  1. you could toss a chicken in your crockpot and use it for multiple meals! I try to keep a loaf of Elana's Pantry Gluten Free Bread 2.0 on hand (you could maybe bake it early in the morning or late at night??) Then I have an open faced sandwich for dinner - tuna, chicken, egg salad etc. Quick, easy and yummy (and cool!) One of my favorite summer meals...
  2. Thanks for all the advice! I thought I had heard that The Gluten free Girl wasn't using guar or xanthan anymore. I do use Elana's Pantry almond meal recipes a lot and I really love them. But I also love trying all kinds of other flour types. It never occurred to me to try psyllium husk. I'll definitely give it a try! Good tips for weighing the...
  3. I've been doing a lot of experimenting with "everything free" baking as I call it. I can't use xanthan gum because it's derived from corn and makes me sooooooooo sick. When I bought guar gum I couldn't figure out why it wasn't used as much since it was cheaper than the xanthan gum. Boy do I know now. The guar gum has such a distinctive (and yucky!) flavor...
  4. Within 30 minutes of eating something containing corn my stomach swells and hurts so bad I contemplate going to the ER, this lasts about 3 hours. Right after that my eyes and nose itch and burn and my throat feels sticky and I cough a lot. The next morning I will feel exhausted and like I have a cold, complete with runny nose, itchy eyes and sore throat....
  5. Check out Gluten Free Savonnerie's stuff. I got their shampoo, conditioner, hand soap, bar soap, lotion and lip balm. It's corn free, soy free, gluten free, dairy free.....among others. I will warn you that the lip balm is very bland and I don't quite care for the "taste" but I prefer it to being sick! Welcome to the soy free club. Really, it's for the...
  6. Hey, I get the frustration. I've spent 15-28 dealing with this junk. But like you, feeling great, losing weight and loving life! If you're reacting to HFCS then you will want to be careful of xanthan gum, caramel color (you'd be surprised what it sneaks into - like balsamic vinegar) and iodized salt. They all have corn stuff that I react to really bad...
  7. Two weeks ago I started in using butter trying to test and see if I could tolerate a little bit of dairy. I had just gotten back from a trip so I didn't connect starting the butter with some C difficulties I started having, and the patch of itchy, flaking skin that came back on my scalp. I wasn't feeling so great, but I attributed it to a couple of corn ingestion...
  8. I don't know about CarolinaKip, but I have a huge issue with all things corn derived. Xanthan Gum, cornstarch, caramel color, HFCS, table salt with dextrose in it etc. I'm so sensitive to it that I've gotten horribly sick from cc with potato chips, and I also had a reaction to Namaste products which are suppose to be corn free (but have xanthan gum that...
  9. Oh gross. I regret eating skittles! I do react to Skittles, but it's because of the corn. As I remember, it was listed on the back that it was gluten free. Though, with ingredients like that I'd say run out and buy a fresh pineapple for a treat instead of eating those!
  10. I'm sorry. He's a jerk. And body aches are a HUGE issue for me. Don't worry about him. He's just wrong. By the way, I have had weight issues for years and in 3 months of going gluten free I've lost 30 pounds without trying. This stuff manifests itself in different ways with different people.
  11. How funny, I'm the exact opposite. The more refined it is the sicker I am. I was cooking and grabbed powdered sugar before I realized it had cornstarch in it. Just stirring it into something (I threw it away 30 seconds later) and I had a small reaction. Caramel color will send me over the edge. I was using the random Namaste product because they say...
  12. Yesterday was the pizza crust mix, and today the cheesy pasta....which I know makes no sense because it doesn't have xanthan gum which would seem to be the only thing that could possibly be CC'd. I did some googling and it does seem that some people have reacted. >shrug< It is the only thing I've eaten that I didn't make myself 100% from scratch...
  13. Well, here I am having yet another night's sleep ruined by horrible stomach pain, bloating and all that loveliness. This is my second day in a row of reaction to what I can only assume is corn slipping into my diet somewhere. The only thing I did both days was eat Namaste products. Has anyone else reacted to this product with a corn allergy or sensitivity...
  14. I LOVE the area up here! I do homeschool. I love it. It was so much better for my kids. They are loving it. Don't you love all the stereotypes about homeschoolers? I just have to laugh when I hear some of the things people think. :)

  15. I am up in Hayden Lake. The greener area of Idaho ;) with that said, you are in the warmer area for sure! :D

  16. I am a fellow Idahoan! You are in the South then? :D

  17. I used to do the fritos and coke thing when I had nothing else....but now corn makes me insanely sick so I can't even turn to that. I guess I should have complained. I was just so caught off guard I didn't even think about it.
  18. I had to take a 2 week business trip to Maryland and it had me so freaked out about food that I couldn't sleep the night before I left.I took some peanut butter and quinoa crackers, lara bars and apples and oranges to make sure there was something available and the location I was at was pretty good about making safe food for me (VERY bland and dry, but safe...
  19. Have you had any trouble with reacting to something that says it's corn free? I had some Ruffles Natural chips with sea salt and got so sick I almost ended up in the ER last night. I have never had such excruciating abdominal pain and bloating. I looked up the chips on this list ( Open Original Shared Link ) and it says that reactions have been noted...
  20. Hey, I totally know the suck that you're going through. I don't know if this goes for you, but I try and keep in mind that I already feel so much better! Soy messes me up pretty bad. Last time I had some I had to take a day off from work, and really should have taken another. The only way to describe how I feel is I feel like I'm engulfed in a toxic...
  21. Definitely look at corn. Once I really started paying attention I realized I've been reacting to corn for years, I just didn't realize it. You might have other symptoms that you aren't associating with a food. For me, I get cold symptoms about 4 hours after ingesting corn and my eyes and nose gets very sensitive to any type of perfume or scent. I then wake...
  22. Well, cancer isn't as far out as she might think. I just lost a friend to cancer at 35. He had Crohn's not Celiac, but it's similar enough to be scary (I have another friend with Crohn's that manages her disease by being gluten free). He was sick at 32 with cancer, got it to go into remission and then it came back right after he met his girlfriend. He...
  23. I never want to see caramel coloring again.

  24. I saw your comment about Winco on the thread about corn, and wondered where you live... then I just saw your comment on the 'What do you do thread' & you answered my question! :) I've lived in Idaho almost 11 1/2 yrs. poc'y- 3.5; Boise almost 8-- GO BRONCOS!!!!!

  25. Wow, you guys are a talented bunch! Right out of high school I went to Culinary Arts school and worked in a variety of restaurants, had my own catering business, did wedding cakes etc. I loved cooking, but the hurry hurry stress of professional kitchens sorta took the fun out of the process for me. I was going to open a bakery at some point...but I...
