FYI I don't know where you live but I have been to Allcaneat in Randolph and Twist in Millis IMO is much better. If you have the opportunity you should check it out. There is a restaurant just 2 miles down the road that has a limited gluten-free menu that we frequent a few times a month ( they are also good) but we will goto Twist now half of those... -

I do not have any experience in opening any business but I can tell you about one that recently opened near us. Firstly they do not advertise outwardly they are a gluten-free bakery . There name is Twist Bakery in Millis Ma. when you go inside they have a sign advertising their allergen free items. They are in a strip mall and get many walkins this way... -

So sorry to hear all your difficulties. As each child reacts differently to cross contamination tummy pains, diarrhea , nausea and behavior issues are common threads. I personally have never had fever as a side effect and found nothing OTC to help with the pain. I give my DD Tylenol to help her sleep and Tums as a Placebo. As you are going to see your... -

For us it was a few days for the first signs of improvement but up to 2 months for all her symptoms to go away. Lactose was a problem for us as well we had to strictly reduce it. -
my experience with that is to freeze the cookie dough on the cookie sheet for about 15 minutes and then cook them. I think the fat/oil ratio in the dough is too high and that makes it spread too much ( correct me if I am wrong folks) .

Have you tried other grains: Quinoa Amaranth Millet cooked with cinnamon and sugar goes well How about coconut flour recipes. I'll bet you can find a pancake or waffle recipe you can adjust. -

Thanks for your input. Unfortunately for my DD she has very high BMI so treats are limited to 1 per week per Pedi guidelines. I also am supposed to cut out the majority of carbs as well, so there goes most of my hiding spots. But more importantly I want her to enjoy eating a vegetable, without it being hidden. Me and my hubby eat a large variety of foods... -
A rice dish would work also. Rice and chicken, shrimp, beans or veggies Lentils and small diced veggies stew- like Kielbasa sliced and baked in a casserole pan with 1 cup ketchup and 1 cup WHITE sugar. Send him in with his own mat for snack time. Ask the staff to insure hand washing before and after snack and lunch time . NOT just antibacterial wash that doesn't do anything. No playdoh, crayola modeling clay or macaroni art. No licking stamps and envelopes. Ask if they allow birthday (celebration) foods brought in and ask to be notified well... -

Flaxseed in seed form or meal ? Meal is definitley used as a supplement (good source fiber etc..) but is very gelatinous and although you can certainly experiment I don't think you'll get anything but a doughy/thick base from it. Usually I supplement the meal from 1/8 of a mix of other flours . -

You are the first person I heard say they got a pain medicine that worked (other than obvious one ie: percocet etc..) . I am going to check on that. Our experience is that the stomach pains lessened as my DD ate less gluten and healed (makes sense) however we can tell within hour/s when she get CC'd for her symptoms are Diarrhea and cramps. After 2 yrs gluten-free my DD also has LOTS of gas. All her regular tests incl cholesterol are fine . I believe she is lactose sensitive so I give her Lactaid to prevent Diar.. but the gas is still there. I wonder the same thing . She definitley does not too much fiber as its a struggle with the veggies I actually have to use gummy fiber supplements... -

Are you saying when you accidentally got glutened you were sick for 3 weeks? The longest my dd has been sick is 2-3 days. I have never heard of anyone being sick for that long before for an accidental glutening. Do you have other ailments? Is this more common than I think ? -

My opinion: Corn pasta: cooks well and will reheat ok if dipped quickly in hot water to refresh it other wise it solidifies. The cheapest in cost Quinoa pasta: cooks well, keep an eye on it as can over cook easy. I no longer use quinoa pasta as I don't find it tasty enough to offset the cost.
