  12. Welcome! It could be an issue with lactose. You said you are fairly new to celiac disease and the diet. If your body was damaged by celiac disease, your intestine will not heal overnight. My nausea and vomiting continued for several weeks after going gluten-free. It was about three months before I was generally symptom-free.

    Almost anything that contains sugar can be malted. It does not have to be barley, although that is the most common source. When the source is unknown, and the product is not stated to be gluten-free, malt is a red flag. But in this case, I would gather that the source of the malt is not a gluten grain.

  19. They do have to disclose wheat on the package. But sometimes a product, particularly a seasonal one, is made in more than one facility, with slight variations in ingredients. In such a case, a generalization can not be made on the web site. Always read the actual label.

  21. Bad idea. Each time you ingest gluten, you restart the autoimmune reaction that damages your body. It can take a few weeks for the system to recover. Cheating once a month would render the other gluten-free days of the month pointless. This isn't like diabetes, where the effect of some sugar is gone from the system in 24 hours.   22. I had severe symptoms for years prior to my diagnosis: diarrhea, nausea, vomiting, cold sweats, anemia, and others. I saw a significant improvement within six weeks, but it was more like six months to feel normal. A follow-up five years later showed normal villi. In other words, complete healing of the intestine on a strict gluten-free diet.
