  7. Welcome!! I can relate to a lot of those symptoms, and to the medical worker aspect as well. I am a CT tech and found myself, the same as you, noticing the odd sequence of events.   13. Tonight was a stir fry of veggies, broccoli, carrots, mushrooms, onions. We added some pineapple chunks, shrimp and chicken. No sauce just a touch of ginger and garlic, wicked good! Rice on the side, one of my go to dishes, there's not much to it but it sure hits the spot! Probably some fruit and yogurt with a few almonds on top for dessert.
  14. I actually just ate this for supper! Rice with stirfried veggies, shrimp and chicken, So yummy! You could easily leave out the chicken and it would be just as good. I've also made the peanut butter cookies and they are to die for, but with chocolate chips that's a whole new level! Haha I have to try it! My brother just loves them, I'll have to make some...

  18. I have a family member this way as well, she's willing to listen but not ready to jump in. Although, I'll give her props, she's slowly begun to make the transition with my help. I figure that if she's slowly making the transition then it's a start, I give her recipes and when we have family parties my family always is super conscious of me being gluten-free...

  21. Help!! I have coconut flour and have attempted twice to make muffins with it, and each time they are dry and wicked dense. What am I doing wrong?? Is there a class I can take for gluten free cooking lol I'm not the best at it, so I've learned! I hope someone has some tips, or even if you have a favorite coconut flour muffin recipe You'd like to share that...
  22. Trying is what counts! You'll get it, ive found that I just don't try and bake anymore (not very often) and that's awful! I'll never get any better if I don't try! I think I'll try that recipe you linked next time, sounds good to me!
  23. I checked out the link for homemade pectin and it seems like a lot of work, but I bet if you do it once it gets much easier!   25. I actually saw a recipe for Chia Jam today. It's made with fresh fruit and chia seeds! I'm thinking I'll give it a try tomorrow, not sure how long it lasts but it sure looks good in the pictures lol worth a shot and all natural! Here's the link: Open Original Shared Link
