  1. There are some wines that are "fined" with casein. This is process by which wine is filtered to remove the impurities. Wine can be fined with all kinds of things, including egg, casein, or gelatin.   5. From a purely "gluten" perspective, Andalucia in Spain would not be my first choice. They fry everything, usually with flour. You can ask for food plain "a la plancha", and I think you'd get better results than in Colombia, but there are other parts of Spain where you'd be safer. What about Valencia/Murcia?     And that is a statement that could result in a lawsuit, were you so inclined. Even more surprising because people can be alcohol-free so many other reasons (ex-alcoholic, religious reasons, just don't like it, etc.) that it's not at all uncommon to encounter people who don't drink alcohol. Maybe HE's an alcoholic.

    Yes, that's been key. I've kept a food diary throughout the process; with that and the allergy testing (positive for plums, hazelnuts, sesame - all of which I avoid) I've wanted to be "totally sure". I also hope that maybe one day I'll be able to have dairy again, which I dearly miss (much more than gluten).
