A very old topic, brought back to life. Ground beef, labeled as exactly that, is pure beef. While there is a chance of cross-contamination from the grinder, it still would not be a gluten worry. There is no difference between tapioca flour and tapioca starch. Potato starch is not the same as potato flour, but in some cases you will be able to substitute without a big difference. Potato starch is more refined and has less of a thickening effect and provides no fiber content. -

Sorghum is safe. Spelt is indeed a form of wheat and according to some sources has an even higher concentration of protein (gluten) than ordinary wheat. Spelt is defintely to be avoided. You can make a decent gluten-free beer substituting sorghum for barley. -

Monoglycerides and diglycerides emulsifiers derived from vegetable oils. The Canadian Celiac Association considers them to be acceptable in a gluten-free diet. Shelley Case's Gluten-Free Diet A Comprehensive Resource Guide Expanded Edition also includes them as gluten-free ingredients on page 44. -

If you are in North America, neither caramel color nor maltodextrin is a cause for concern. They are made from corn. Malt must be avoided since it is almost always made from barley which is a source of gluten. Outside North America, it is possible that caramel color or maltodextrin could be made from wheat. Many people do. I don't really know about myself. The house is not completely gluten-free, but the cutting board and wooden spoons never come into contact with gluten-containing foods. Welcome to our group. Toasters are impossible to clean well enough, and crumbs fly around when the toaster pops up. They are not that expensive. Get a new one and use it exclusively for gluten-free items. Dishes are not so clear. Good dishes with unscratched hard surfaces can be cleaned successfully. Scratched plastic is problematic. I don't drink vodka often, but when I do my preference is Smirnoff. It is made from corn--no gluten-source grains to worry about, even if you don't believe in distillation.
