  1. has anyone tried using quinoa as a replacement for barley and bulghur wheat in recipes? if so, how does it work? i've been craving tabouli lately and don't know what to use.
  2. this is my favorite gluten free cookbook. in fact, it is my favorite cookbook period. Open Original Shared Link it has lots of variety, i highly recommend it. carrie
  3. these are all good suggestions. i will talk with her a bit about them. as far as the celiac test goes, i'm not sure. all i know is that she tested negative. i'll ask her. thanks, carrie
  4. i don't know much about bc, but i live in washington and i know that you can get stuff here. a short trip across the border might be worth it if you have a car. i know that there is at least one natural food type store in bellingham: Open Original Shared Link the only store that i know of in bc that might have gluten free stuff for you is Open...
  5. hi guys, i just wrote this to a member and then thought it might be useful to post on the board. it's really long, but i think it might be helpful for anyone going to costa rica. i just got back from costa rica and i have to say it wasn't that bad. i had less trouble finding things to eat in restaurants there than i do in the u.s. here's the scoop...
  6. hi, i thought i might mention this here as we are all very familiar with auto-immune disorders. my closest friend has been ill for about a year. as far as i can tell, her main symptoms have been lethargy, insomnia, nausea, diarrhea, bruising, and joint pain. she's having trouble getting any sort of concrete diagnosis. she was given the blood test...
  7. arg. what do you all take for heartburn then? i only get it once in a while, but i don't know what to take for it now. any suggestions?
  8. lisinopril and hctz. they seem alright to me.
  9. has anyone ever had a problem with tums? i have noticed that i am occasionally nauseated after eating tums. carrie
  10. i also would use a pill like that sporadically, maybe once or twice a month, when i go to a bbq or party. it would be nice to be able to pick on something that i normally wouldn't have. i would pay 2 dollars (us) for that. WHAT I WOULD PAY UPWARDS OF $5 FOR would be a pill that would stop a gluten reaction when it's already started. lol, keep dreaming...
  11. as for bread, i absolutely love kinnikinnick bread. it is by far the best bread i've had. i've tried most of them at this point, and the two best are the cheese tapioca bread and the many wonder multigrain rice bread. yum. they are so good, i have to keep my husband from eating them, and he's not gluten-free. their bread is a little expensive (4-5 us...
  12. i just ate planters cashews and am having a gluten reaction, exactly 45 minutes after eating-like i always do. can anyone tell me if planters has a problem with contamination? bubble
  13. i am too. my hubby is unbelievably supportive. in fact, i don't think i could have gotten through this without him. has he done any reading on it? you really need to have him understand what this means and how serious it is. have you tried getting him to look at this site?
  14. i think the best place to start would be to chat about what kinds of diets we're on and what has worked for us in the past. what do you think?
  15. with all of the food issues we have, joining something like weight watchers isn't always an option. i was wondering if anyone would be interested in being part of an online celiac weight loss group? we could share diets/recipes, talk about frustrations, and encourage each other. what do you think?

*sorry this is so long* not to continue beating a dead horse, but i just wanted to add my two cents. this is more for the medical professionals. i just want to share my story so that they may understand why people distrust/dislike doctors. this is long, bear with me, please. a few pieces of info you may need. i belong to a managed health clinic....
  18. hi all, a synopsis: diagnosed 11 months ago via enterolab, been gluten free since, am hypothyroid-but i'm on meds and i tested normal a month ago, was borderline anemic and deficient in b vitamins and some others before diagnosis. i am always so tired. i'm finding it really difficult to be productive. the fatigue can be overwhelming. i don't notice...
  19. hey, there's a message on this board with a recipe for poori, it's an indian flatbread. but it's fried. and it's suuuuper yummy. no need for the sugar/cin, just try it plain. my hubby and i make it frequently, he loves it and he doesn't need to eat gluten free. we eat it with hummus, or cheese (goat primarily), or whatever we think would go well with...
  20. heh heh, great minds think alike. i would loooove to talk to you about this. i have also been collecting recipes, as i am a bit of a cook myself. i was collecting them/creating them with the idea of putting out a gluten free cookbook. send me a pm so we can chat carrie
  21. wow. i'm both happy and sad to see that i'm not alone. some days i'm just so frustrated. i see this glazed look appear on people's faces when i tell them that i'm not feeling well. it hurts. that leads me to the place i was on the night i made this post. i felt alone and ill, and unhappy. now, i know i'm not alone, and that's a good thing. a bit...
  22. hey guys, i'm feeling a little down about my health. do any of you ever feel betrayed by your own bodies? i was diagnosed at 14 with polycystic ovarian disease, at 16 with ibs (hahahahahaha), 19 with hashimoto's thyroiditis, 24 with asthma, 27 with hyperinsulinemia, and 29 with celiac (as well as other smaller things-seborrhea, borderline anemia, malabsorptive...
  23. i also have pcos. i don't know if there's any sort of connection. but, i know that the incidence of irritable bowell syndrom appears to be higher among pcos'ers, so there might be. if you want, you can send me a pm, and we could chat about it. c-
  24. i'm glad that other people have had similar things. as far as whether or not it is my duodenum, i don't think so. it's a little too low. i have that too from time to time, when i get glutenized (heh), this is slightly lower and slightly to the left of that pain. i thought for a while that i might have a cracked rib or something, if that helps you understand...
  25. i've noticed that when i accidentally ingest gluten i get a tenderness on my left side right where my spleen should be. do you think it's possible that gluten could cause my spleen to become irritated? i know that it's part of your immune system... any thoughts?
