Sounds about like how I was! I was diagnosed in August 2009. I got very careful about gluten, very fast, too. I had the allergy tests which only showed a few mild allergies, no other auto-immune problems or other organ issues. I had brain fog, no energy, pain, and nausea, constantly. Convenience, both in time and in money - definitely in related to the spontaneity side of things. Also, re: gluten intolerance? That can mean two things, depending on who you're talking to and how they refer to it. Celiac disease is sometimes referred to as gluten intolerance, which the doc could have tested for (although how accurate it would be while you are off gluten, even for 2 weeks, well...). If you're staying away from corn by avoiding iodized salt, then yeah, you'll want iodine from somewhere else. To my knowledge, yogurt and eggs are NOT good sources of iodine. ha, oh that's too funny that you ordered the book. From what we've tried, I can tell you that the amaranth crackers aren't too bad, if plain. The teff crackers were a bit dry, but if you added some sweetener and a little moisture, they didn't make bad cookies. My kids can have peanuts, and peanut butter went well with them, too. When I first started all this gluten-free stuff, I found out pretty quickly that I couldn't have corn. Then it was rice, then buckwheat, then sorghum...the list goes on. Latest I heard was 'no,' although some people might feel that the risk is acceptable. The change, I understand, is that they no longer have a dedicated gluten free line for their chocolate. I had a very similar experience in the Tucson area in Arizona with our own Celiac Guru, LOL. My first Gi was useless. He did the tes, told me it was positive, gave me a dietician's name, and it was adios, T.H. Have you checked out Fructose malabsorption, as well? It probably wouldn't be the only problem, but it involves a LOT of foods, fruits, veggies, and grains. I felt much worse on a gluten free diet than I ever had on one, though I had a definitive celiac disease test results.
