  4. Me, neither, but I do occasionally get cramps from milk but never cheeses, yogurt and so on. Only milk and only when I drink a whole glass or more so I just drink it half a glass at a time. Does not affect me in cooking and baking, thankfully. I love to use coconut milk in recipes.

  10. Sear some unpeeled potatoes, add thick chunks of gluten-free chorizo and season with a touch of smoked paprika and S and P, and throw the whole pan into the oven to roast. Sprinkle with scallions or ramps. I know that you cannot unfortunately have dairy ( ) but for those who can you can sprinkle with some old cheddar, manchego, whatever.

  13. My dietitian and GI surgeon told me that here in Canada the limit is 10 ppm (unsure if that is a new thing?). I don't go by that, anyway - my limit is 0 ppm but of course I am aware that things can happen...
  14. I make delicious gluten-free potato ricotta gnudi as well as pasta and sauces. My husband and I travel to Italy twice a year and I find it extremely difficult to pass on the gluten-laden dishes there. Traveling to different countries is when I am most tempted - at home I'm not as I make everthing myself. But Italy....sigh....
  15. Me, too! I've been strictly gluten-free about 18 or so days and am not myself. I felt much better on gluten as I did not feel ill at all and now I do. Not bad, just yucky. Plus my short-term memory is atrocious - I struggle frequently to find a word when I am speaking. Sooooo unlike me. Hope this ends soon as it is sort of disconcerting!

  17. They can be made a couple of different ways but I suspect in this case they are like potato pancakes (i.e. grated, mixed with egg or whatever for binding and seasoning then fried). They are very good!

  20. That is what I am doing, too - cooking with naturally gluten-free stuff rather than snacking. And lots of yummy gluten-free baking. And continuing to teach cooking classes, both naturally gluten-free and gluten-free baking. It is a lot of fun experimenting with all sorts of flours!
