ARCHIVED Giving Lip-Service To Eating Gluten Free Makes Me Sad
alex11602 replied to BethM55's topic in Coping with Celiac Disease
I don't know how old your sister is, but mine is like that too and I think that feeling bad after just ends up being normal. It's sad to see that, but I'm not sure there is really anything we can do. And by the way I took my daughter to the local hospital and the triage nurse did not know what celiac or gluten was, I had to tell her how to spell it... -
ARCHIVED Betty Crocker gluten-free Cookie Mix?
alex11602 replied to Lori2's topic in Coping with Celiac Disease
My youngest and I had a problem with the cookie mix, but I think that it was the soy in the chocolate that gave us problems. -
Not a problem with the contradictory, I'm sure we are both just trying to help...the information was taken right from the textbook and it is based more for people who are doing a moderate amount of exercise. And I am well aware it is difficult to take in that amount of protein since I can only manage to take in around 30g a day and that is if I have to have...

I am studying to be a nutrition and wellness consultant and according to my textbook it is more of a formula to figure out the amount. It is recommended that your protein intake is 10-35% of your total calorie intake or .8 grams of protein per 2.2 lbs. The actual formula given has you taking your weight should be for your height so it says that if you...

ARCHIVED How Often Do You Cheat?
alex11602 replied to steve-010's topic in Coping with Celiac Disease
As for the question of would I cheat, the answer is not ever and I would never allow my two girls to cheat either. I will say though that I have had symptoms since I was at least an early teen, maybe longer but I can't remember because I got so used to not feeling well. I do remember not feeling well through high school, but just going on feeling sick because... -
ARCHIVED The Positive Side Of Celiac
alex11602 replied to Whatnext?'s topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
For my daughters and I there were so many positive sides... For my 17 month old there is the fact that she isn't as sore, she was going up to 9 times a day, and she is just generally a happy baby now. Also once we cut out gluten and a few other foods for her she began to talk, just a few words but before she wasnt able to really verbalize what she wanted... -

GlutenFreeManna, I don't know if you have a Wal-Mart anywhere close, but we were able to get a GE waffle maker for around $20. We have had it for over a year and it works perfectly for us.

ARCHIVED New To Feeding A Child With Celiac, Help!
alex11602 replied to missbread's topic in Parents, Friends and Loved Ones of Celiacs
Hi, I have a four year old and a 17 month old with Celiac plus other food allergies. Feeding them can be a little difficult, but once you find stuff they will eat it does get easier. One thing that my girls love is Chex cereal, there are 5 flavors that gluten free. They also love rice cakes. I have found some chocolate that is gluten free, but I dont remember... -
ARCHIVED Just Diagnosed. Confused And Curious!
alex11602 replied to wook's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
As far as the cost I can completely relate, my husband doesn't make alot and I am not working and we have 2 adults and 2 children to feed gluten free (along with dairy/soy/egg/yeast free and no antibiotics or hormones in meat). Perhaps if you gave us things that you eat now we can help you with if its safe or what a safe alternative would be. For my family... -
ARCHIVED Homeschool
alex11602 replied to alex11602's topic in Parents, Friends and Loved Ones of Celiacs
The nurse is late 30s, early 40s. A big problem I had was that she did not seem receptive to any information that I tried to give her about my daughter. -

ARCHIVED Whole Foods Versus Junk Food
alex11602 replied to catsmeow's topic in Coping with Celiac Disease
I completely agree with you about being forced to eat healthier and cook from scratch. That is the one positive that I have found. -
I have a daughter who is supposed to start kindergarten in the fall and when we went to register her I spoke to the nurse and she knew what celiac was, but insisted that she will grow out of it if we kept on giving her gluten, she said that she did research. Also told me that they would not be able to take care of my younger daughter when it was time for...

ARCHIVED Igg Results And Future Expectations?
alex11602 replied to Neali's topic in Parents, Friends and Loved Ones of Celiacs
As far as doctors go I beg you to listen to your gut. Doctors do not know everything...for example, my 16 month old daughter is facing kidney failure (they are functioning at 65%) because the only doctors the insurance would cover insisted she was fine for the same reason (always smiling and happy, little did they know that she was in so much pain that their... -

ARCHIVED How Do You Keep Your Blood Sugar Up?
alex11602 replied to Pyro's topic in Coping with Celiac Disease
If it is in fact your blood sugar, it sounds like it may be and you should check it when you feel like that to be sure, the best thing is to keep your sugar levels stable. Having a protein source with your meals will help with that or if you aren't big on a real breakfast having a small bag of peanuts (if you can have them) should help. For me in particular... -
ARCHIVED Time To Spice Things Up!
alex11602 replied to JSegura226's topic in Gluten-Free Recipes & Cooking Tips
love2travel, If I could just ask where you buy saffron? My whole family loves saffron rice, but it only comes in tiny packages so I was thinking I could make my own. Have you ever used it for that purpose? Thank you in advance. -

ARCHIVED Gluten Free/ Dairy Free/ Soy Free
alex11602 posted a topic in Gluten-Free Recipes & Cooking Tips
My family just added dairy free and soy free to our gluten free table since my baby has problems with it and it seems that everything I try to find has at least soy in it. I finally found the Earth Balance soy free margarine so we have that, but even the chicken boullion that I bought gluten free(Herb Ox) has soy in it. It just seems that everything I find... -
ARCHIVED Fried Food Idea?
alex11602 replied to katiekay's topic in Gluten-Free Recipes & Cooking Tips
I made my two girls (ages 15 months and 4 years) fried chicken the other night and used a cornmeal breading. I put the chicken in a frying pan will a light coating of olive oil on the bottom to brown it and give it a little crunch and then I finished cooking it through in a 450 degree oven. I don't measure ingredients usually, but I used about 3 cups of cornmeal... -
ARCHIVED Gluten Free Soups
alex11602 replied to Lockheed's topic in Gluten-Free Recipes & Cooking Tips
If you wanted a really simple soup there is one that I adapted from a Taste of Home recipe that only has 4 main ingredients. The Taste of Home version was a creamy soup and my family is also dairy free. Grandmother's Chowder 1 lb. ground beef 6 medium potatoes, peeled and diced 1 16 oz package of corn 4 tsp chicken boullion water I browned the...
