  4. For us? We just took the whole family gluten free. I couldn't figure out any other way to do it so that it worked. The cross-contamination was so easy to do, and the stress of constantly being aware of that started to show, with having two butter dishes, two spreads of every kind, constantly washing hands so a small person didn't eat something with gluten...
  5. Has she come across 'fructose Malabsorption' in her research? I only just found this recently, but it's not something almost ANY doctors in the US ever look for. In Australia, though (I'm in the US, but I've been researching, too. :-) ), they are finding that 35-45% of people with gut symptoms have mild to severe fructose malabsorption. It's not genetic...

  9. Thanks for the reply, sue! :-) Yeah, I'm kind of worried that the limited diet might deter the stabilizing, too. I know I could eat 'more' of my food to try and get more calories, but I just don't know if that will do it or not, or if there might be something else, you know? I suppose I kind of hope there's something else, since eating more of the foods...

I'm on it 7 months now, and it's much easier to figure out what I can and can't eat, and recipes for that.   11. Short answer: Yes, you can be glutened. However, absolutely plain beans, rice, or cooking oil don't have gluten (to my knowledge). But... - just like the rice mentioned, the beans may be cooked in broth, which could have gluten - You may ask for no seasoning, but the chicken or the beans may come 'pre-seasoned' with something that contains gluten...
  12. So far, the doc isn't sure. I've been fortunate to have a doctor who tests the ever-loving doo doo out of his patients, from food allergies to other auto-immune diseases - and so far, I seem to simply have celiac plus reactions to other food. If I stay away from the other foods, I seem to do okay, but the doc and dietician have me trying to find new foods...
  13. I'm getting to the point where I need to stop losing weight, but so far I haven't managed to do it. :-( I gained about 40 pounds in the 6 months before I was diagnosed celiac sprue. In the 7 months since I was diagnosed, I've lost about 55 pounds. I'm now 1 pound away from my 'as low as I wanna get' weight, and the weight loss doesn't seem to be stopping...
  14. I'd second what everyone else has said: it could be other foods. Celiac folk are more likely to have other food issues, and be more sensitive to dyes and additives in our foods. I was horribly ill after I went gluten free, too. Nausea, headaches, earaches, etc... One thing that helped me was this: 1 - cut my diet to the bone. Fresh fruits and veggies...

  23. I had a sheet of Nori seaweed and got glutened, best I can tell. Later, I was reading that many of the companies that process nori seaweed do it on machines shared with wheat products. However, I've been having a heck of a time finding information about what brands might be gluten free and safe. Anyone know of any?
