  1. In addition to what has been mentioned, mine would say, Of couse I am lucky to have celiac in order to lose weight! Lucky, lucky, lucky me to have chosen this disease. And no, I cannot have just one piece of cake.
  2. Oh, darn it. What an unfortunate thing to happen on such a special day! I, too, recommend Imodium from personal experience. I take it when on long-haul flights, etc. as a precaution and it really works. My Mom, who I am 100% certain has celiac, uses it frequently for her "IBS" and was told by her doctor she can safely do so. Hopefully you are feeling...
  3. You can wean him off the biscuits and gravy OR just make them gluten free! If you were to eat at our house, guaranteed you would not miss gluten. There is no need for us to eat less wonderfully than those who do eat gluten! My husband would far rather eat at home than go out. And I say that if you crave or want something that contains gluten, try to find...
  4. Aren't adult popsicles fun? I am really into them, too. My favourites include raspberry cream, blood orange creamsicle, coconut pineapple, herb-infused lemon, pomegranate yogurt and the best of all time chocolate banana with bacon. I am not a chocolate fan but the bacon puts it over the top for me.
  5. Excellent! You are more than welcome. Food is one of my passions and it is exciting for me to see others interested in it as well.
  6. Today I am making Blueberry Granita with Lime. No fat in sight!
  7. Here it is. Make sure you get the chipotle without gluten - the brands here in Canada contain gluten so I make my own chile in adobo... http://www.finecooking.com/recipes/blackberry-fool.aspx I used to each VBS, too, for many years and loved it!
  8. This is how to make gastrique: http://www.seriouseats.com/recipes/2010/09/crispy-duck-with-blackberry-gastrique-recipe.html Do you need recipes for blackberry jams or sauces or vinegar?
  9. It is a glorious Italian warm sauce with olive oil, garlic and anchovies. Don't be frightened off by the anchovies - they just provide lovely saltiness and great texture. Awesome with grilled veg or bread or even drizzled over grilled meats and fish. http://francograsso.hubpages.com/hub/HOW-TO-MAKE-BAGNA-CAUDA-AND-HOW-IT-WAS-INVENTED
  10. Will post re gastrique. You would probably enjoy a recipe for Blackberry Chipotle Fool! It is divine.
  11. Yes, 18 and I do use them as they all have different purposes. Forgot to mention that you can just buy a coffee grinder (inexpensive) to grind spices. That is what I did. And a hint on those things - dry roasting whole spices until fragrant in a frying pan really brings out their flavours a great deal. But do not burn them. I keep tons of kinds of...
  12. Are you up for making your own Ranch dressing? You can make it dairy free: http://www.janssushibar.com/?p=12757 Dressings and vinaigrettes take about 3 minutes to make and are yummimer, anyway.
  13. It is a spicy dry cured sausage. Spanish far better than Mexican. I am making my own next week. Have you used pancetta? It is basically Italian bacon you purchase in slabs that you can dice or whatever you want. Diced pancetta is awesome in stuffed baked potatoes or those peppers, not to mention tons of other delicious things. You be well, too...
  14. OK - I have over 85 spices in my pantry. I am a spice fanatic. Spices are an excellent way to add vibrance and excitement to otherwise meh food. I buy them whole, toast and grind them for my own blends. Do you have a spice grinder? Mortar and pestle? If I were you I would definitely buy: - thyme leaves - Greek oregano - a good sea salt - bay...
  15. Not tonight but tomorrow I am making Torta Pisticcina, a decadent chestnut tart with roasted almonds.
  16. Grilled Creole Shell-on Shrimp (in foil) Grilled Roasted Potatoes with Garlic Goat Cheese with Garlic and Herb-Infused Oil and Apricot Cherry Miso "Jam"/Baguette Grilled Zucchini with Bagna Cauda, Capers and Fresh Mint
  17. At least you're honest! Your dinner sounds delicious.
  18. You are welcome. And don't let these recipes restrict you - use the same principles to create your own fillings. For example, I like to add chorizo to stuffed peppers.
  19. This is an extra easy version of the pepper recipe. You can serve with rice as suggested or just throw some in with the rest of the filling. Open Original Shared Link This is a very simple recipe for bacon-wrapped chicken stuffed with cheese: Open Original Shared Link
  20. To prevent them from drying out, pound them out until they are thin (and consistent thickness) and/or throw them into a brine. Brines make them very juicy and add flavour, too. So easy to do. Then cook until just done. Roasting in parchment with a little liquid (i.e. white wine, lemon juice, capers) keeps them moist as well. How to brine: Open Original...
  21. Of COURSE you can come to our party! Tiramisu is actually very good. Not my favourite dessert (I am more of a fruit person) but my husband adores it. You should see my attempts at dancing - ZERO rhythm. I have no clue so I'll need lessons.
  22. Thankfully there are so many recipes that are naturally gluten free. As chicken breast dries so easily, make sure to pound so they are the same size so they cook evenly (unless you are cubing). Brining first, depending on recipe, can really make them more tender. Thai Chicken Curry (cubed chicken) Chicken Piccata - instead of using the flour, just...
  23. Dani, you've gone above and beyond to provide delicious gluten-free food for your parents. So sad that they cannot see it that way! Would they perhaps enjoy bacon and eggs or something else naturally gluten free instead? Not that they need to be catered to but perhaps they would enjoy that more. But the above is not the point. It is difficult to...
  24. Our lamb shoulder will be reincarnated as a meat pie with a gluten free pastry crust.
