This is from her book, "Nearly Normal Cooking for Gluten Free Eating." I also found it posted on the web. All Purpose Nearly Normal Gluten-Free Flour Mix 1 cup white rice flour 1 cup potato starch 1 cup cornstarch 1/2 cup corn flour 1/2 cup tapioca flour 4 tsp xanthan gum On the web I found posted her suggestion for substitutes if...

ARCHIVED Gluten Free Phyllo Dough
DMarie replied to wildwood's topic in Gluten-Free Recipes & Cooking Tips
Ok - so if you make this you will have to let us know how it goes! (especially how it tastes) I will look for my sheet with the amounts/ingredients for Jules All Purpose Flour. I'll have to post it. She may even have it posted on her website - or you might even google it. I know it was posted in a newspaper article, I want to say, which also gave... -
You can actually mix up Jules gluten-free Flour Mix. I have the recipe at home. I found it posted with a biscuit recipe of hers a while back. This was before she was mixing her all purpose flour mix and selling commercially. I haven't done a cost comparison to know if it comes out cheaper than buying her mix online. I tend to avoid corn starch - so I...

ARCHIVED Gluten Free Phyllo Dough
DMarie replied to wildwood's topic in Gluten-Free Recipes & Cooking Tips
I just finished watching someone make gluten-free Phyllo Dough on YouTube just a short time ago! He used Jules gluten-free Flour. Looked good at the end - but seemed time consuming (and he did say it was time consuming - plan to spend 1-1/2 to 2 hours rolling out dough). You might search YouTube (I don't remember what his name was - I originally went to... -
ARCHIVED Bloodwork I Should Request?
DMarie replied to DMarie's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Thanks! Don't know if the doctor will listen to me, but will be asking what will be included on the panel (assuming she will do the panel as requested). My son is rarely at the doctors office, more often than not if he has gotten sick, it is easier to go to the local Care Now. I had to make an appointment to talk with her first. She is a DO, I do like... -
ARCHIVED Bloodwork I Should Request?
DMarie posted a topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
What bloodwork should I request to have my son tested for Celiac? Myself and my two daugthers are gluten intolerant (negative bloodwork for myself and 1 daughter, other daughter never tested before she dropped gluten). When I was tested (and when my one daughter was tested), I believe I had asked to be tested for celiac. I have no idea what tests were... -

ARCHIVED Is There A Substitute For Sweet Rice Flour
DMarie replied to twe0708's topic in Gluten-Free Recipes & Cooking Tips
I also wanted to add that unless you are using "superfine" rice flour - that might account for the grittiness. I find things made with regular grind rice flour are heavy and gritty. Superfine makes a BIG difference. Just my .02 worth, in case you try again. You might replace the sweet rice flour with tapioca flour (keeping with a lighter pancake... -
ARCHIVED gluten-free Multigrain Bread
DMarie replied to homemaker's topic in Gluten-Free Recipes & Cooking Tips
Okay, so I was able to give this recipe a try this weekend, but made some subs to make it casein free (as well as corn free). Also, I tend to like less rice flour. For the 2 cups of Brown Rice Flour, I subbed 1/2 c Brown Rice Flour, 1/2 c Sorghum, 1/3 c Arrowroot, 1/3 c Potato Starch and 1/3 c Tapioca Flour. For the 2/3 c of Corn Starch I subbed another... -
ARCHIVED 1st Loaf Of gluten-free Bread
DMarie replied to twe0708's topic in Gluten-Free Recipes & Cooking Tips
My directions for the loaf I am "experimenting" with are for mixer/oven method. I eventually plan to try my bread maker - but wanted to get to where I was happy with this method. I have 9x5 bread pans. The recipe I am using actually calls for two 8x4 pans. I don't have that size - and I would definitely have short loaves if I split the bread "batter... -
ARCHIVED 1st Loaf Of gluten-free Bread
DMarie replied to twe0708's topic in Gluten-Free Recipes & Cooking Tips
The tops of many of my loaves of bread often look like that (sort of sunken). Most of them tasted good - but I was frustrated with why it looked so wonderful as it was cooking - then all of a sudden it would "deflate." I read that this is an indication of too much liquid. So, I have been experimenting with one recipe that I really like - and taking... -
ARCHIVED gluten-free Multigrain Bread
DMarie replied to homemaker's topic in Gluten-Free Recipes & Cooking Tips
Thanks for the tips on replacements for milk powder. I had actually wondered about nut flours (I always have some almond meal/flour on hand). Hmmm... I will post my results if I end up making this bread. Thinking I will have time this weekend. I have a recipe I am reasonably happy with now - but the picture of the bread looked so good!! And... -
ARCHIVED gluten-free Multigrain Bread
DMarie replied to homemaker's topic in Gluten-Free Recipes & Cooking Tips
I have a question. What is the purpose of powdered milk in a bread recipe? We are newly casein free, and I don't have soy or rice milk powder (and I would really NOT like to have to purchase another expensive ingredient). Can I just leave the milk powder out? Should I use something else? Should I use rice milk (or almond or coconut) in place of... -
ARCHIVED Recipe Tips For Making A Great Gluten Free Pizza?
DMarie replied to Liveenjoylife's topic in Gluten-Free Recipes & Cooking Tips
A pizza stone (or baking stone) is a round (or square), flat stone (can't think of another way to describe it!). It is not metal, does not have a lip, is about 1/2 inch thick, is beige or light khaki in color and is made of stone. I love my stones for baking anything! Things bake evenly on the stones and I normally do not have a problem with sticking or... -
ARCHIVED Recipe Tips For Making A Great Gluten Free Pizza?
DMarie replied to Liveenjoylife's topic in Gluten-Free Recipes & Cooking Tips
Both my girls and I love the pizza crust recipe I found on Open Original Shared Link I noticed you said oil free. Most recipes I have seen have a little bit of oil in them. This is probably a really dumb question - but can you use a shortening (melted) - like Spectrum...or maybe melt a small amount of the Earth Balance sticks? If not - I am not sure... -
ARCHIVED Trouble With Kinnikinnick Donuts
DMarie replied to finally diagnosed's topic in Gluten-Free Recipes & Cooking Tips
While I like Kinnikinnick products, I sometimes do not feel right after eating them. I have tried the donuts, did not feel right after, so haven't eaten them again. Sometimes I can eat the English Muffins - but on occasion it bothers me (I can relate to the being irritable - also I get a headache, seems like my heart rate might go up - it just is a not... -
ARCHIVED Craving Cinn. Rolls
DMarie replied to Chrissyb's topic in Gluten-Free Recipes & Cooking Tips
I had a co-worker share the recipe below with me. It is from this website: Open Original Shared Link She has made one alteration to the way she prepares these. Instead of "rolling out," she used all the milk called for in the recipe and then just alternated the sugar/cinnamon mixture and dough using a muffin tin (so you spoon some dough in the muffin... -
ARCHIVED Need Gluten/casein Free Biscuit Recipe
DMarie replied to DMarie's topic in Gluten-Free Recipes & Cooking Tips
Hi Denise, Yes, exactly. If the recipe calls for 1/2 cup oil, I use 1/4 cup oil and then 1/2 cup applesauce. That has worked well in the Quinoa Breakfast Cake I make almost weekly and also in some Apple Muffins I made recently. I have been doing a fair amount of cooking. Discovering that my one daughters lingering problems may be linked to a... -
ARCHIVED Need Gluten/casein Free Biscuit Recipe

Earth Balance is a butter/margarine substitute. I use Earth Balance Buttery Sticks. I don't think it really imparts a buttery flavor - but I believe it is a step up in ingredients from Butter Flavor Crisco. Doesn't have all the trans-fats (or whatever it is in shortenings, etc that we don't want). It seems to work well. I make Buckwheat Chocolate... -
ARCHIVED Need Gluten/casein Free Biscuit Recipe
DMarie replied to DMarie's topic in Gluten-Free Recipes & Cooking Tips
Hi Denise, Thanks for the new link! I love looking at new recipes - and hadn't stumbled upon this website before. :-) So now I have yet another flour mix to try (with the millet). I have wondered about the sugar/agave nectar that all of these recipes seem to want to add. I have been cutting the sugar in half. One recipe called for 2 tbs sugar... -
ARCHIVED Need Gluten/casein Free Biscuit Recipe
DMarie replied to DMarie's topic in Gluten-Free Recipes & Cooking Tips
Hi Denise, I love the Gluten Free Goddesses' website! I have made numerous recipes and have loved them all. My favorite is her Quinoa Breakfast Cake (only I sub applesauce for half of the oil, I use gluten free oats for the quinoa, I add nuts instead of raisins - and I make them as muffins...even my husband LOVES these muffins!). Can you post... -
ARCHIVED Need Gluten/casein Free Biscuit Recipe

Thank you everyone! I did find the web page, and did spend some time drooling over the wonderful looking picture! I am going to make these in the morning! Hopefully dd likes them. I am pretty easy. Gluten-free biscuits don't taste exactly like gluten biscuits (though I had a recipe using dairy that was pretty darn good) - but I don't look for... -

ARCHIVED Need Gluten/casein Free Biscuit Recipe
DMarie posted a topic in Gluten-Free Recipes & Cooking Tips
Does anyone have a tried and true gluten and casein free biscuit recipe? I had a favorite recipe, but it was NOT casein free. However - it looks like at least one of the 3 of us that are gluten free will need to drop casein. So - back on the hunt for new recipes to replace the favorite recipes that already replaced gluten stuff a couple of years ago... -
ARCHIVED Dallas Or Plano Texas Great Restaurant
DMarie replied to DallasJayhawk's topic in Gluten-Free Restaurants
That is such a bummer they closed down!!!! I went there once with both my daughters - we loved our meal!!! It was a good hour drive though - so not somewhere I could go frequently. I was just telling my co-worker that I wanted to go back.
