made one of the loaves into 4 french bread pizzas and froze them for later.
  16. I spent a week in Athens a while back, living in a motel with a fridge and microwave, and managed to live on Amy's meals from Earth Fare and things like Bush beans and tuna from the local supermarket. Earth Fare is small, but had a reasonable selection of gluten-free food. I didn't look for breads, so I don't know how much gluten-free bread they had. There...
  17. Yes, you can denature the gluten protein by heat or other means so it no longer has the ability to perform its natural function, but when it is broken down in your digestive system or by scavenging macrophages and presented by antigen-presenting cells in your immune system those fragments of protein will still be seen by your immune system the same way. ...
  18. I agree, you're right, I don't have to stew over the unfairness of it all, and most of the time I sigh and just accept it, but sometimes my evil little mind just likes to think of how nice if I could put each of them in my shoes (or my stomach's shoes) for a day. Especially since this "reward" was for something we didn't want to do (or need to do, IMHO)...
  19. Here's the original recipe from the "More from the Gluten-Free Gourmet" book, without having to make up the french bread mix (makes two loaves, long and thin): 2c white rice flour 1c tapioca flour 3t xanthan gum 1-1/2t salt 2t Egg Replacer (optional) Mix these together in the bowl of the mixer and set aside. Melt 2T butter or margarine...
  20. I use whatever cornstarch I have around - at the moment I have - well I just realized I have no idea because I took it out of its original box and put it into a canister. I think some brands might actually say "gluten-free" on the box. The Clan Thompson Smartlist says that Argo, Kingsford, Price Chopper, and Safeway brands are all gluten-free. You can...
  21. How can you eat Cabot cheese if you're dairy free? Do they make some fake cheese as well as the usual ones? When I make gluten-free baked macaroni and cheese, I modify a recipe from a box of regular (not-gluten-free) elbows. Basically, you can make a recipe for 2 cups of white sauce using any kind of "milk" and a thickener such as cornstarch, add to...
  22. Good luck in Cancun. I'd be scared, too. Heck, being out for the day is a chore, being in California for a week was a challenge (half my suitcase was food), I can't imagine dealing with another country. I hope it goes well.
  23. This was in tonight's paper, in the vegetarian cooking column, and it just happens to be gluten-free as well as decadent. It says to use baking chocolate with 70% cocoa. Here's the description: "a crisp, crackling crust over a layer of brownie-like dough that concealed an almost molten chocolate center." Also described as "a tiny bit gooey". Not that...
  24. Yet again the reward (or occasionally enticement) for the team having accomplished some horrible goal at work is to bring in pizza. Yay, yahoo, my enthusiasm knows no bounds. I will join in the jolly fellowship, drink some Coke, and sit at the far end of the table to avoid getting their crumbs in my lunch from home. I assure them I'm fine, thanks, there...
  25. You can get a really big fanny pack (my kids call mine the Fanny Pack 3000) to smuggle in food if necessary, and I have a letter from my doctor on a prescription slip stating that I need a special diet, just in case the food nazis give me a hard time at a place like that. EMS carries some good size packs. Mine has enough pockets for a little can of tuna...
