  1. It's common to not see damage visibly during the endsocopy, but the samples may show damage.
  2. If he does have celiac, then not being 100% gluten free will hurt him. If your daughter is celiac, then it is very likely that he does have celiac, since it's genetic.
  3. Finding a good doctor makes a great deal of difference! My daughter's new doctor didn't hesitate to order the celiac tests.
  4. That's great! This forum has been so helpful. I don't think that I would've had the courage to switch doctors, put my daughter on a gluten challenge, and finally get the bloodwork done without their help.
  5. I don't have a definitive diagnosis and if someone offered me a million dollars to eat gluten for 3 months I would refuse. LOL! Seriously, you know your own body best. As an adult, you can choose what goes in your own mouth. People who really love you and care about you will support you. Lots of people don't even understand what celiac is or don't...
  6. If you had a negative test and had all your symptoms resolve gluten free, just have the doctor diagnose you with non-celiac gluten sensitivity. That's still a diagnosis.
  7. Not yet, but thanks for the suggestion! We see the doctor on 11/4 for follow up and I will ask her. My daughters RBC, hemoglobin, and hematocrit were all elevated higher than the normal range.
  8. Thanks. That's what I hope for as well. It really doesn't matter if it's positive or negative, I just want it to be clearly positive or clearly negative. No ambiguity!
  9. This was long and hard fought for! After researching like crazy, switching doctors, and doing a 13 week gluten challenge, my 8 year old daughter got her celiac bloodwork (and a few other tests) done today! I'm so glad that we've made it this far and it'll be wonderful to be out of limboland, no matter which way things go. I'll just be glad for an answer...
  10. Thanks, I posted a link to the article on my Facebook. So many people use rice as a substitute for everything wheat based and that can be problematic.

  12. It is my understanding that a non stick waffle iron surface will stay nice for a long time if you never wash or spray it. Recently, I did get some cooking spray that was gluten and soy free. (I don't use it on my waffle iron, but use it in other cooking) It was coconut oil based. I got it at the Amish discount store for 99 cents. I think that the original...
  13. How new is your waffle iron? I don't ever spray or grease mine--it's non stick. ETA: I just re-read your original post where you said that your waffle iron is brand new. Provided that it is a non-stick surface all you should do is lightly brush it with olive oil to season it before your first use and then not put anything on it anymore. Non-stick spray...
  14. I have struggled with horrible environmental allergies and 1 year ago, I decided to eliminate sugar for a while. (when I say sugar, I'm also referring to honey, agave, maple syrup, etc.) I went from being sick and congested most of the time to being healthy and being able to breathe so much better! Now I use sweeteners very, very sparingly and my allergies...
  15. This definitely is a concern. Since I became aware of this issue, we use white basmati rice from India and limit our consumption of brown rice. I usually try to buy corn pasta instead of rice pasta. The source definitely makes a difference, some types of rice are much higher in arsenic than others.
  16. Wow, 1 year? So they expect an ill person to keep on eating gluten for an additional year in order to get an endoscopy? That's crazy!
  17. I bought some small glass dishes with snap down lids. They are pyrex brand and come in various sizes. I have a 2 cup size and a 4 cup size. They are great for sending leftovers to work with my husband or for packing something for me to eat on the go.
  18. Nicole, am I missing something? I don't see any coconut flour in that recipe.
  19. I think that's the best plan, is just to send him a packed lunch. I hope that he feels better soon!
  20. Welcome to the club! We should have a sub forum here called "Strictly Gluten free Without a Diagnosis." LOL! I won't do a gluten challenge ever again, because the neurological implications are too scary, so I live a celiac lifestyle and am getting to the point where I'm fairly comfortable with that. I wish that it had been possible to get a DX, but...
  21. Good. I'm pretty tired of DD's gluten challenge and ready to get it over with!
  22. 4-6 months for a challenge? I thought that 3 months was enough. I'm almost to the 3 month mark of challenge with DD and was going to take her in for bloodwork next week.
  23. Sam's Club now has certified gluten free coconut flour! So I now have a 5 lb bag! What are your favorite ways to use it?
  24. I make a really good communion type bread/cracker with just gluten free oat flour, olive oil, warm water and all purpose flour blend. If you could find a tapioca and potato free flour blend, that would probably work.
  25. Have you tried baking your own? My kids love bread made with Pamela's bread mix. I also have a favorite "from scratch" recipe that everybody enjoys. Open Original Shared Link
