  1. Iron Saturation reflects how your body stores iron. I'm curious if you know your ferritin levels as well? That would tell you if you need to supplement.
  2. I haven't personally done this, but I recall reading about it recently. I read that you use twice as much gelatin as xantham gum. As far as cookies, I've made chocolate chip cookies without gum or starch. They are a little crumbly, but really work out fine. They are less crumbly if I make sure they are not undercooked at all.

  8. Are there many places for crumbs to hide? I think most breadmakers are pretty basic- the pan the dough is in with a paddle or two is all that would touch the bread. I'd just soak the pan and blade, scrub the parts really good and maybe put it in the dishwasher. I think you could be able to get all the offending particles out.

  11. I cook my dry beans in a pressure cooker. I don't presoak. I get the pan up to pressure with 1 part beAns to 2 1/2 parts water and probably a tsp salt per cup of beans.   12. It certainly sounds like an allergy to me. You can ask for a blood allergy test to be sure. I believe that is an IgE test. I have some of the same symptoms and I have a wheat allergy as well as celiac disease. Or you could just not eat the stuff at all. :-)
  13. It is really good with lots of butter and frozen peas cooked in. We've mixed it with marinara, chunks of cheese and browned ground beef, then used it to stuff peppers or just chop the peppers and add to the mixture.   15. Oh my goodness! I just looked up hyperparathyroidism and everything sounds so familiar. And with the location of the parathyroid gland it may explain my throat swelling sensations as well. I'm going to ask my doctor to check for it when I go in for an appointment next week.

  18. I am very sensitive to Tide products, even Tide Free. The only laundry detergents I've tried that didn't make me break out are All Free and Clear and Sun. I use All because Sun doesn't clean as well.

  24. I recently read that celiac disease qualifies for a disability as far as the National Nutrition Program goes. If you contact the school nutrition services and provide them with a Dr's note, they are required to provide a gluten free alternative of the school's lunch for your child. I'd try to look up the specific source, but it will have to wait until later...
  25. As far as Dairy goes, it took me several weeks before I noticed a difference. The difference for me was an absence of menstrual cramps. I used to get bad cramps every month.
