  1. Tonight we are having pizza potatoes. It's my daughter's 5th birthday and she wanted pepperoni pizza for dinner so she decided that we would have a meat "pizza" and put pepperoni and turkey bacon with tomatoes on a baked potato "crust". And I think I may try to make a microwave brownie for her birthday dessert, if it doesn't work she still gets her cake on...
  2. I use it all the time now and I have never had a major problem with it. I did find that if I am subbing it cup for cup in a recipe that calls for wheat flour that I have to add a bit more liquid. It was 1/3 c extra for bread that I made, but only 2 tbs when I made a pizza crust and I never had to add anything extra for recipes that already call for gluten...
  3. My youngest had poop like that 5-9 times a day until we cut out gluten and soy from her diet and if she has contact with either it will be like that for at least a week. I really hope that you are able to get to the bottom of what is causing this for your son and I would say that if the dr won't test him for Celiac that you try the diet for him, our dr diagnosed...
  4. Not a problem. I'm glad that you enjoyed it.
  5. That sounds really good. We are having london broil and smashed potatoes, probably add cucumbers too.
  6. I hope it turns out as well for you as it did for us. Please let me know what you think.
  7. I am using this recipe for my daughter's birthday party on Sat. and I have probably made it at least 5 times already and my gluten eating family couldn't really tell the difference... 3 c gluten free flour (I used a combo of white rice, brown rice, tapioca and potato starch) 2 c sugar 9 tbs unsweetened cocoa powder 2 tsp baking soda 2 tsp xanthan gum...
  8. Yep. Caffeine and I are not friends at all, it causes me alot of pain so I stay far away from it. I hope that you get to feeling better soon though.
  9. Dairy and soy for both my daughters and I plus egg yolks and sweet potatoes for my youngesst and high fructose corn syrup (or too much sugar in general) for me and both my girls get moody when they have artificial colorings and my oldest gets an upset stomach with too many preservatives now that we eat mostly whole foods.
  10. One of my new favorite things to do with chicken breasts now is to make them into a sandwich. Last week we grilled them on the george foreman (but you could use a frying pan on the stove or bake them) and then we cut them in half and filled them with sliced tomatoes, basil and turkey bacon and just ate it like a sandwich. I plan on doing it again with other...
  11. Right now I use Better Batter like Coleslawcat, but when I was mixing my own it ended up being 1/2 c brown rice flour, 1/2 c white rice flour, 2/3 c potato starch, 1/3 c tapioca starch and 1 1/2 tsp xanthan gum. I would mix up a big batch (usually tripling the recipe) and just use it as I needed it.
  12. I am able to get that texture with my chocolate cake recipe and although I use a flour mix now because it's cheaper for me it is still the same flours, a combination of white rice flour, brown rice flour, potato starch, tapioca starch and xanthan gum. Hope that helps.
  13. If the cheese had moisture on it when you take it out of the package you shouldn't need anything for the breading to stick and if it is lacking some moisture you could use a little bit of water. You could use anything you wanted for the breading that can be made crumbly and for cooking I always put the breaded food in a frying pan(with a touch of olive oil...
  14. It should always say on the package if it is injected with broth, so whenever I see that it is injected I stay away. I have never seen broth injected into Perdue chicken and I don't think Tyson either, but I have seen it in one the store brands near me.
  15. It's a different brand. These are the ingredients for the original Rudi's: Water, potato extract, rice starch, rice flour, sorghum flour, organic high oleic sunflower/safflower oil, organic evaporated cane juice, organic honey, egg whites, organic inulin, yeast, sea salt, organic molasses, xanthan gum. We haven't tried the Udi's because I haven't seen...
  16. I think for that it must depend on the person, my daughter reacted very badly to the Rice Dream. I really wish they wouldn't say it was gluten free though because I didn't think it could be the milk until I read on here about the barley and then called the company, I stopped giving it to my daughter and she stopped having problems.
  17. This morning I had roast beef on original Rudi's bread, it was on sale so we finally decided to try it and my girls had the cinnamon raisin Rudi's for the same reason. Not sure if our tastes have changed alot or what, but the bread wasn't too bad and didn't feel like eating cardboard. It was also testing eggs for my youngest so I really hope it works...
  18. I am so sorry that you are feeling this way about the disease, but I want to say that it does get easier even though it may seem like it now. I am 23 and was just found out about 4 months ago even though I have been sick much longer, my two children were also diagnosed. My youngest was extremely sick and very underweight with some of her systems failing,...
  19. Tonight we are having sandwiches, but without the bread. I am grilling chicken breasts on the George Foreman and after cooking will slice them in half and fill them with homemade pesto, turkey bacon and tomatoes.
  20. Thank you so much. They sound delicious and I think I will be trying the first one when it comes time to make mustard later this week.
  21. It took me about 3 months to stop losing too and I lost about 40 lbs, my weight has pretty much stabilized in the last month. That may be because I mostly lived on pasta and crackers before because I thought bland food would be good for my belly
  22. Thank you. We cut out soy and dairy for my 18 month old, but I am sure that the oldest still gets a little bit of it so I will try completely taking it out for her too. We limit corn quite a bit for the baby too, only using cornstarch to thicken some things so I can take that out too for now and see what happens. I think it is alot easier to figure out what...
  23. I let it sit for about 3 hours, the recipe had said just an hour. I like both types of mustard, but I prefer grainy.
  24. I have tried it with the extra virgin and it is a bit heavier so I believe that I used a bit less of it. Now I use Extra Light Olive Oil, it says on my bottle that it's good for baking and sauteeing.
  25. Would you please post it? My oldest misses having bread for sandwiches and I haven't been able to find one that was gluten-free/DF/SF/EF, I would really appreciate it.
