Allrighty....this one goes out to all of my super knowlegeable celiac.com friends: What should I eat for optimal health (I currently don't eat gluten or dairy), but don't think I'm doing the best thing possible for my gut.   20. I once went on a low carb diet and I swear it was the best I've felt my entire life. Eating gluten-free makes me feel great too, but I swear I was glowing when I ate NO carbs. Anyone know why that could be??

    I want to get super healthy this year, but I am not sure what else to cut out of my diet. I have heard that soy can be problemmatic, and am not sure if I should eliminate it.   23. I had constant colds prior to my diagnosis. Last winter I had zero colds, which was truly amazing (was gluten-free). That alone is incentive to lay off the poison!
