"Modified" in this sense means partially processed. Nothing is added, but some of the chemical structure is broken down. Corn starch is gluten-free to begin with. If the source is wheat, it must be clearly disclosed under US law. I have never, ever, heard of rye or barley being used to make modified starch. In North America, modified food starch is usually...

ARCHIVED Insensitive Spouse
psawyer replied to p38lightningbolt's topic in Parents, Friends and Loved Ones of Celiacs
This is a seriously abusive situation. I agree with the post above. Leave now and take your daughter with you, before either of you experience physical harm to go along with the emotional harm that you have already suffered. It will only go downhill from here. LEAVE NOW. Counseling will only work if the parties are receptive. Divorce or not, you can not... -
Yes, there are, in Ontario and Alberta. I don't know where all of them are, but there is one on High Tech Rd (Yonge and Hwy 7) in Richmond Hill, ON, and one on Dixon Road in Toronto, east of Pearson Airport. Open Original Shared Link It has a "find your local Outback" button. I can second the thought that The Keg is celiac aware and safe, at least...

This was in the Board/Forum Technical Help section. I have moved it to the Restaurants section, as it is clearly a better fit there.

ARCHIVED Does Anyone Want To Witness Me Being Pummelled?
psawyer replied to Canadian Karen's topic in Related Issues & Disorders
Karen, this could be as simple as a problem with your browser. Completely closing it (exiting all windows and tabs) and restarting it has resolved similar problems for me from time to time--no cursor, or keys generating the wrong character (usually special characters). I use Mozilla Firefox, currently 2.0.0.7, but I have seen this problem on rare occasions... -
The Jack Russell terrier is a very energetic dog. Most are very affectionate, but their high energy level may be challenging. My dentist has a Jack, and he told me that it would be better called a "Jack Daniels Terrier" because it was driving him to drink I have also heard the sobriquet "Jack Russell Terror," but they are really good dogs. They just have...

ARCHIVED Other Reasons Villi Blunting
psawyer replied to holdthegluten's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I will look at the source you mention. I still think that you should try a soy- and gluten-free diet. Your results show indications of both intolerances. If your symptoms disappear on this diet, you could try reintroducing a gluten source (plain bread is the easiest and clearest) to see it symptoms recur. If a couple of weeks of eating ordinary bread... -
ARCHIVED Celiac Disease Cured With Stem Cell Transplant
psawyer replied to a topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I have both celiac disease and type 1 diabetes. By strictly following a gluten-free diet, all of my celiac symptoms are gone. There are challenges, but I can manage this, and as long as I do, there will be no direct symptoms and no collateral effects such as colon cancer. When you stop eating gluten, the antibodies disappear within a number of weeks. ... -
ARCHIVED What Can We Do To Hurry Along A Labeling Law?!(i'm In The Us)
psawyer replied to a topic in Coping with Celiac Disease
A major issue here is that for the law to be meaningful, it must be enforceable. To be enforceable, compliance must be verifiable. Scientifically, it is impossible to prove the 100% absence of any particular substance. Tests for the presence of a substance have thresholds below which they do not detect the substance, even if it is there. Also, the more... -
ARCHIVED Other Reasons Villi Blunting
psawyer replied to holdthegluten's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
From what you say, it sounds to me that you are a celiac who is also intolerant to soy. What is your source for saying that other factors can cause villi blunting? Can you provide a proper study to support this? Your next step is a diet which is both soy-free and gluten-free. -

ARCHIVED Beers Other Than Redbridge?
psawyer replied to Bread Belly's topic in Gluten-Free Foods, Products, Shopping & Medications
As far as I know, the only gluten-free beer available in Canada is La Messagere, made in Quebec. Here in Ontario is is stocked at selected LCBO outlets, but if your local store does not carry it they can order it for you. $17.95 for a 6-pack. It's decent, but it can't quite replace Guiness. -
ARCHIVED Adding A Picture To My Posts
psawyer replied to cruelshoes's topic in Board/Forum Technical Help
The general answer is that you use the IMG html tag. As in, which links to a picture one of our cats. But, on this board, the IMG tag does not work (I believe it has been intentionally disabled). You can use the URL tag: Click here to see the cat. The coding for that is: (url=http://i42.photobucket.com/albums/e339/tortoiseshell2002... -
ARCHIVED Natural Flavors: Worth A Risk?
psawyer replied to jaimi alderson's topic in Gluten-Free Foods, Products, Shopping & Medications
I have posted this before many times. including very recently--enough that it could be considered a duplicate post. I will post it anyway. I asked the nearest moderator, and told myself it was ok Here is a list is companies/brands with a policy of clearly disclosing any and all sources of gluten in the list of ingredients. With these brands, if you... -
ARCHIVED Pickels
psawyer replied to little d's topic in Gluten-Free Foods, Products, Shopping & Medications
Modified food starch is usually derived from corn. If the manufacturer does not have a policy of clearly labeling gluten, then you should call and ask. High fructose corn syrup is gluten-free. Manufacturers/brands that I am aware of that will clearly disclose gluten in the ingredient list are: Arrowhead Mills, Aunt Nelly's, Balance, Baskin Robbins... -
ARCHIVED gluten-free Restaurant Menus Online
psawyer replied to laurie1067's topic in Gluten-Free Restaurants
There are two distinct things to be concerned about regarding fries. First, some fries are not just pure potato, but have a coating on them. Often this is a flavoring for "zesty fries" or "curly fries" or some other name. The coatings generally have flour, and flour is gluten. To be safe, the fries have to be plain potato with nothing added. The second... -

ARCHIVED Soy Sauce
psawyer replied to Lawrence's topic in Gluten-Free Foods, Products, Shopping & Medications
Karen, caramel coloring is not something I worry about. Shelley Case writes in her book Open Original Shared Link that it is (1) usually corn based in North America, and (2) so highly processed that no detectable gluten remains even if the source were to be wheat. That is good enough for me. -
ARCHIVED Are Fountain Cokes Gluten Free?
psawyer replied to Aligray's topic in Gluten-Free Foods, Products, Shopping & Medications
While not zero, the chance of cross-contamination in a soda machine is minimal. I have never found an soda that has a gluten-containing ingredient, so the risk of getting a bit of another flavor does not worry me. If the cup drops from the machine and then is filled, the risk is about zero. If the fountain is manually operated, there is a chance that the... -

Moderator speaking: Yes, it is a celiac board. However, this particular forum within the board is for discussion of non-celiac topics, and as long as the board rules are followed, you can discuss just about anything here. If DogtorJ wants to respond, it would be fine. -

I am an insulin dependent diabetic, and have a Medic Alert bracelet disclosing this, as everyone with type 1 diabetes should. Hypoglycemia due to excess insulin or insufficient food can be life threatening, and can be mistaken for intoxication. Since I already wore the bracelet, I had it updated after my celiac diagnosis to include "no gluten - celiac disease...
